INGREDIENTS
- 1/2lbbacon(cut into 1/2-inch squares)
- 1/2mediumonion, diced
- 1/2green bell pepper, diced
- 1-2jalapeno, diced(seeding is optional depending on desired heat)
- 1 (55 ounce)can bush’s originalbaked beansor bush’s maplebaked beans
- 8ouncescanned pineapple chunks, drained
- 1cupdark brown sugar, firmly packed
- 1cupketchup
- 1/2tablespoon grounddry mustard
DIRECTIONS
- Crisp bacon in a skillet, remove, leaving grease in skillet.
- Saute’ bell pepper, jalapeno,and onion until tender.
- Combine all ingredients.If mixture looks drier than desired, add additional ketchup.
- Pour into a 12×9 aluminum baking pan, or deep 9×9.(We like to use disposables).
- Smoke @ 225*-250* for 2 1/2 hours uncovered.
- Remove to oven and bake 1 hour @ 350*, or until beans reach a temp of 160*.
- Note: Between the peppers and the mustard, these beans are on the warm side.If desired, adjust the heat up or down with peppers, and mustard.

INGREDIENTS
- 4lbspig’s feet(pork stew meat can be used as a substitute)
- 4garlic cloves, minced
- 1onion, thinly sliced
- 1scotch bonnet pepperor habanero pepper, chopped(Seeds and stem removed)
- 1 1/2cups fresh squeezedlime juice
- 3-4cupswater
- 1teaspoonsalt
- 2cucumbers, peeled and chopped
- 1bunchparsley, chopped
- 1/2teaspoonfresh ground black pepper
- watercress, for garnish
DIRECTIONS
- Place the cut up meat in a large pot.
- Cover with salted water.
- Cook over medium heat until the meat is tender (about 2 hours).
- Remove the meat from the water, rinse in cold water, and drain.
- In a large bowl combine the cooked meat, garlic, onion, pepper, lime juice, water, salt, cucumbers, parsley and ground pepper.
- Marinate for at least 6 hours.
- Serve cold.

INGREDIENTS
- 1tablespooncrushed red pepper flakes
- 1/2teaspoonkosher salt
- 3/4cupsugar
- 1/4cuprice vinegar, plus
- 2tablespoonsrice vinegar
- 7garlic cloves, minced
DIRECTIONS
- In a small, dry saucepan, toast the chili flakes over high heat until fragrant, 1 to 2 minutes.
- Add the salt, sugar, and rice vinegar; cook over medium-low heat until the salt and sugar are dissolved.
- Stir in the garlic.
- Remove the sauce from the heat and let cool.

INGREDIENTS
- 4garlic cloves, minced
- 3tablespoonsolive oil
- 2lbsfresh green beans, trimmed
- 1/2cupchicken broth
- 1teaspoonsugar
- 1 1/4teaspoonssalt
- 1/4teaspoonpepper
DIRECTIONS
- Sauté garlic in hot oil in a large skillet over medium-high heat.
- Add beans, tossing to coat.
- Add broth and remaining ingredients.
- Cover, reduce heat, and simmer 10 minutes or until green beans are crisp-tender.

- 1 1/2tablespoonslemon juice
- 1garlic clove, crushed
- 2teaspoonssesame oil
- 2green chili peppers, chopped
DIRECTIONS
- Put all ingredients in a small bowl.
- Mix together.
