Wicked Baked Beans Recipe

INGREDIENTS

  1. 1/2lbbacon(cut into 1/2-inch squares)
  2. 1/2mediumonion, diced
  3. 1/2green bell pepper, diced
  4. 1-2jalapeno, diced(seeding is optional depending on desired heat)
  5. 1 (55 ounce)can bush’s originalbaked beansor bush’s maplebaked beans
  6. 8ouncescanned pineapple chunks, drained
  7. 1cupdark brown sugar, firmly packed
  8. 1cupketchup
  9. 1/2tablespoon grounddry mustard

DIRECTIONS

  1. Crisp bacon in a skillet, remove, leaving grease in skillet.
  2. Saute’ bell pepper, jalapeno,and onion until tender.
  3. Combine all ingredients.If mixture looks drier than desired, add additional ketchup.
  4. Pour into a 12×9 aluminum baking pan, or deep 9×9.(We like to use disposables).
  5. Smoke @ 225*-250* for 2 1/2 hours uncovered.
  6. Remove to oven and bake 1 hour @ 350*, or until beans reach a temp of 160*.
  7. Note: Between the peppers and the mustard, these beans are on the warm side.If desired, adjust the heat up or down with peppers, and mustard.

My Favorite Souse Recipe

INGREDIENTS

  1. 4lbspig’s feet(pork stew meat can be used as a substitute)
  2. 4garlic cloves, minced
  3. 1onion, thinly sliced
  4. 1scotch bonnet pepperor habanero pepper, chopped(Seeds and stem removed)
  5. 1 1/2cups fresh squeezedlime juice
  6. 3-4cupswater
  7. 1teaspoonsalt
  8. 2cucumbers, peeled and chopped
  9. 1bunchparsley, chopped
  10. 1/2teaspoonfresh ground black pepper
  11. watercress, for garnish

DIRECTIONS

  1. Place the cut up meat in a large pot.
  2. Cover with salted water.
  3. Cook over medium heat until the meat is tender (about 2 hours).
  4. Remove the meat from the water, rinse in cold water, and drain.
  5. In a large bowl combine the cooked meat, garlic, onion, pepper, lime juice, water, salt, cucumbers, parsley and ground pepper.
  6. Marinate for at least 6 hours.
  7. Serve cold.

Easy Sweet & Sour Sauce Recipe

INGREDIENTS

  1. 1tablespooncrushed red pepper flakes
  2. 1/2teaspoonkosher salt
  3. 3/4cupsugar
  4. 1/4cuprice vinegar, plus
  5. 2tablespoonsrice vinegar
  6. 7garlic cloves, minced

DIRECTIONS

  1. In a small, dry saucepan, toast the chili flakes over high heat until fragrant, 1 to 2 minutes.
  2. Add the salt, sugar, and rice vinegar; cook over medium-low heat until the salt and sugar are dissolved.
  3. Stir in the garlic.
  4. Remove the sauce from the heat and let cool.

Garlic Green Beans Recipe

INGREDIENTS

  1. 4garlic cloves, minced
  2. 3tablespoonsolive oil
  3. 2lbsfresh green beans, trimmed
  4. 1/2cupchicken broth
  5. 1teaspoonsugar
  6. 1 1/4teaspoonssalt
  7. 1/4teaspoonpepper

DIRECTIONS

  1. Sauté garlic in hot oil in a large skillet over medium-high heat.
  2. Add beans, tossing to coat.
  3. Add broth and remaining ingredients.
  4. Cover, reduce heat, and simmer 10 minutes or until green beans are crisp-tender.

  5. 2green chili peppers, chopped
