Marionberry Cobbler Recipe

INGREDIENTS

  1. 6tablespoonsunsalted butter
  2. 1cupall-purpose flour
  3. 1cupsugar
  4. 6teaspoonssugar
  5. 4teaspoonsbaking powder
  6. 1teaspoonsalt
  7. 1cupmilk
  8. 2cupsblackberries
  9. 6scoopsvanilla ice cream (optional)

DIRECTIONS

  1. Adjust oven rack to lower-middle position and heat to 350°F
  2. Place 1 tablespoon butter into each of 6 (12 ounce) ramekins. Set ramekins on a baking sheet and place in oven to melt butter.
  3. Whisk flour, 1 cup sugar, baking powder, and salt in a small bowl.
  4. When butter has melted, remove ramekins from the oven.
  5. Add milk to dry ingredients; whisk until just incorporated.
  6. Pour 1/3 cup batter into each dish, without stirring into butter. Arrange 1/3 cup berries over batter. Sprinkle each dish with 1 teaspoon of sugar.
  7. Bake until batter browns, about 35 minutes.
  8. Serve warm with a scoop of vanilla ice cream.

Chicken and Dumplings Recipe

INGREDIENTS

  1. 2chicken breasts
  2. 2tablespoonsbutter
  3. 1smallonion, chopped
  4. 1leek, chopped on a bias
  5. 1/4cupflour
  6. 2cupschicken stock
  7. 1cuphot water
  8. 2carrots, diced
  9. 2stalkscelery, diced
  10. 1/2teaspoonthyme
  11. 1teaspoonsage
  12. 1dashpaprika
  13. salt
  14. pepper
  15. 1cupflour
  16. 1/2tablespoonbaking powder
  17. 1pinchsalt
  18. 1/2cupmilk
  19. 1tablespoonbutter

DIRECTIONS

  1. Lightly salt and pepper the chicken breasts.
  2. Heat a heavy bottomed skillet on medium-high heat until very hot, and add 1 T of the butter. When the butter has melted, place the chicken in the pan and sear for 3 minutes. Flip, and sear on the other side for 3 minutes. Remove from the pan and set aside.
  3. Add the onions and leeks and reduce the heat to low. Stir frequently, and cook for about 5 minutes until the onions are translucent. Add the flour, and stir to coat. Then, add the hot water and chicken stock and increase the heat to medium-high, whisking until it comes to a boil.
  4. Add the carrots, celery, thyme, sage and paprika and stir to combine. Reduce heat to low, so the broth just bubbles.
  5. Slice the chicken in to thin slices, and add to the pan, pushing them down into the broth. Cover and simmer for 20 minutes.
  6. Meanwhile, combine the flour, baking powder and salt for the dumplings in a small bowl. Bring the milk and butter to a simmer in a sauce pan. With a fork, mix the milk mixture into the flour until it’s well moistened.
  7. Remove the lid from the cooking chicken, and if needed skim off any fat. Season to taste.
  8. Take about 1/4 to 1/2 teaspoon scoops of the dumpling dough, and form into a rough ball. Drop the dough into the broth. Repeat until you have as many dumplings as you’d like. Cook for about 10 minutes, and serve immediately.

Emilie’s Streusel Jam Muffins Recipe

INGREDIENTS

  1. 1/3cupsugar
  2. 1/4cupbutter, softened
  3. 1egg
  4. 2 1/3cupsall-purpose flour
  5. 4teaspoonsbaking powder
  6. 1/2teaspoonsalt
  7. 1cupmilk
  8. 1teaspoonvanilla extract
  9. 1cupjam
  10. Streusel

  11. 1/2cupsugar
  12. 1/3cupall-purpose flour
  13. 1/2teaspooncinnamon
  14. 1/4cupbutter, softened

DIRECTIONS

  1. Cream sugar and butter together.Add egg and mix well.Set aside for now.
  2. In a seperate bowl, combine flour, baking powder, and salt.Mix with creamed mixture while also adding the milk.Mix in vanilla.
  3. Use a spoon to drop in small spoonfulls of MOST of the jam into the batter.Set aside a small amount of jam, approximately 1/8 cup, for later use.Keep spooning the jam into the mixture while stiring and folding the batter gently.
  4. Grease the muffin pan.Fill 12 muffin tins 2/3 full of the muffin batter.
  5. Make Streusel: Mix all of the ingredients for the streusel together in a bowl.Make sure streusel is thoroughly mixed.
  6. Sprinkle the top of muffins with streusel mixture.Add one small dallup of jam right in the middle of each muffin top.Then sprinkle more streusel on top.
  7. Bake at 375 for 25 to 30 minutes.

Diabetic Lemon Pudding Recipe

INGREDIENTS

  1. 1/4cupcornstarch
  2. 1cupskim milk(or plain soymilk)
  3. 1/2cupsugar-free lemonade concentrate
  4. 1tablespoonSplenda sugar substitute
  5. 1tablespoonlemon zest
  6. 6paper cups(3 oz size)

DIRECTIONS

  1. Whisk all ingredients in a medium saucepan on low heat.
  2. Bring to a simmer, stirring constantly.
  3. Cook until mixture starts to thicken, 3 or 4 minutes.
  4. Pour into cups and chill 2 or 3 hours.

Hanky Pankies Recipe

INGREDIENTS

  1. 2lbssausage
  2. 1lbVelveeta cheese, cubed
  3. 1/2teaspoongarlic powder
  4. 1/2teaspoonworcestershire sauce
  5. 1teaspoonoregano
  6. 1loafrye cocktail bread
  7. hot sauce (optional)

DIRECTIONS

  1. Brown and drain sausage.
  2. Add Velveeta and melt.
  3. Add garlic powder, Worcestershire sauce, oregano, and hot sauce (just a few drops will do).
  4. Pile on bread, place on cookie sheet.
  5. Bake in 350°F oven for 10-12 min (I have found 10 minutes to be the best).
