INGREDIENTS
- 1cupsugar
- 1cupcorn syrup
- 7cupscrisp rice cereal
- 3/4cupmilk chocolate chips
DIRECTIONS
- Combine sugar and corn syrup in saucepan. Melt until smooth.
- Add crisp rice cereal and stir until coated. Pour into greased oblong pan.
- Melt chocolate chips and spread on top.
- Chill until chocolate is firm.

INGREDIENTS
- 2cupsfresh spinach, packed or12 ouncesfrozen chopped spinach
- 1cupcelery, chopped
- 1/2cupred peppersor yellow peppers, chopped
- 1lbcube steaksor chuck steaks
- 4skinless chicken breasts, flattened
- 16ouncescooked shrimp, shelled with tails on
- 1cupCatalina dressing
- 1cupapricot preservesor jam
- 3ouncesLipton Beef and onion Soup mix
- 1teaspoon mincedgarlic
- 1teaspoon choppedjalapeno peppers (optional)
- 1/2cup choppedcooked bacon, pieces (optional)
- Pam cooking spray
DIRECTIONS
- Pound chicken, veal, beef, cut in individual serving pieces. You can use cut stew meat also, pound the pieces.
- Spray Pam in a two guart casserole dish or 9X13 baking dish.
- Place the spinach in a layer on the bottom of pan. If frozen, thaw and layer.
- Add chopped celery.
- Add yellow and red peppers.
- In medium bowl add salad dressing, apricot preserves, soup mix, garlic and optional ingredients if desired. Mix well.
- Layer the first meat, cover with sauce. Layer the second meat. Cover with sauce. The last layer is the shrimp. Pour the sauce over the top.
- Cover. Refrigerate.
- Bake 350* oven 1 hour covered.
- You may use one meat and onion soup mix if you wish.
- This is a great company meal, pass the bamboo skewers, tongs to stab the meats and plenty of napkins. You can double or triple this recipe. Just add more pans. Recipe is very forgiving and you can add other chopped veggies if you wish.
- Serve with hot rice or hot buttered noodles.
- I did not include the time for cooling in the preparation. The flavors are stronger if left for at least 6 hours. You can also prepare and bake immediately.
- Note: There are 12 servings of meat and shrimp in this recipe, if you allow 4 ounce servings. Cut it down if you wish, then half the dressing mixture. Don’t cut the vegetables.
- Postscript: There was at least two cups of sauce the last time I made this. I cooked 1 cup of raw rice in the sauce later on. It was a wonderful side dish.

INGREDIENTS
- vegetable oil cooking spray
- 1cup coarsley choppedzucchini(about 1 small)
- 1/2teaspoondried basil leaves, crushed
- 1/8teaspoongarlic powder, minced or1 garlic clove, minced
- 1 (10 3/4 ounce)canHealthy Request tomato soup
- 10 3/4ounceswater
- 1teaspoonlemon juice
- 1cuprice, cooked
- 2tablespoons finely shreddedparmesan cheese
DIRECTIONS
- Spray medium saucepan with cooking spray and heat over medium heat 1 minute.
- Add zucchini, basil and garlic powder and cook until tender-crisp.
- Add soup, water, lemon juice and rice and heat through.
- Sprinkle with cheese.

INGREDIENTS
- 2tablespoonsolive oil
- 1tablespoonbutter
- 3boneless skinless chicken breastsor skinless boneless turkey breasts, cut into cubes
- 1largecucumber
- 1/2 anonion, sliced thin
- 1/2teaspoonground cumin
- 1/2teaspoonground mustard
- 2garlic cloves, minced
- 1/2cupchicken stock(1/2 cup water and 1 chicken boullion cube works too)
- 3tablespoonssour cream
- 8ounces cookedfettuccine pasta, kept warm
DIRECTIONS
- Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly.
- Take cucumber and peel, slice in half, seed with a spoon and dice small.
- When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes.
- Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender.
- Return chicken to skillet. Stir in sour cream. Serve over fettucine.

INGREDIENTS
- 3cupsvanilla baking chips
- 1cupcrisp rice cereal
- 1cupdry roasted peanuts
- 1cupmini marshmallows
DIRECTIONS
- Melt vanilla chips in a saucepan.
- When melted, stir in cereal and nuts.
- Let mixture cool slightly, then stir in marshmallows. (If mixture is too hot, marshmallows will melt.).
- Drop by spoonfuls onto waxed paper.
- refrigerate until set.
