INGREDIENTS
- 1lbground beef
- 1mediumonion, chopped
- 1garlic clove, crushed
- 1 1/4cupswateror chicken brothor beef broth
- 1stalkcelery, thinly sliced(about 1 cup)
- 1smallzucchini, sliced(about 1 cup)
- 1cup shreddedcabbage
- 1/2cup uncookedelbow macaronior brokenspaghetti
- 2teaspoonsinstant beef bouillon(dry)
- 1teaspoonitalian seasoning
- 1/2teaspoonsalt
- 1 (28 ounce)canwhole tomatoes, undrained
- 1 (8 ounce)cankidney beans, undrained
- 1 (8 ounce)canwhole kernel corn, undrained
- gratedparmesan cheese
DIRECTIONS
- Cook and stir ground beef, onion and garlic in Dutch oven until beef is brown; drain.
- Stir in remaining ingredients except cheese; break tomatoes with fork.
- Heat to boiling, reduce heat.
- Cover and simmer, stirring occasionally, until macaroni is tender, about 15 minutes.
- Serve with cheese.

INGREDIENTS
- 4salmon fillets(skin removed)
- 4carrots, sliced on the diagonal
- 2red onions, cut into wedges
- 2red peppers, cut in bite sized pieces
- 2zucchini, sliced diagonally
- 1 (14 ounce)canartichoke hearts, drained and cut into bite size pieces
- 2tablespoonsolive oil
- 2tablespoonswhite wine vinegar
- 1 1/2teaspoonsthyme
- 2garlic cloves, minced
- 2tablespoonsanchovy paste
- 3/4teaspoonpepper
DIRECTIONS
- Heat 1 tbsp oil.
- Cook onion, garlic, 1 tsp thyme, pepper, artichokes, and anchovy paste. for ten minutes in a large skillet.
- Remove pan from heat. Add pepper, zucchini, and vinegar and place on a rimmed baking sheet.
- Put vegetables in 425° oven for 25 minutes.
- Remove, place salmon on top of vegetables. Brush with a mixture of 1/2 tsp thyme, a pinch of salt and 1 tbsp olive oil. Bake an addition 10 - 15 minutes.
- Remove and enjoy.

INGREDIENTS
- 1/2cupbutteror margarine
- 3tablespoonscocoa
- 1/3cupmilk
- 1 (1 lb)boxpowdered sugar
- 1teaspoonvanilla
- 1cupnuts, chopped (optional)
DIRECTIONS
- In a saucepan, combine butter, cocoa, and milk; bring to a boil.
- Add sugar and vanilla; beat well until smooth.
- Note: If frosting becomes too stiff, add 1 drop of water at a time to desired consistency.
- Frost cake and sprinkle on nuts, if desired.

INGREDIENTS
- 1mediumonion, chopped
- 2garlic cloves, crushed
- 1lbground beef
- 1 (14 ounce)canItalian-style diced tomatoes, drained
- 1 (14 ounce)cangreen beans, drained
- 4cupsmashed potatoes
- 1egg white
- salt and pepper
DIRECTIONS
- Preheat oven to 350 degrees.
- Brown meat, onion and garlic.
- Drain.
- Salt and pepper meat.
- Spread in bottom of 2-quart casserole dish.
- Pour tomatoes on top.
- Follow with green beans.
- Spread potatoes over everything.
- Brush top with egg.
- Cook 30 minute.
- Broil 1 minute to brown.
- Serve and enjoy!

INGREDIENTS
- 1 (6 ounce)cantuna, drained
- 1 (10 1/2 ounce)cancream of celery soup
- 1 (14 1/2 ounce)canwhole kernel corn, drained
- 1/2cupmilk
- 8ounceswide egg noodles, cooked and drained
- 1/2-1cuppotato chips
DIRECTIONS
- Preheat oven to 350 degrees.
- Cook noodles according to package directions. Drain.
- Grease a 2 quart casserole dish.
- Mix drained tuna, drained corn and drained noodles.
- Mix soup and milk, pour over tuna mixture and combine.
- Pour into greased casserole dish.
- Crush potato chips and spread over top of casserole.
- Bake for 25 minute or until heated through.
- Variation: Add 1/2-1 Cup cheddar cheese over top of casserole before adding chips.
