Hamburger Minestrone Recipe

INGREDIENTS

  1. 1lbground beef
  2. 1mediumonion, chopped
  3. 1garlic clove, crushed
  4. 1 1/4cupswateror chicken brothor beef broth
  5. 1stalkcelery, thinly sliced(about 1 cup)
  6. 1smallzucchini, sliced(about 1 cup)
  7. 1cup shreddedcabbage
  8. 1/2cup uncookedelbow macaronior brokenspaghetti
  9. 2teaspoonsinstant beef bouillon(dry)
  10. 1teaspoonitalian seasoning
  11. 1/2teaspoonsalt
  12. 1 (28 ounce)canwhole tomatoes, undrained
  13. 1 (8 ounce)cankidney beans, undrained
  14. 1 (8 ounce)canwhole kernel corn, undrained
  15. gratedparmesan cheese

DIRECTIONS

  1. Cook and stir ground beef, onion and garlic in Dutch oven until beef is brown; drain.
  2. Stir in remaining ingredients except cheese; break tomatoes with fork.
  3. Heat to boiling, reduce heat.
  4. Cover and simmer, stirring occasionally, until macaroni is tender, about 15 minutes.
  5. Serve with cheese.

Salmon With Roasted Vegetables Recipe

INGREDIENTS

  1. 4salmon fillets(skin removed)
  2. 4carrots, sliced on the diagonal
  3. 2red onions, cut into wedges
  4. 2red peppers, cut in bite sized pieces
  5. 2zucchini, sliced diagonally
  6. 1 (14 ounce)canartichoke hearts, drained and cut into bite size pieces
  7. 2tablespoonsolive oil
  8. 2tablespoonswhite wine vinegar
  9. 1 1/2teaspoonsthyme
  10. 2garlic cloves, minced
  11. 2tablespoonsanchovy paste
  12. 3/4teaspoonpepper

DIRECTIONS

  1. Heat 1 tbsp oil.
  2. Cook onion, garlic, 1 tsp thyme, pepper, artichokes, and anchovy paste. for ten minutes in a large skillet.
  3. Remove pan from heat. Add pepper, zucchini, and vinegar and place on a rimmed baking sheet.
  4. Put vegetables in 425° oven for 25 minutes.
  5. Remove, place salmon on top of vegetables. Brush with a mixture of 1/2 tsp thyme, a pinch of salt and 1 tbsp olive oil. Bake an addition 10 - 15 minutes.
  6. Remove and enjoy.

Mama’s Quicker Fudge Frosting (Paula Deen) Recipe

INGREDIENTS

  1. 1/2cupbutteror margarine
  2. 3tablespoonscocoa
  3. 1/3cupmilk
  4. 1 (1 lb)boxpowdered sugar
  5. 1teaspoonvanilla
  6. 1cupnuts, chopped (optional)

DIRECTIONS

  1. In a saucepan, combine butter, cocoa, and milk; bring to a boil.
  2. Add sugar and vanilla; beat well until smooth.
  3. Note: If frosting becomes too stiff, add 1 drop of water at a time to desired consistency.
  4. Frost cake and sprinkle on nuts, if desired.

Easy Shepherds Pie Recipe

INGREDIENTS

  1. 1mediumonion, chopped
  2. 2garlic cloves, crushed
  3. 1lbground beef
  4. 1 (14 ounce)canItalian-style diced tomatoes, drained
  5. 1 (14 ounce)cangreen beans, drained
  6. 4cupsmashed potatoes
  7. 1egg white
  8. salt and pepper

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Brown meat, onion and garlic.
  3. Drain.
  4. Salt and pepper meat.
  5. Spread in bottom of 2-quart casserole dish.
  6. Pour tomatoes on top.
  7. Follow with green beans.
  8. Spread potatoes over everything.
  9. Brush top with egg.
  10. Cook 30 minute.
  11. Broil 1 minute to brown.
  12. Serve and enjoy!

Virginia’s Tuna Casserole Recipe

INGREDIENTS

  1. 1 (6 ounce)cantuna, drained
  2. 1 (10 1/2 ounce)cancream of celery soup
  3. 1 (14 1/2 ounce)canwhole kernel corn, drained
  4. 1/2cupmilk
  5. 8ounceswide egg noodles, cooked and drained
  6. 1/2-1cuppotato chips

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Cook noodles according to package directions. Drain.
  3. Grease a 2 quart casserole dish.
  4. Mix drained tuna, drained corn and drained noodles.
  5. Mix soup and milk, pour over tuna mixture and combine.
  6. Pour into greased casserole dish.
  7. Crush potato chips and spread over top of casserole.
  8. Bake for 25 minute or until heated through.
  9. Variation: Add 1/2-1 Cup cheddar cheese over top of casserole before adding chips.
