Toasted Sesame Nori Recipe

INGREDIENTS

  1. 4sheetsnori
  2. 1/3tablespoonsesame oil
  3. 2/3tablespoonolive oil
  4. 1pinchsea salt
  5. 1teaspoonsesame seeds

DIRECTIONS

  1. Preheat oven to 160 degrees Celsius.
  2. Lay the nori sheets flat on a baking tray.
  3. Combine the oils and using a pastry brush, brush the oil over the top surface of each sheet.
  4. Sprinkle the sea salt and sesame over the oiled surface and roast in the oven for 5 minutes.
  5. Leave to cool before cutting into pieces approx 3 cm square.

Vegetable Sesame Rice Balls Recipe

INGREDIENTS

  1. 1cup mixed rawvegetables, of your choice
  2. 3cupsshort-grain brown rice, cooked and cold
  3. 2tablespoonstahini
  4. 1/2lemon, juice of
  5. 1tablespoontamari
  6. 1/2cupsilken tofu
  7. 1cupsesame seeds
  8. For the dipping sauce

  9. 2tablespoonstamari
  10. 2tablespoonsmirin

DIRECTIONS

  1. Preheat the oven to 180 degrees Celsius.
  2. Chop the vegetables very finely - if the pieces are too big, the mixture will not stick together.
  3. Combine the rice and vegetables in a bowl. Mix the tahini, lemon juice, tamari and tofu in a blender until smooth and creamy.
  4. Pour this sauce over the rice and vegetables and mix thoroughly.
  5. With wet hands, roll bits of the rice mixture into balls of about 5cm in diameter.
  6. Roll the balls in the sesame seeds until they are completely coated and place them on a baking tray.
  7. Bake for 40 minutes, turning the balls twice during the baking process.
  8. While the balls are cooking, make the dipping sauce by mixing the tamari and mirin together in a small bowl.

Fudge-Filled Bars Recipe

INGREDIENTS

  1. 14ouncessweetened condensed milk(14 oz can, NOT evaporated milk! Can use fat-free sweetened condensed as well!)
  2. 2cupssemi-sweet chocolate chips
  3. 2tablespoonsbutteror margarine
  4. 2teaspoonsvanilla extract
  5. 36ouncesrefrigerated sugar cookie dough, dough rolls. this is 2 rolls.(can use chocolate chip dough as well)

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a medium sized saucepan, combine the sweetened condensed milk, chocolate chips, and butter; cook over low heat until chocolate is melted, stirring often.
  3. Remove from heat; stir in vanilla.Cool for 15 minutes.
  4. Using floured hands, press 1 1/2 of the rolls of cookie dough into a 15×10 inch backing pan.
  5. Pour cooled chocolate mixture evenly over the cookie dough in the pan.
  6. Crumble the remaining dough over the chocolate mixture.
  7. Bake for 25-30 minute.
  8. Cool and cut.

Pizza Jaffle Recipe

INGREDIENTS

  1. 30gham, diced
  2. 1/2cuptasty cheese, grated
  3. 1/3cupcapsicums, diced
  4. 1/4cupfresh tomatoes, diced
  5. 1/2cupmushrooms, sliced
  6. 1/4cuponions, finely diced
  7. 1/4teaspoondried basil
  8. 1/2teaspoongarlic, crushed
  9. 2teaspoonstomato paste
  10. 4slicesbread
  11. margarineor butter, to coat

DIRECTIONS

  1. Plug in the sandwich maker to heat up.
  2. In a medium size mixing bowl combine all ingredients except tomato paste and bread.
  3. Spread butter onto one side of the bread and tomato paste onto the other. Place 2 of these bread slices into the jaffle maker, butter side down. Top with pizza filling.
  4. Place remaining slices of bread on top, paste side facing into the pizza filling.
  5. Cook until browned to your liking.

Whipped Cottage Cheese Recipe

INGREDIENTS

  1. 100gcottage cheese
  2. 1pinchblack pepper

DIRECTIONS

  1. Place the cheese in a food processor or blender, I use a magic bullet blender for this.
  2. Blitz until all the curds are broken up and the mixture appears smooth.
  3. Place in a bowl and garnish with black pepper.
  4. Note once made you can add any flavourings you want spices, vegetables prawns etc.
