Fruit Jelly Squares Recipe

INGREDIENTS

  1. 2cupsapple juice
  2. 2tablespoonsunflavored gelatin
  3. 2cupsfresh fruit(canned can be used if well drained)
  4. flavouredyogurtor custard, to serve

DIRECTIONS

  1. Grease a 23cm (9 inch) square baking pan.
  2. Pour 1 cup of the juice into a microwave safe jug.
  3. Cook on high for 1 minute.
  4. Sprinkle gelatin over the hot juice and stir rapidly with a fork until dissolved.
  5. Place remaining juice and fruit salad in a large mixing bowl.
  6. Add gelatins mixture and mix well till combined.
  7. Pour into baking pan and refrigerate for 5 hours or more.
  8. To serve, cut in to squares and top with the yogurt or custard.

Grilled Olive Bread Recipe

INGREDIENTS

  1. 1/3cuppitted black olives, sliced
  2. 3tablespoonsfresh parmesan cheese, grated
  3. 1/2smallred onion, chopped
  4. 1/2teaspoongarlic, crushed
  5. 1/2teaspoonvegetable stock powder
  6. 1large frenchbreadstick

DIRECTIONS

  1. Place all ingredients, except bread stick, into your food processor or blender. Process until smooth.
  2. Cut bread stick into slices.
  3. Spread an even amount of paste over the top of each slice.
  4. Place under grill or broiler until lightly browned.

Crab Open Grilled Sandwich Recipe

INGREDIENTS

  1. 6slicesbread
  2. 1tablespoonmargarineor butter
  3. 1/4cupgreen onions, chopped
  4. 2tablespoonsdry white wine
  5. 2teaspoonsfresh parsley, chopped
  6. 170gcrabmeat
  7. 1tablespooncornflour(cornstarch)
  8. 1/4cupmilk
  9. salt and pepper
  10. 1/2cuptasty cheese

DIRECTIONS

  1. Toast bread.
  2. In a medium fry pan melt butter, saute green onions for 30 seconds. Add parsley and crab meat.
  3. Blend cornflour with milk and wine, pour into pan stirring continuously until boiling and thickened, add pepper and salt.
  4. Spread a sixth of the mixture over each slice of toasted bread.
  5. Sprinkle cheese on top, place under grill or broiler until cheese has melted and lightly browned.
  6. Cut each slice into three fingers.

  1. 3largepotatoes, pealed and sliced

  3. diced green chilies

DIRECTIONS

  1. Heat oil in pan, peel and slice potatoes.
  2. Add potatoes to pan; cover and cook on medium till done, about 10 minutes.
  3. Add diced chilies; stir.
  4. Serve warm.
