INGREDIENTS
- 1tablespoonolive oil
- 2garlic cloves, minced
- 1/2teaspoondried rosemary
- 1/4teaspoonground cumin
- 1/8teaspoonsalt
- 1/8teaspoonground coriander
- 1/8teaspoonblack pepper
- ground red pepper, to taste
- 2tablespoonsbalsamic vinegaror red wine
- 4boneless skinless chicken breast halves
- 1/2cantaloupe, 1 1/2-inch dice
- 16green onions(1/2-inch pieces)
- 2tablespoonspeach preservesor apricot preserves
DIRECTIONS
- Heat oil in a small saucepan, add spices and cook 1 minute.
- Remove from heat, cool and add vinegar.
- Cut each breast 1/2 into 1″ pieces.
- On four skewersalternate chicken cantaloupe and green onion.
- Brush all surfaces with vingegar mixture.
- Place skewers on un-heated broiler pan and broil 4-5 inches from heat for 5 minutes.
- Stir preserves into remaining vinegar mixture.
- Brush on kabobs, turn kabobs and brush again. Broil 3-5 minuteslonger or untuil chicken is tender and no longer pink.

INGREDIENTS
- 6 ripepeaches
- 3teaspoonssugar
- 1teaspoonground ginger
- 1lime
- 1/2cuphoney
- vanilla ice cream
DIRECTIONS
- Light your grill. If using charcoal, allow the coals to burn until they are grey. Gas grills should be on low.
- Mix sugar and ginger on a plate.
- Cut peaches in half and remove the pits.
- Set the peaches cut side down on the plate with the sugar and ginger mixture.
- Place the peaches sugar side down on the center of the grate. Cook for 6-7 minutes or until golden brown.
- Grate the zest from the lime, then squeeze the juice into a small bowl. Add the zest and honey and mix.
- Serve the peaches in a bowl with a scoop of vanilla ice cream and drizzle with the honey mixture.

INGREDIENTS
- 2teaspoonspeanut butter
- 4skinless chicken breasts
- cooking spray
DIRECTIONS
- Preheat oven to 350°F.
- Place chicken in roasting pan.
- Spread or dab PB on chicken, the whole peice doesn’t have to be covered- can be in spots only, but use as much or as little as desired.
- Pour enough water in pan so bottome doesn’t burn, about 1/2 an inch.
- Lightly spray chicken with cooking spray and cover with foil.
- Bake approximately 1 1/2 hours.
- Serve with anything-can’t go wrong with PB!

INGREDIENTS
- 8taco shells
- 1 (15 ounce)canpinto beans, rinsed and drained
- 1/2cuptomato sauce
- 1 (4 ounce)cangreen chilies, drained
- 1teaspoonchili powder
- 1/4teaspoonoregano
- 1/4teaspoonground cumin
- 1onion, diced
- 1avocado, diced
- 1 1/2cupslettuce, shredded
- 1tomato, chopped
- 1/2cupcheddar cheese, grated
DIRECTIONS
- Heat taco shells.
- In a mediun saucepan combine beans, green chili, tomato sauce and spices.
- Bring to a boil and reduce heat.
- Simmer, un-covered, 5 minutes. Stirring occasionally.
- Mash beans slightly if desired.
- Spoon into taco shells and top with lettuce, onion, avocado, cheese and tomatoes.
- Serve with salsa.

INGREDIENTS
- 3Italian sausages
- 2cupsmozzarella cheese, shredded(divided)
- 1egg
- 10ouncesfrozen chopped spinach
- 1 (16 ounce)containerlow-fat ricotta cheese
- 1/2teaspoongarlic powder
- 1/2teaspoonsalt
- 1/4teaspoonpepper
- 1roma tomato, sliced
- 2ouncesmushrooms, chopped
- 1/2teaspoonitalian seasoning
- 1/4cupparmesan cheese
DIRECTIONS
- Remove sausage from casing, brown and drain.
- Layer sausage mixed with 1 cup mozzarella onto bottom of lightly greased quiche pan.
- Thaw and drain spinach.
- In mixing bowl, scramble egg and add ricotta, spinach, garlic, salt & pepper.
- Layer ricotta cheese mixture over sausage mixture.
- Place sliced tomatoes and mushrooms over top and sprinkle with Italian seasoning.
- Top with 1 cup mozzarella cheese and sprinkle with parmesan.
- Bake at 350 degrees for 30 minutes or until lightly browned and bubbly.
- Let set for 10 minutes before cutting to serve.
