Chicken and Melon Kabobs Recipe

INGREDIENTS

  1. 1tablespoonolive oil
  2. 2garlic cloves, minced
  3. 1/2teaspoondried rosemary
  4. 1/4teaspoonground cumin
  5. 1/8teaspoonsalt
  6. 1/8teaspoonground coriander
  7. 1/8teaspoonblack pepper
  8. ground red pepper, to taste
  9. 2tablespoonsbalsamic vinegaror red wine
  10. 4boneless skinless chicken breast halves
  11. 1/2cantaloupe, 1 1/2-inch dice
  12. 16green onions(1/2-inch pieces)
  13. 2tablespoonspeach preservesor apricot preserves

DIRECTIONS

  1. Heat oil in a small saucepan, add spices and cook 1 minute.
  2. Remove from heat, cool and add vinegar.
  3. Cut each breast 1/2 into 1″ pieces.
  4. On four skewersalternate chicken cantaloupe and green onion.
  5. Brush all surfaces with vingegar mixture.
  6. Place skewers on un-heated broiler pan and broil 4-5 inches from heat for 5 minutes.
  7. Stir preserves into remaining vinegar mixture.
  8. Brush on kabobs, turn kabobs and brush again. Broil 3-5 minuteslonger or untuil chicken is tender and no longer pink.

Grilled Peach Sundaes Recipe

INGREDIENTS

  1. 6 ripepeaches
  2. 3teaspoonssugar
  3. 1teaspoonground ginger
  4. 1lime
  5. 1/2cuphoney
  6. vanilla ice cream

DIRECTIONS

  1. Light your grill. If using charcoal, allow the coals to burn until they are grey. Gas grills should be on low.
  2. Mix sugar and ginger on a plate.
  3. Cut peaches in half and remove the pits.
  4. Set the peaches cut side down on the plate with the sugar and ginger mixture.
  5. Place the peaches sugar side down on the center of the grate. Cook for 6-7 minutes or until golden brown.
  6. Grate the zest from the lime, then squeeze the juice into a small bowl. Add the zest and honey and mix.
  7. Serve the peaches in a bowl with a scoop of vanilla ice cream and drizzle with the honey mixture.

Awesome Peanut Butter Chicken!! Recipe

INGREDIENTS

  1. 2teaspoonspeanut butter
  2. 4skinless chicken breasts
  3. cooking spray

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Place chicken in roasting pan.
  3. Spread or dab PB on chicken, the whole peice doesn’t have to be covered- can be in spots only, but use as much or as little as desired.
  4. Pour enough water in pan so bottome doesn’t burn, about 1/2 an inch.
  5. Lightly spray chicken with cooking spray and cover with foil.
  6. Bake approximately 1 1/2 hours.
  7. Serve with anything-can’t go wrong with PB!

Pinto Bean Tacos Recipe

INGREDIENTS

  1. 8taco shells
  2. 1 (15 ounce)canpinto beans, rinsed and drained
  3. 1/2cuptomato sauce
  4. 1 (4 ounce)cangreen chilies, drained
  5. 1teaspoonchili powder
  6. 1/4teaspoonoregano
  7. 1/4teaspoonground cumin
  8. 1onion, diced
  9. 1avocado, diced
  10. 1 1/2cupslettuce, shredded
  11. 1tomato, chopped
  12. 1/2cupcheddar cheese, grated

DIRECTIONS

  1. Heat taco shells.
  2. In a mediun saucepan combine beans, green chili, tomato sauce and spices.
  3. Bring to a boil and reduce heat.
  4. Simmer, un-covered, 5 minutes. Stirring occasionally.
  5. Mash beans slightly if desired.
  6. Spoon into taco shells and top with lettuce, onion, avocado, cheese and tomatoes.
  7. Serve with salsa.

Low Carb Italian Bake Recipe

INGREDIENTS

  1. 3Italian sausages
  2. 2cupsmozzarella cheese, shredded(divided)
  3. 1egg
  4. 10ouncesfrozen chopped spinach
  5. 1 (16 ounce)containerlow-fat ricotta cheese
  6. 1/2teaspoongarlic powder
  7. 1/2teaspoonsalt
  8. 1/4teaspoonpepper
  9. 1roma tomato, sliced
  10. 2ouncesmushrooms, chopped
  11. 1/2teaspoonitalian seasoning
  12. 1/4cupparmesan cheese

DIRECTIONS

  1. Remove sausage from casing, brown and drain.
  2. Layer sausage mixed with 1 cup mozzarella onto bottom of lightly greased quiche pan.
  3. Thaw and drain spinach.
  4. In mixing bowl, scramble egg and add ricotta, spinach, garlic, salt & pepper.
  5. Layer ricotta cheese mixture over sausage mixture.
  6. Place sliced tomatoes and mushrooms over top and sprinkle with Italian seasoning.
  7. Top with 1 cup mozzarella cheese and sprinkle with parmesan.
  8. Bake at 350 degrees for 30 minutes or until lightly browned and bubbly.
  9. Let set for 10 minutes before cutting to serve.
