INGREDIENTS
- 1/4cupsugar (optional)
- 2teaspoonscornstarch
- 1/8teaspooncinnamon
- 1/2cuporange juice
- 2cupssweet cherries, pitted and halved(if using canned cherries, replace o.j. with juice from cherries)
- 1teaspoon gratedorange peel
DIRECTIONS
- In a medium saucepan, combine the sugar, cornstarch and cinnamon.
- Add orange juice, cherries and orange peel.
- Bring to a boil over medium-high heat and boil until thickened.
- Serve over warm pancakes or waffles.

INGREDIENTS
- 2cupsegg substitute
- 1largeegg
- 1/2teaspoonhot sauce
- 1/4cupvegetable juice
- 3tablespoons choppedgreen onions
- 1/8teaspoonground black pepper
- 1/2cup gratedlight cheddar cheese
DIRECTIONS
- In medium bowl, whisk egg substitute, egg and hot sauce together until very frothy.
- In large, nonstick skillet over medium heat, heat vegetable juice.
- Add green onions and pepper.
- Cook, stirring until onions are tender but not browned.
- Reduce heat to low and add egg mixture.
- When nearly set, distribute cheese over half.
- Fold omelet in half and slip onto warm serving plate.
- Cut into four portions.

INGREDIENTS
- 1egg
- 1/2cupfat-free lemon yogurtor plain nonfat yogurt
- 1/2cupmilk
- 2tablespoonscanola oil
- 1tablespoonsugar
- 1/2teaspoonnutmeg
- 1cupflour
- 1teaspoonbaking powder
- 1/2teaspoonbaking soda
DIRECTIONS
- In bowl, beat the egg and mix in the yogurt, milk and oil.
- Stir in sugar and nutmeg.
- In separate bowl, combine flour, baking powder and baking soda.
- Add the flour mixture to the liquid and mix.The batter will be thick.
- Grease and heat a griddle and pour out 1/4 C batter.
- Cook pancakes until they begin to bubble, then turn and cook on other side.
- Serve warm with maple syrup or cherry Pancake Syrup.

INGREDIENTS
- 1lbasparagus, trimmed
- 6cupschicken broth, please see the note below
- 2tablespoonsbutter
- 1smallonion, finely chopped
- 2cupsarborio rice
- 2sun-dried tomatoes packed in oil, drained or sun-dried tomatoes, reconstituted
- 1/4cupparmesan cheese, grated
- 2tablespoonsfresh parsley, chopped
- pepper
DIRECTIONS
- NOTE:.
- Zaar won’t let me enter this in the ingredients section, so the 6 cups of chicken broth should actually consist of the cooking water from blanching the asparagus, and then adding enough chicken broth to measure the 6 cups.
- Blanch the asparagus in a large skillet or pan of rapidly boiling water 2-3 minutes or until vivid green.Remove the asparagus from the pan and reserve the cooking water.Measure the cooking water and add stock to equal 6 cups and pour into a saucepan set over low heat.Allow to come to a low simmer.
- Cut the asparagus into 1-inch pieces.Melt the butter in a large pot set over medium heat and add the chopped onion, rice, and all the asparagus except the tips.Stir this mixture until the rice and vegetables are coated and the onion becomes translucent.
- Add 1/2 cup of the simmering broth and cook, stirring until the liquid is absorbed.Continue adding the broth slowly, 1/2 cup at a time, stirring until it is absorbed.Work slowly and do not add more broth until the previous 1/2 cup is fully absorbed.Work until all the broth is absorbed.Taste the risotto; it should be firm but not hard and the mixture creamy.If it is still tough, you may need to add more broth (bring to a simmer first).
- Off the heat, gently stir in the reserved asparagus tips along with the remaining ingredients.Serve immediately.

INGREDIENTS
- 1whole wheat pita bread
- 2tablespoonshummus
- 1mediumtomato(I use organic roma)
- 1/4cucumber
- 2-3slicesred onions
- 1/4avocado, always tastes good
- 1/2cupbaby spinach
DIRECTIONS
- Cut off a small piece of the pita so you can reach inside. Sometimes I microwave the pita for a few seconds-it makes it more flexible to put things inside without breaking!
- With a spoon or knife, spread inside with hummus.
- Thinly slice cucumber and tomato and place inside, with red onion.
- If you are using avocado, mash it up with a knife and spread on inside top of pita-it makes it easier!
- Stuff the spinach in-it’s easiest if you dice it first. Enjoy!
