Multi-Grain Bread Recipe

INGREDIENTS

  1. 1 1/4cupsmulti-grain hot cereal
  2. 1 1/2cupsboiling water
  3. 1cupcold water
  4. 5tablespoonshoney
  5. 4tablespoonsbutter
  6. 1 (1/4 ounce)packageyeast
  7. 3cupsflour
  8. 1 1/2cupswhole wheat flour
  9. 1/3cupflax seeds
  10. 1/3cupsalted sunflower seeds
  11. 1/2cup choppedpecans
  12. 1tablespoonsalt
  13. 2tablespoonsvegetable oil

DIRECTIONS

  1. In a large bowl, combine 7-grain hot cereal mix, 1 1/2 Celsius boiling water, 5 T. honey-4 T. butter, salt.
  2. Stir. Cover (I use a dinner plate).
  3. Let stand 1 hour.
  4. Remove cover.
  5. Add 1 Celsius cool water.
  6. Stir to combine all ingredients.
  7. Add yeast.
  8. Stir to dissolve yeast.
  9. Continue stirring to combine ingredients well; or use large mixer to mix well.
  10. Mix just until combined.
  11. Mix flours together in separate bowl.
  12. Attach dough hook to mixer.
  13. Start on low speed.
  14. Add flours to cereal mixture, one cup at a time.
  15. Add flax, sunflower seeds, and nuts.
  16. Continue mixing till dough cleans the sides of the mixing bowl.
  17. (You may have to add a bit more flour).
  18. Remove from mixer and place on floured bread board.
  19. Knead 5 minutes.
  20. Clean mixer bowl.
  21. Add 2 T. vegetable oil to clean bowl, tipping so that oil covers the bottom and part-way up the sides of the bowl.
  22. Place dough in bowl, then flip it over so that oiled side is on top.
  23. Turn on your oven light (this provides the warmth to proof your dough.
  24. Place bowl in the oven.
  25. Close the door.
  26. Let rise till double (about 1 hour).
  27. Remove from oven (leave the light on and re-close the door).
  28. Place on floured bread board.
  29. Separate in two pieces.
  30. Knead each piece 5 minutes.
  31. Form each into a cylinder, to fit the loaf pan.
  32. Oil 2 loaf pans.
  33. Place dough in loaf pans.
  34. Return to oven.
  35. Close door.
  36. Leave the light on.
  37. Let rise 1 hour or till dough mounds above the top of the pans.
  38. Bake 35-40 minutes at 375 degrees.

Cannellini Bean Dip Recipe

INGREDIENTS

  1. 1 (200 g)cancannellini beans
  2. 1spring onion, chopped
  3. 2tablespoonscashew nuts paste
  4. 1/2teaspooncitric acid

DIRECTIONS

  1. Place beans,chopped spring onions, cashew nut paste and citric acid in food processor and process until smooth.

Cheapo Fake "spaghetti" Recipe

INGREDIENTS

  1. 1 (10 3/4 ounce)canreduced fat reduced sodium condensed tomato soup
  2. 1 (10 3/4 ounce)canwater, the soup can
  3. 1/4-1/2teaspoongarlic powder
  4. 1/2teaspoondried basil
  5. 1 (3 ounce)packageramen noodles, broken in half, any flavor would likely work
  6. 1/4-1/2cup shreddedparmesan cheese

DIRECTIONS

  1. In a saucepan, place tomato soup, water, garlic powder and basil.Bring to a boil.
  2. Add ramen noodlesand flavor packet (I don’t add all of the powder).
  3. Reduce heat and simmer for 3-4 minutes, or until noodles are done to your likeness.
  4. Serve in bowls and sprinkle with parmesan cheese.

Sweet N' Spicy Veggie Pasta Recipe

INGREDIENTS

  1. 12ouncesfettuccine
  2. 1/4cupwhite wine
  3. 1cuponions, chopped
  4. 5garlic cloves, minced
  5. 1largered bell pepper, coarsely chopped
  6. 1cupcarrots, grated
  7. 1 1/2cupsbroccoli florets
  8. 1tablespoonfresh chives, minced
  9. 1/2cupplain nonfat yogurt
  10. 2tablespoonsparmesan cheese, grated
  11. 1/3cupricotta cheese
  12. 1/2cupnonfat sour cream
  13. 1/3cupstone ground mustard
  14. 1teaspoonhoney
  15. salt and pepper

DIRECTIONS

  1. Cook pasta until al dente. Drain well.
  2. Heat lightly oiled skillet over medium-high heat. When hot, add wine, onion and garlic.
  3. Cook and stir until soft, about 5 minutes.
  4. Add bell pepper, carrots, broccoli and chives. Cook just until tender, about 5 minutes.
  5. Combine yogurt, cheeses, sour cream, mustard and honey. Season with salt and pepper.
  6. Toss with veggies and pasta. Serve immediately.

Fabulous Banana Bread Recipe

INGREDIENTS

  1. 3medium very ripebananas
  2. 1cupsugar
  3. 3teaspoonsbaking soda
  4. 1dashsalt
  5. 2eggs
  6. 1/4cupvegetable oil
  7. 1 1/2cupsflour
  8. 1/2cupbuttermilk

DIRECTIONS

  1. Puree bananas for 15-20 seconds in a food processor.
  2. Add sugar, soda and salt.
  3. Process for 20 seconds.
  4. Add eggs and oil;blend.
  5. Add flour, process for 20 seconds.
  6. Add buttermilk and process until smooth.
  7. Spray a 9×5 inch loaf pan.
  8. Pour in batter.
  9. Bake in the middle of the oven a 275 degrees for 1 1/2 to 2 hours or until done, (long baking time at low temp is correct).
