Roasted Garlic Smashed Potatoes Recipe

INGREDIENTS

  1. 2smallbulbs of garlic
  2. 1tablespoonolive oil
  3. 4lbsred potatoes, peeled & quartered
  4. 1 (8 ounce)packagecream cheese, softened
  5. 1cupsour cream
  6. 1/2cupbutter
  7. 1/4cupmilk
  8. 3/4teaspoonsalt
  9. 1/4teaspoonpepper
  10. Garnish

  11. choppedfresh chives

DIRECTIONS

  1. Cut off pointed end of garlic bulb.
  2. Place garlic bulb on a piece of aluminum foil; drizzle with oil.
  3. Fold foil to seal.
  4. Bake at 350 degrees for 1 hour; cool.
  5. Squeeze pulp from garlic, set aside.
  6. Cook potatoes in a dutch oven, in boiling salted water to cover 20 to 25 min or until tender.
  7. Drain and place in a large bowl.
  8. Mash potatoes with roasted garlic pulp, cream cheese, and next 5 ingredients in a bowl until smooth.
  9. Garnish, if desired.

Dawn’s Makes Enough for Your Superbowl Party Salsa Recipe

INGREDIENTS

  1. 10ouncescanned tomatoes
  2. 30ounces cannedtomatoes and green chilies(Rotel-type)
  3. 10largegarlic cloves
  4. 1white onion, coarsley chopped
  5. 3largefresh jalapenos
  6. 1bunchfresh cilantro
  7. 4ounces cannedmild green chilies
  8. 1bunchgreen onions, thinly sliced
  9. 1tablespoonground cumin
  10. 1teaspoonoregano leaves, crumbled
  11. 1/2lemon, juice of
  12. 1/2lime, juice of
  13. salt

DIRECTIONS

  1. Process stewed tomatoes, one can Rotel, garlic, onion, jalapenos, and cilantro until it is a smooth (I used a stick blender so it remained a little chunkier than in a food processor or blender).
  2. Add remaining two cans of Rotel, the green chiles, green onions, cumin, oregano, lemon and lime juices.Mix well.
  3. Add salt to taste.
  4. Refrigerate or freeze.
  5. Best made a couple hours ahead so the flavors can meld.

Lasagne Recipe

INGREDIENTS

  1. 1 (12 ounce)packagelasagna noodles
  2. 1 (24 ounce)containerlow-fat ricotta cheese
  3. 1egg
  4. 8cupsmozzarella cheese
  5. 1 (8 ounce)jarspaghetti sauce

DIRECTIONS

  1. Preheat oven to 425.
  2. Prepare lasagne as directed on box.
  3. In a medium or large bowl, combine ricotta cheese and egg.
  4. Drain noodles.
  5. Spray 9×13 dish with Pam.
  6. Layer noodles, cheese mixture, sauce and mozzerella cheese.
  7. Layer again.
  8. Cook in over, uncovered, for 35 minutes.

Yummy No-Meat Lunch Burritos OAMC Recipe

INGREDIENTS

  1. 2cups uncookedbrown rice
  2. 4cupswater
  3. 4 (15 ounce)cansblack beans
  4. 2 (15 1/2 ounce)canspinto beans
  5. 1 (10 ounce)canwhole kernel corn
  6. 1 (10 ounce)canrotel
  7. 25 (10 inch)flour tortillas(whole wheat if you want to be healthy!)
  8. 1lb shreddedmonterey jack pepper cheese

DIRECTIONS

  1. Cook rice in water according to package directions.
  2. Once done, add drained beans, corn and Rotel to rice.
  3. Mix throughly.
  4. Add cheese.
  5. Mix throughly again.
  6. Divide mix evenly on the tortillas.
  7. Fold up to make burritos.
  8. Wrap each burrito in plastic wrap then foil.
  9. Freeze what won’t be used that week.
  10. *When ready to use*.
  11. Remove foil.
  12. Pop in microwave oven for 1 - 1 1/2 min or until center is hot.
  13. Carefully remove plastic wrap.
  14. Serve and enjoy.
  15. ***When using the frozen variety***.
  16. Thaw.
  17. Remove foil.
  18. Pop in microwave for 1-1 1/2 min or until center is hot.
  19. Carefully remove plastic wrap.
  20. Serve and enjoy!
