INGREDIENTS
- 2smallbulbs of garlic
- 1tablespoonolive oil
- 4lbsred potatoes, peeled & quartered
- 1 (8 ounce)packagecream cheese, softened
- 1cupsour cream
- 1/2cupbutter
- 1/4cupmilk
- 3/4teaspoonsalt
- 1/4teaspoonpepper

Garnish
- choppedfresh chives
DIRECTIONS
- Cut off pointed end of garlic bulb.
- Place garlic bulb on a piece of aluminum foil; drizzle with oil.
- Fold foil to seal.
- Bake at 350 degrees for 1 hour; cool.
- Squeeze pulp from garlic, set aside.
- Cook potatoes in a dutch oven, in boiling salted water to cover 20 to 25 min or until tender.
- Drain and place in a large bowl.
- Mash potatoes with roasted garlic pulp, cream cheese, and next 5 ingredients in a bowl until smooth.
- Garnish, if desired.

INGREDIENTS
- 10ouncescanned tomatoes
- 30ounces cannedtomatoes and green chilies(Rotel-type)
- 10largegarlic cloves
- 1white onion, coarsley chopped
- 3largefresh jalapenos
- 1bunchfresh cilantro
- 4ounces cannedmild green chilies
- 1bunchgreen onions, thinly sliced
- 1tablespoonground cumin
- 1teaspoonoregano leaves, crumbled
- 1/2lemon, juice of
- 1/2lime, juice of
- salt
DIRECTIONS
- Process stewed tomatoes, one can Rotel, garlic, onion, jalapenos, and cilantro until it is a smooth (I used a stick blender so it remained a little chunkier than in a food processor or blender).
- Add remaining two cans of Rotel, the green chiles, green onions, cumin, oregano, lemon and lime juices.Mix well.
- Add salt to taste.
- Refrigerate or freeze.
- Best made a couple hours ahead so the flavors can meld.

- Simmer for 12 minutes.

INGREDIENTS
- 1 (12 ounce)packagelasagna noodles
- 1 (24 ounce)containerlow-fat ricotta cheese
- 1egg
- 8cupsmozzarella cheese
- 1 (8 ounce)jarspaghetti sauce
DIRECTIONS
- Preheat oven to 425.
- Prepare lasagne as directed on box.
- In a medium or large bowl, combine ricotta cheese and egg.
- Drain noodles.
- Spray 9×13 dish with Pam.
- Layer noodles, cheese mixture, sauce and mozzerella cheese.
- Layer again.
- Cook in over, uncovered, for 35 minutes.

INGREDIENTS
- 2cups uncookedbrown rice
- 4cupswater
- 4 (15 ounce)cansblack beans
- 2 (15 1/2 ounce)canspinto beans
- 1 (10 ounce)canwhole kernel corn
- 1 (10 ounce)canrotel
- 25 (10 inch)flour tortillas(whole wheat if you want to be healthy!)
- 1lb shreddedmonterey jack pepper cheese
DIRECTIONS
- Cook rice in water according to package directions.
- Once done, add drained beans, corn and Rotel to rice.
- Mix throughly.
- Add cheese.
- Mix throughly again.
- Divide mix evenly on the tortillas.
- Fold up to make burritos.
- Wrap each burrito in plastic wrap then foil.
- Freeze what won’t be used that week.
- *When ready to use*.
- Remove foil.
- Pop in microwave oven for 1 - 1 1/2 min or until center is hot.
- Carefully remove plastic wrap.
- Serve and enjoy.
- ***When using the frozen variety***.
- Thaw.
- Remove foil.
- Pop in microwave for 1-1 1/2 min or until center is hot.
- Carefully remove plastic wrap.
- Serve and enjoy!
