INGREDIENTS
- 2large cooked and peeledsweet potatoes
- 1cupbrown sugar
- 1cupplain yogurt
- 1/2cuporange juice
- 3largeeggs
- 1teaspoonvanilla extract
- 1/2teaspoonsalt
- 1/4teaspoonground nutmeg
- 1 frozen or freshpie shell
DIRECTIONS
- Preheat oven 400 degrees.
- Blend skined potaoes in food til smooth.
- Mix in all other ingredients.
- Pour into pie crust.
- Bake approximently 50 minutes (until filling sets and puffs around edges).
- Let cool.
- Refrigerate 3 hours.
- Top with toasted pecan and whip cream.

INGREDIENTS
- 400g tinnedchickpeas
- 1tablespoonmango chutney
- 1teaspoongaram masala
- 1teaspoonchili powder
- 1teaspoonground coriander
- 1teaspoonground cumin
- 1tablespoonchili-garlic sauce(e.g. maggi brand)
- 2tablespoonsvegetable oil
- 1cupcooked brown rice
DIRECTIONS
- In a small bowl mix the chutney, chilli sauce, garam masala, chilli powder, coriander andcumin to form a paste.
- Heat the oil and fry the paste for one minute.
- Drain the chickpeas and add to the pan, stir very well to coat the chickpeas with oil and spice mix.
- Continue to cook the peas for 5 mins over a moderate to high heat longer if desired.
- Add the brown rice to the pan and mix well to coat the rice, cook for a further 3 - 4 mins so the rice is hot and the grains are broken up.
- Serve drizzle with plain yoghurt or sour cream.

INGREDIENTS
- 1cupbutter, two sticks, room temperature
- 1cupsugar
- 1teaspoonvanilla extract
- 4eggs
- 2cupsflour
- 2teaspoonsbaking powder

Streusel Topping
- 1cupflour
- 2/3cupbrown sugar, firmly packed
- 1teaspooncinnamon
- 1/2cup one stick coldbutter, cut into tablespoon pieces
DIRECTIONS
- Preheat oven to 325 degrees.
- You will need two muffin pans that hold 12 muffins each. If they aren’t nonstick, lightly spray with cooking spray.
- In a large mixing bowl, beat together the butter and sugar. Add the vanilla and eggs one at a time, beating well after each addition.
- Combine the flour and baking powder together in a bowl and add to the butter, sugar, and egg mixture. Mix on low speed until well blended-the batter will be very thick.
- Divide the batter evenly among the 24 cups. This will fill them about half way.
- For the topping, mix together the flour, brown sugar, and cinnamon in a bowl.
- Add the hard butter and cut it in to the dry ingredients until it resembles coarse crumbs-you can use your hands for this, rubbing it between your fingertips. Don’t make it too fine, you want it to have some body to it. Note: I use my hand held pastry blender tool.
- Put about 1 tablespoon of the streusel topping over each cake using up all of the topping;you will not see much of the batter.
- Bake in a preheated oven on two shelves for about 18 minutes, switching shelves after the first 10 minutes.
- They are done when a toothpick inserted in the middle comes out clean. Do not overbake;start checking them at about 16 minutes.
- Cool 5 minutes in the pans then remove to a cooling rack.

INGREDIENTS
- 1cupsoy sauce
- 1cupsake
- 1teaspoonred pepper flakes
- 4tablespoonshoney
- 2tablespoonsfresh garlic, minced
- 6tablespoonssesame oil
- 3lbs babypork ribs, about 2 sides
DIRECTIONS
- In a bowl, mix together the ingredients except for the ribs.Place the ribs in a container large enough to hold them, one slab on top of another, and pour the marinade over the meat.Cover and let it marinate in the refrigerator overnight.
- Preheat the oven to 300 degrees F. and and pour half the marinade in a baking pan.Add the ribs and bake turning frequently for the next 2 hours or until the meat is tender.
- Under a preheated broiler or on a wood fired grill, glaze ribs for 3-4 minutes per side.Watch carefully to avoid burning.
- Remove ribs and cut each side into individual pieces.Arrange overlapping on plates or on a platter and spoon the warm marinade over the meat.

INGREDIENTS
- 1/2cupfat(We use margarine or butter)
- 1cupsugar
- 2eggs
- 3tablespoonsbuttermilkor sour milk
- 1cupbananas, ripe mashed(approx 3 bananas)
- 2cupsall-purpose white flour
- 1teaspoonsalt
- 1teaspoonbaking soda
DIRECTIONS
- Cream fat.
- Work sugar into fat slowly.
- Add well beaten eggs and mix throughly.
- Sift flour, soda and salt.
- Fold flour into fat and sugar mixturealternating with milk and mashed banana.DO NOT BEAT.
- Turn into greased or lined 7 1/2″ to 8 1/4″ X 4 X 3 loaf pan.
- Bake at 350 for about 1 hour.
