Wonton Crisps Recipe

INGREDIENTS

  1. 8wonton skins(3-inch by 3-inch size, found in Asian markets or in the refrigerator section of groceries)
  2. 1tablespooncanola oil(or more)
  3. 1/8-1/4teaspoonsalt, to taste
  4. 1/16teaspoonpepper, to taste
  5. 1/16teaspoongarlic powder, to taste

DIRECTIONS

  1. Preheat oven to 375°F.
  2. Take a pastry brush and lightly brush the pan with some of the oil.
  3. Brush each wonton skin very lightly with with some oil as well.
  4. Sprinkle wontons with s pinch of salt, pepper and galic powder to taste.
  5. Bake 6-8 minutes or until crisp and browned.
  6. Let cool on paper towels.
  7. Crumble over salad or Asian style stir fry dishes.

Skinny Lasagna Recipe

INGREDIENTS

  1. 1/2lbground sirloin
  2. 1cupmushrooms, sliced
  3. 1cuponions, chopped
  4. 2garlic cloves, minced
  5. 1 (16 ounce)canstewed tomatoes, cut up
  6. 1 (16 ounce)cantomato sauce
  7. 1teaspoonsugar
  8. 1teaspoondried basil, crushed
  9. 1teaspoondried oregano, crushed
  10. 1/2teaspoonfennel seeds, crushed
  11. 1/4teaspoonblack pepper
  12. 1/4teaspoonred peppers, crushed
  13. 2egg whites, beaten
  14. 1cupskim milk ricotta cheese
  15. 1/2cupparmesan cheese, grated
  16. 6lasagna noodles
  17. 4ouncesmozzarella cheese, shredded

DIRECTIONS

  1. Cook the beef, mushrooms, onion, and garlic just til meat is brown; drain.
  2. Stir in undrained tomatoes, tomato sauce, sugar, basil, oregano, fennel, crushed red pepper, and black pepper and bring to a boil.
  3. Reduce heat and simmer, uncovered, for 35 minutes to thicken, stirring occasionally.
  4. In a small bowl, stir together the beaten egg whites, ricotta, and 1/4 c Parmesan cheese.
  5. Cook the lasagna noodles just til tender, drain, and rinse with cold water.
  6. Spray an 11×7x2 inch baking dish with nonstick spray coating.
  7. Arrange 3 of the lasagna noodles in the bottom (trim to fit).
  8. Spread with half of the ricotta mixture.
  9. Spoon half of the sauce over the top and sprinkle with half of the mozzarella cheese.
  10. Repeat layering noodles, cheese mixture, and sauce — but not the mozzarella.
  11. Sprinkle the remaining 1/4 cup of Parmesan over the top.
  12. Bake 35 minutes at 350 degrees.
  13. Remove and sprinkle with reserved mozzarella.
  14. Return to ove and bake 5-10 minutes more.
  15. Let stand 10 minutes before cutting and serving.

Napa Salad Recipe

INGREDIENTS

  1. 2headsnapa cabbage
  2. 6green onions
  3. 1/2cupbutter(1 stick)
  4. 2teaspoonssesame seeds
  5. 2 (3 ounce)packagesramen noodles, crush in package(do not use seasoning)
  6. 1/2cupsliced almonds
  7. Dressing

  8. 1/2cupoil
  9. 1/2cupsugar
  10. 1/4cuprice vinegar
  11. 2teaspoonssoy sauce

DIRECTIONS

  1. Wash, chop and dry Napa Lettuce and green onions, including the green parts and place in large bowl .
  2. In a saucepan melt butter and toast sesame seeds and ramen noodles until ingredients are light brown.
  3. Toss with the above mixture with lettuce and onions.
  4. Make the dressing: Mix in a shaker container. Shake well and mix with above right before serving.

All-In-One-Pan Roast and Vegetables Recipe

INGREDIENTS

  1. 3red bell peppers
  2. 2yellow bell peppers
  3. 2mediumonions
  4. 3/4lbnew potatoes
  5. 5garlic cloves, peeled(3 left whole and 2 cut into 12 slivers)
  6. 2tablespoonsolive oil
  7. coarse salt
  8. pepper
  9. 2 1/2lbseye of round roast
  10. 3/4teaspoonthyme

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Remove ribs and seeds from peppers, and cut into 1-inch strips or pieces.
  3. Halve onions and cut into 1-inch wedges.
  4. Scrub potatoes and cut into 1-inch chunks.
  5. Place peppers, onions, potatoes, and whole garlic cloves on a large rimmed baking sheet.
  6. Drizzle with 1 tablespoon of oil.
  7. Season with salt and pepper, and toss to coat.
  8. Using a paring knife, make 12 small slits in top and sides of roast; push in garlic slivers.
  9. Move vegetables to sides of sheet.
  10. Place beef in center, and coat with remaining oil; rub all over with 1 1/2 teaspoons coarse salt, 1/2 teaspoon pepper, and 3/4 teaspoon thyme.
  11. Roast 40 to 50 minutes, tossing vegetables occasionally until tender.
  12. Let meat stand 10 minutes, loosely tented with aluminum foil to keep warm.
  13. Serve.
  14. (Save leftover meat for Beef and Mango Wraps).

Protein Bran Muffins Recipe

INGREDIENTS

  1. 2/3cupwheat bran
  2. 3/4cupsoy protein(NOT flour)
  3. 1tablespoonvital wheat gluten
  4. 1/4teaspoonsalt
  5. 1teaspoonbaking soda
  6. 1/2cupSplenda sugar substitute
  7. 1 1/2teaspoonscinnamon
  8. 3tablespoonsoats
  9. 1cupskim milk
  10. 2tablespoonslemon juice
  11. 1egg
  12. 1teaspoonvanilla
  13. 3tablespoonsoil
  14. 1tablespoonsugar-free maple syrup

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. Combine milk and lemon juice and let sit 10 minutes until thickened.
  3. In separate bowl mix all the rest of the DRY ingredients.
  4. Add egg, oil, vanilla and syrup to thickened milk.
  5. Add wet ingredients to dry ingredients. DO NOT OVER MIX.
  6. Spoon into 6 greased muffins cups.
  7. Cook for approximately 20-25 minutes.
  8. Cool on wire rack.
