INGREDIENTS
- 8wonton skins(3-inch by 3-inch size, found in Asian markets or in the refrigerator section of groceries)
- 1tablespooncanola oil(or more)
- 1/8-1/4teaspoonsalt, to taste
- 1/16teaspoonpepper, to taste
- 1/16teaspoongarlic powder, to taste
DIRECTIONS
- Preheat oven to 375°F.
- Take a pastry brush and lightly brush the pan with some of the oil.
- Brush each wonton skin very lightly with with some oil as well.
- Sprinkle wontons with s pinch of salt, pepper and galic powder to taste.
- Bake 6-8 minutes or until crisp and browned.
- Let cool on paper towels.
- Crumble over salad or Asian style stir fry dishes.

INGREDIENTS
- 1/2lbground sirloin
- 1cupmushrooms, sliced
- 1cuponions, chopped
- 2garlic cloves, minced
- 1 (16 ounce)canstewed tomatoes, cut up
- 1 (16 ounce)cantomato sauce
- 1teaspoonsugar
- 1teaspoondried basil, crushed
- 1teaspoondried oregano, crushed
- 1/2teaspoonfennel seeds, crushed
- 1/4teaspoonblack pepper
- 1/4teaspoonred peppers, crushed
- 2egg whites, beaten
- 1cupskim milk ricotta cheese
- 1/2cupparmesan cheese, grated
- 6lasagna noodles
- 4ouncesmozzarella cheese, shredded
DIRECTIONS
- Cook the beef, mushrooms, onion, and garlic just til meat is brown; drain.
- Stir in undrained tomatoes, tomato sauce, sugar, basil, oregano, fennel, crushed red pepper, and black pepper and bring to a boil.
- Reduce heat and simmer, uncovered, for 35 minutes to thicken, stirring occasionally.
- In a small bowl, stir together the beaten egg whites, ricotta, and 1/4 c Parmesan cheese.
- Cook the lasagna noodles just til tender, drain, and rinse with cold water.
- Spray an 11×7x2 inch baking dish with nonstick spray coating.
- Arrange 3 of the lasagna noodles in the bottom (trim to fit).
- Spread with half of the ricotta mixture.
- Spoon half of the sauce over the top and sprinkle with half of the mozzarella cheese.
- Repeat layering noodles, cheese mixture, and sauce — but not the mozzarella.
- Sprinkle the remaining 1/4 cup of Parmesan over the top.
- Bake 35 minutes at 350 degrees.
- Remove and sprinkle with reserved mozzarella.
- Return to ove and bake 5-10 minutes more.
- Let stand 10 minutes before cutting and serving.

INGREDIENTS
- 2headsnapa cabbage
- 6green onions
- 1/2cupbutter(1 stick)
- 2teaspoonssesame seeds
- 2 (3 ounce)packagesramen noodles, crush in package(do not use seasoning)
- 1/2cupsliced almonds

Dressing
- 1/2cupoil
- 1/2cupsugar
- 1/4cuprice vinegar
- 2teaspoonssoy sauce
DIRECTIONS
- Wash, chop and dry Napa Lettuce and green onions, including the green parts and place in large bowl .
- In a saucepan melt butter and toast sesame seeds and ramen noodles until ingredients are light brown.
- Toss with the above mixture with lettuce and onions.
- Make the dressing: Mix in a shaker container. Shake well and mix with above right before serving.

INGREDIENTS
- 3red bell peppers
- 2yellow bell peppers
- 2mediumonions
- 3/4lbnew potatoes
- 5garlic cloves, peeled(3 left whole and 2 cut into 12 slivers)
- 2tablespoonsolive oil
- coarse salt
- pepper
- 2 1/2lbseye of round roast
- 3/4teaspoonthyme
DIRECTIONS
- Preheat oven to 400 degrees.
- Remove ribs and seeds from peppers, and cut into 1-inch strips or pieces.
- Halve onions and cut into 1-inch wedges.
- Scrub potatoes and cut into 1-inch chunks.
- Place peppers, onions, potatoes, and whole garlic cloves on a large rimmed baking sheet.
- Drizzle with 1 tablespoon of oil.
- Season with salt and pepper, and toss to coat.
- Using a paring knife, make 12 small slits in top and sides of roast; push in garlic slivers.
- Move vegetables to sides of sheet.
- Place beef in center, and coat with remaining oil; rub all over with 1 1/2 teaspoons coarse salt, 1/2 teaspoon pepper, and 3/4 teaspoon thyme.
- Roast 40 to 50 minutes, tossing vegetables occasionally until tender.
- Let meat stand 10 minutes, loosely tented with aluminum foil to keep warm.
- Serve.
- (Save leftover meat for Beef and Mango Wraps).

INGREDIENTS
- 2/3cupwheat bran
- 3/4cupsoy protein(NOT flour)
- 1tablespoonvital wheat gluten
- 1/4teaspoonsalt
- 1teaspoonbaking soda
- 1/2cupSplenda sugar substitute
- 1 1/2teaspoonscinnamon
- 3tablespoonsoats
- 1cupskim milk
- 2tablespoonslemon juice
- 1egg
- 1teaspoonvanilla
- 3tablespoonsoil
- 1tablespoonsugar-free maple syrup
DIRECTIONS
- Preheat oven to 350 degrees F.
- Combine milk and lemon juice and let sit 10 minutes until thickened.
- In separate bowl mix all the rest of the DRY ingredients.
- Add egg, oil, vanilla and syrup to thickened milk.
- Add wet ingredients to dry ingredients. DO NOT OVER MIX.
- Spoon into 6 greased muffins cups.
- Cook for approximately 20-25 minutes.
- Cool on wire rack.
