Leftover Meatloaf Soup Recipe

INGREDIENTS

  1. 1/2basic meat loaf, chopped(left over)
  2. 1 (26 ounce)candiced tomatoes
  3. 2quartsbeef broth
  4. 1onion, diced
  5. 2garlic cloves, minced
  6. 1largecarrot, diced
  7. 1potato, diced
  8. 2-3cupsfrozen vegetables(peas, corn and green beans)
  9. 1/4cuppearl barley(more if you like it thick)
  10. 1/4cupalphabet pasta(or any other small noodles)
  11. 2cupsbaby spinach leaves (optional)
  12. 1pinchsalt and pepper, to taste

DIRECTIONS

  1. Sauté onions and garlic in a small amount of oil.
  2. Add carrots and potatoes, and cook for another minute.
  3. Pour in tomatoes (I used to pre-seasoned kind) and allow to simmer for 5 minutes.
  4. Add stock and bring to a boil.
  5. Add frozen vegetables, barley and pasta, and meatloaf.
  6. Return the pot to a boil, cover and let simmer for 20 minutes or until barley is tender.
  7. Toss in a few handfuls of baby spinach leaves (optional).
  8. Add salt and pepper to taste.

Crunchy Baked Catfish With Cornbread Stuffing Recipe

INGREDIENTS

  1. 1 (6 ounce)packagecornbread stuffing mix(shake well and divide)
  2. 4teaspoonscajun seasoningor blackening seasoning(divided)
  3. 2lbscatfish fillets(about 2 large or 4 small fillets)
  4. 3tablespoonsbutter, melted(divided)
  5. 1cuphot water
  6. fresh thyme, Chopped (optional)

DIRECTIONS

  1. Preheat oven to 400°F.
  2. COATING: Stir together 1 cup stuffing mix and 2 teaspoons Cajun seasoning in a small bowl, crushing any larger pieces with your fingers (this might be less messy if done in a zip-loc baggie).
  3. FISH: Rinse fish and pat dry; brush with 1 tablespoon melted butter and roll in coating.
  4. Place in a shallow dish and sprinkle with any remaining coating.
  5. Bake until fish flakes easily with a fork, approximately 20 minutes.
  6. TOPPING: While fish is baking, stir together remaining stuffing mix, Cajun seasoning, 2 tablespoons butter and water in a small bowl; cover and microwave on HIGH for 2 minutes.
  7. When fish is cooked, cover with topping & a sprinkle of thyme and serve.

Ham & Raisin Pasta Recipe

INGREDIENTS

  1. 1 (1 lb)boxrotini pasta
  2. 1 1/2cupscooked ham, about 1/2 lb, slivered
  3. 1teaspoongarlic, finely chopped
  4. 1/4cupvirgin olive oil
  5. 2tablespoonsunsalted butter
  6. 3/4cupdark raisins
  7. 1/2cupwalnuts, coarsely chopped
  8. 1/4cupfresh parsley, chopped
  9. 1tablespoonpimiento, chopped
  10. 2tablespoonsparmesan cheese (optional)

DIRECTIONS

  1. Cook the rotini according to the directions on the box.
  2. Meanwhile, saute the ham & garlic in oil & butter for 3 minutes, then add the last 4 ingredients & saute 3 minutes longer.
  3. Toss the ham/raisin mixture with the drained, hot pasta.
  4. If desired, top with grated Parmesan cheese.

Poppy Seed Glazed Hot Ham and Cheese Sandwiches Recipe

INGREDIENTS

  1. 24potato dinner rolls(1 package)
  2. 1lb chippedham
  3. 1lb slicedswiss cheese
  4. 1/2cupbutter
  5. 1/3cupbrown sugar
  6. 2tablespoonsworcestershire sauce
  7. 2tablespoonsmustard
  8. 2tablespoonspoppy seeds
  9. 2teaspoonsonion flakes (optional)

DIRECTIONS

  1. Preheat oven to 350.
  2. Without separating into individual rolls, cut tops off.
  3. Line 9×13 pan with roll bottoms and place ham and cheese onto bottoms.
  4. Put tops of rolls back on.
  5. In a saucepan, mix remaining ingredients and bring to a boil for 2 minutes.
  6. Pour sauce evenly over sandwiches.
  7. Bake uncovered for 20 minutes.

Won Ton Chips 2007 Recipe

INGREDIENTS

  1. 30wonton wrappers
  2. 2tablespoonsolive oil
  3. 1garlic clove, minced fine
  4. 1/2teaspoondried oregano, crushed well
  5. 1/4cupromano cheese

DIRECTIONS

  1. Turn oven on to 350 degrees F.
  2. Cut each Won Ton wrapper into triangles.
  3. On a non stick baking sheet, line with tin foil, shaping into a fan , or ridges.
  4. Place the pieces of Won Ton wrappers over the foil, letting them fall over the foil.This will give you rippled chips.
  5. Or you can just lie them on the pan for flat chips.
  6. In a small bowl mix the olive oil,garlic, and oregano ( could use basil), and lightly brush this over each won ton wrapper.
  7. Sprinkle with the grated cheese.
  8. Bake in the oven for about 8 minutes or until golden, just the way you like them.
  9. Use hot pads to remove from oven, and tongs to remove the chips on to a rack to cool completely.
  10. Make a second and third batch until all the won tons are baked.
  11. Turn off the oven.
  12. Enjoy munching as a snack or with a great chilli, or bean soup recipe.
