INGREDIENTS
- 1mediumeggplant
- 2/3cupfine dry breadcrumbs
- 1/3cup gratedparmesan cheese
- 1/2teaspoonsalt
- 1/2teaspooncelery salt
- 1/4teaspoonpepper
- 2eggs
- 2tablespoonsmilk
- vegetable oil
DIRECTIONS
- Peel eggplant; cut into finger-size strips.
- Combine next 5 ingredients; stir well.
- Combine eggs and milk; stir well.
- Roll eggplant strips in breadcrumb mixture; dip in egg mixture, and roll again in breadcrumb mixture.
- Fry in hot oil (375F) until golden brown.
- Drain on paper towels.

INGREDIENTS
- 1 1/2pints crumbled silkenfirm tofu
- 1 1/4cups freshberries
- 1/4cup choppedstrawberries
- 1/4cup choppedwalnuts
- 6smallbananas
- raisins(optional) or dates(optional) or pineapples (optional)
DIRECTIONS
- Use raspberries, blueberries or the like for the fresh berries.Excellent with our Golden Raspberries.
- Place tofu, berries and walnuts in bowl and combine.
- Peel banana and split.Line plates with 1 banana. Top with tofu mix.Garnish with raisins, dates, pineapple if you want.
- If you want to splurge?Add some Vegan “whipped cream”.

INGREDIENTS
- 2tablespoonsolive oil
- 2mediumonions, chopped
- 1largehot pepper, finely chopped
- 4garlic cloves, crushed
- 1tablespoon gratedfresh ginger
- 2cupsstewed tomatoes
- 2tablespoonstamarind paste
- 7cupshot water
- 1cuplentils, rinsed
- 1teaspoonsalt
- 1teaspooncumin
- 1teaspoonpepper
- 4tablespoons choppedfresh mint
DIRECTIONS
- Dissolve the paste in the hot water.
- Sauté onions, peppers, garlic, and ginger over medium heat in the oil for 10 minutes.
- Stir in remaining ingredients, except mint, and bring to a boil. Cover and cook over medium heat for 40 minutes or until lentils are well cooked.
- If you want it more soup like, add water as it cooks.
- Stir in mint and serve.

INGREDIENTS
- 1 (750 ml)dry white wine, such as Chardonnay
- 1 (6 ounce)canfrozen lemonade concentrate, thawed and undiluted
- 2cupsorange juice
- 1cupCointreau liqueuror otherorange-flavored liqueur
- 1 (1 liter)bottleclub soda
- orange slices (optional)
DIRECTIONS
- Combine first 4 ingredients in a punch bowl.
- Add club soda, stirring gently.
- Serve over ice with orange slices, if desired.

INGREDIENTS
- 2cups shreddedsharp cheddar cheese
- 1/2cupsour cream
- 1/4cupbutter, softened
- 2green onions, chopped
- 1 (2 ounce)jardiced pimentos, drained
- 2tablespoons choppedgreen chilies
DIRECTIONS
- Combine first 3 ingredients in a mixing bowl; beat at medium speed with an electric mixer until blended.
- Stir in green onions, pimiento, and chilies.
- Cover and chill, if desired.
- Serve with crackers.
