Crispy Eggplant (Aubergine) Fingers Recipe

INGREDIENTS

  1. 1mediumeggplant
  2. 2/3cupfine dry breadcrumbs
  3. 1/3cup gratedparmesan cheese
  4. 1/2teaspoonsalt
  5. 1/2teaspooncelery salt
  6. 1/4teaspoonpepper
  7. 2eggs
  8. 2tablespoonsmilk
  9. vegetable oil

DIRECTIONS

  1. Peel eggplant; cut into finger-size strips.
  2. Combine next 5 ingredients; stir well.
  3. Combine eggs and milk; stir well.
  4. Roll eggplant strips in breadcrumb mixture; dip in egg mixture, and roll again in breadcrumb mixture.
  5. Fry in hot oil (375F) until golden brown.
  6. Drain on paper towels.

Banana Split Salad Recipe

INGREDIENTS

  1. 1 1/2pints crumbled silkenfirm tofu
  2. 1 1/4cups freshberries
  3. 1/4cup choppedstrawberries
  4. 1/4cup choppedwalnuts
  5. 6smallbananas
  6. raisins(optional) or dates(optional) or pineapples (optional)

DIRECTIONS

  1. Use raspberries, blueberries or the like for the fresh berries.Excellent with our Golden Raspberries.
  2. Place tofu, berries and walnuts in bowl and combine.
  3. Peel banana and split.Line plates with 1 banana. Top with tofu mix.Garnish with raisins, dates, pineapple if you want.
  4. If you want to splurge?Add some Vegan “whipped cream”.

Shawrbat ‘adas Bil-Tamar Hindi Recipe

INGREDIENTS

  1. 2tablespoonsolive oil
  2. 2mediumonions, chopped
  3. 1largehot pepper, finely chopped
  4. 4garlic cloves, crushed
  5. 1tablespoon gratedfresh ginger
  6. 2cupsstewed tomatoes
  7. 2tablespoonstamarind paste
  8. 7cupshot water
  9. 1cuplentils, rinsed
  10. 1teaspoonsalt
  11. 1teaspooncumin
  12. 1teaspoonpepper
  13. 4tablespoons choppedfresh mint

DIRECTIONS

  1. Dissolve the paste in the hot water.
  2. Sauté onions, peppers, garlic, and ginger over medium heat in the oil for 10 minutes.
  3. Stir in remaining ingredients, except mint, and bring to a boil. Cover and cook over medium heat for 40 minutes or until lentils are well cooked.
  4. If you want it more soup like, add water as it cooks.
  5. Stir in mint and serve.

Wine Welcomer Recipe

  1. 1 (750 ml)dry white wine, such as Chardonnay
  2. 1 (6 ounce)canfrozen lemonade concentrate, thawed and undiluted
  3. 2cupsorange juice
  4. 1cupCointreau liqueuror otherorange-flavored liqueur
  5. 1 (1 liter)bottleclub soda
  6. orange slices (optional)

DIRECTIONS

  1. Combine first 4 ingredients in a punch bowl.
  2. Add club soda, stirring gently.
  3. Serve over ice with orange slices, if desired.

Mexican Cheese Spread Recipe

INGREDIENTS

  1. 2cups shreddedsharp cheddar cheese
  2. 1/2cupsour cream
  3. 1/4cupbutter, softened
  4. 2green onions, chopped
  5. 1 (2 ounce)jardiced pimentos, drained
  6. 2tablespoons choppedgreen chilies

DIRECTIONS

  1. Combine first 3 ingredients in a mixing bowl; beat at medium speed with an electric mixer until blended.
  2. Stir in green onions, pimiento, and chilies.
  3. Cover and chill, if desired.
  4. Serve with crackers.
