Black Bread Recipe

INGREDIENTS

  1. 1 (1/4 ounce)packageactive dry yeast
  2. 2cupswarm water(105F to 115F)
  3. 3-4cupsall-purpose flour, divided
  4. 2tablespoonsshortening, melted and cooled
  5. 2tablespoonssugar
  6. 2teaspoonssalt
  7. 3cupsrye flour
  8. 1tablespooncaraway seeds
  9. 1tablespoondill seeds
  10. 3tablespoonsdark molasses
  11. butter, melted

DIRECTIONS

  1. Combine yeast and warm water in a 2-cup liquid measuring cup; let stand 5 minutes. Combine yeast mixture, 3 cups ap flour, shortening, sugar and salt in a large mixing bowl; beat at medium speed with an electric mixer until well blended. Add rye flour and next 3 ingredients; mix well. Gradually stir in enough remaining ap flour to form a soft ball.
  2. Turn dough out onto a well-floured surface, and knead until smooth and elastic (about 8 to 10 minutes). Place in a well greased bowl, turning to grease top. Cover and let rise in a warm place (85degrees) free from drafts, 1 hour or until doubled in bulk.
  3. Punch dough down, and divide in half, shape each portion into a smooth ball. PLace on a large greased baking sheet, and lightly press to flatten bottom. Slash tops of loaves with razor blade or sharp knife. Cover and let rise in a warm place,free from drafts, 1 hour or until doubled in bulk.
  4. Bake at 400F for 30 minutes or until loaves sound hollow when tapped. Brush bread with melted butter. Remove to wire racks to cool.

Quick & Easy Vegetarian Empanadas Recipe

INGREDIENTS

  1. 2tablespoonsolive oil
  2. 1lb refrigeratedpizza dough
  3. 1/2cupflour(for the work surface)
  4. 1 (16 ounce)canrefried beans
  5. 1 (1 pint)container freshsalsa
  6. 1 (8 ounce)package shreddedcheddar cheese
  7. sour cream(to garnish)(optional)
  8. avocados(to garnish)(optional)

DIRECTIONS

  1. Heat oven to 400*F. Spread 1 teaspoon of the oil on a baking sheet.
  2. Divide the dough into 6 equal portions. Roll each into an 8in round on a lightly floured surface. On 1 side of each round, spread some of the beans, then top with 1 1/2 tbs of salsa and 2 tbs of cheese.
  3. Fold each of the rounds in half, covering the filling, and sealing the dough on the curved edge with your thumb. Lightly brush the tops of the empanadas with the remaining oil. Transfer to the already greased baking sheet.
  4. Bake 12-15 minutes until golden.
  5. Serve with a dollop of sour cream and sliced avocado if desired.

Quingombos Guisados Recipe

INGREDIENTS

  1. 3tablespoonsoil
  2. 1lb thawedfrozen okra
  3. 1largeonion, finely chopped
  4. 4garlic cloves, crushed
  5. 1largesweet pepper, thinly sliced
  6. 1smallhot pepper, finely chopped
  7. 2largetomatoes, finely chopped
  8. 1cupwater
  9. 1teaspoonsalt
  10. 1/2teaspoonpepper
  11. 1/4teaspoonallspice

DIRECTIONS

  1. Saute okra in the oil over med heat until it turns light brown.Turn several times. Remove okra with a slotted spoon and set aside on paper towels to drain excess oil.
  2. Now to the oil add the garlic, onions and peppers.Cook over med low for 10 minutes.
  3. Stir in okra and the remaining ingredients.Cook for15 more minutes.Okra should be tender.Add water if needed.
  4. Serve with hot cooked rice.

Perfect Poached Eggs Recipe

INGREDIENTS

  1. 2tablespoonswhite vinegar
  2. 1teaspoonsalt
  3. 2largeeggs
  4. water

DIRECTIONS

  1. Fill a 10″ high sided frying pan with water until near the top.
  2. Add salt and vinegar to the water and bring it to a boil.
  3. Meanwhile, place the eggs in separate small bowls (coffee mugs work too!).
  4. Once the water boils, remove it from the heat and add both eggs at the same time on opposite sides of the pan.
  5. Cover the pan with a lid and let sit for 3-1/2 minutes for a soft yolk or 4-1/2 minutes for a firmer yolk. Lift from pan with slotted spoon and serve.

Apricot Spice Cake Recipe

INGREDIENTS

  1. 2cupsself-rising flour
  2. 1 3/4cupssugar
  3. 1cup choppedpecans
  4. 1cupvegetable oil
  5. 1 (6 ounce)jarapricot baby food
  6. 1teaspoonground cinnamon
  7. 1teaspoonground allspice
  8. 3largeeggs, lightly beaten
  9. Cream Cheese Glaze

  10. 1 (3 ounce)packagecream cheese, softened
  11. 3tablespoonsmilk
  12. 1teaspoonvanilla extract
  13. 1dashsalt
  14. 1 1/2cups siftedpowdered sugar

DIRECTIONS

  1. Cake:.
  2. Combine first 8 ingredients in a large bowl; stir until blended. Pour batter into a heavily greased and floured 12-cup Bundt pan. ( batter will be shallow in pan.)Bake at 350F for 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan, and cool completly on wire rack. Drizzle Cream XCheese Glaze over cake.
  3. Cream Cheese Glaze:.
  4. Combine first 4 ingredients; beat at medium speed with an electric mixer until smooth. Gradually add powdered suagr, beating at low speed until glaze is smooth.
  5. NOte: Do not use a tube pan for this recipe-the cake will be too shallow.
