INGREDIENTS
- 32ouncesbeef round tip steaks, cut 1 inch thick(four 8oz steaks)
- 4slicesbacon, thick-sliced cut into 1/2-inch pieces
- 1tablespoonall-purpose flour
- 1teaspoonsalt, divided
- 1/2teaspoonpepper, divided
- 2shallots, small and thinly sliced, separated into rings
- 8ouncesshiitake mushrooms, stems removed, diced
- 2tablespoonswater
- 1/4cupwhipping cream
- 1/2cupblue cheese, crumbled
- 1/4cupfresh parsley leaves, finely chopped
DIRECTIONS
- Cook bacon in nonstick skillet over medium heat until crisp.
- Remove bacon with slotted spoon to paper towels, reserving 2 to 3 tablespoons drippings in skillet.
- Set aside.
- Meanwhile combine flour, 1/2 teaspoon salt and 1/4 teaspoon pepper in small bowl.
- Add shallots; toss to coat.
- Heat bacon drippings over medium-high heat until hot.
- Add shallots and cook 2 to 3 minutes or until well browned, stirring occasionally.
- Remove from skillet with slotted spoon to paper towels.
- Set aside.
- Reduce heat to medium.
- Season beef steaks evenly with remaining 1/4 teaspoon pepper.
- Place steaks in same skillet; cook 14 to 15 minutes for medium rare doneness, turning occasionally (do not overcook).
- Remove to serving platter; season with remaining 1/2 teaspoon salt.
- Keep warm.
- Add mushrooms and water to skillet then cook and stir 3 to 5 minutes or until mushrooms are tender.
- Add cream and cook 1 to 2 minutes or until cream is almost absorbed.
- Stir in cheese and bacon.
- Spoon mushroom mixture over steaks and top with shallots & parsley.

INGREDIENTS
- 1 (5 lb)pork roast
- 1garlic clove, slice into 5 sections
- 1 (1 ounce)packagebeef soup mix
- 2cupswarm water
DIRECTIONS
- Rinse pork with cold water.
- Preheat oven to 350 degrees.
- Poke holes, about 5, in pork roast.
- Place garlic in holes.
- Mix dry soup mix with 2 cups warm water.
- Pour over roast.
- Roast covered in oven for three hours.

INGREDIENTS
- 2 (8 ounce)beef round tip steaks, cut 1 inch thick
- salt (optional)

Marinade
- 2/3cupItalian dressing, prepared
- 2tablespoonsfresh cilantro, chopped
- 1tablespoonchili powder
DIRECTIONS
- Combine marinade ingredients in small bowl.
- Place beef steaks and marinade in food-safe plastic bag; turn steaks to coat.
- Close bag securely and marinate in refrigerator 1 hour.
- Remove steaks from marinade; discard marinade.
- Place steaks on grid over medium, ash-covered coals.
- Grill, covered, 11 to 13 minutes for medium rare doneness, turning once. (Do not overcook.)
- Season with salt, as desired.
- OPTIONAL TOPPINGS: Chopped fresh cilantro, chopped tomato, sliced avocado, dairy sour cream.

INGREDIENTS
- 1teaspoondried Italian seasoning
- 1/2teaspoonsalt(I like kosher)
- 1/2teaspoonpepper
- 3largepotatoes, peeled and thinly sliced(about 1 1/2 pounds)
- 4largeboneless pork chops(about 1 1/2 pounds)
- 2tart apples, peeled, cored, sliced
- 2 (14 1/2 ounce)canssauerkraut, undrained
- 1/2lbkielbasa, sliced
- 1/2cup slightlysweet white wine(Riesling)
- 1 (10 ounce)packagefrozen peas, thawed
DIRECTIONS
- In small bowl, mix seasoning, salt and pepper. (I didn’t measure these, I just seasoned each layer with a little sprinkle of each).
- Coat slow cooker with nonstick spray. Layer potatoes, pork chops, kielbasa, apples and sauerkraut (in that order). Season each layer with spice mix. Pour wine over top of sauerkraut.
- Cook 4 hours on high or 8 hours on low. Stir in thawed peas and cook additional 30 minutes.
- remove pork chops and cut each into thick slices against the grain. Stir back into mixture and serve.

INGREDIENTS
- 1 1/2cupssugar
- 3/4cupbutter, melted
- 2eggs
- 1teaspoonalmond extract
- 1 1/2teaspoonsvanilla extract
- 1/2teaspoonsalt
- 1 1/2cupsflour
- 1/2cupchocolate chips
- 1/2cupalmonds, sliced
- 1tablespoongranulated sugar
DIRECTIONS
- Preheat oven to 350 degrees.
- Blend sugar and melted butter together in a medium size mixing bowl. Beat in eggs. Stir in salt and flour mixing until well blended.
- Spread batter in a greased 9″ round cake pan.
- Sprinkle batter with chocolate chips, then almonds, and finally the sugar.
- Press lightly with the fingers to push toppings into the batter a little way.
- Bake 30 to 35 minutes until golden brown.
- Allow to cool before cutting into 16 wedges.
