INGREDIENTS
- 2eggs
- 2tablespoonsflour
- 2tablespoonssugar
- 1teaspoonsalt
DIRECTIONS
- In a bowl beat all ingredients together.
- Heat a non stick or lightly oiled pan on a medium heat. I normally use a small frying pan to give me a 1/4 inch thick omelette.
- Cook until golden on both sides.
- Allow to cool and slice into 1/2 inch thick slices.

INGREDIENTS
- 1fresh pineapple, skinned and cored
- 4ouncesdark chocolate
- 1/4pinthalf-and-half
- 1tablespoondark rum
DIRECTIONS
- Slice the pineapple and cut into chunks.
- In a small saucepan, heat the chocolate and cream gently until the chocolate has melted.
- Stir in the rum.
- Serve at once, dipping the pineapple into the warm sauce.

INGREDIENTS
- 3cupsflour
- 2cupsoats
- 1/2cupbutter
- 1cupbrown sugar
- 6mlbicarbonate of soda
- 25mlwarm water
- 1 1/2tablespoonspeanut butter
DIRECTIONS
- Mix the flour, coconut and oats into a bowl.
- Next melt the butter, and sugar.
- Stir in the flour mixture.
- Dissolve bicarb in warm water, and stir into mixture.
- Put mixture into a greased baking tray.
- Bake at 180C for 15min or until golden brown.
- Cut into squares or any shape you require while still hot.

INGREDIENTS
- 1cupbutter, softened
- 1 (8 ounce)packagecream cheese, softened
- 3cupsall-purpose flour
- powdered sugar
- 1cupraisins
- 1 (12 ounce)jarred raspberry preserves
- 1cup finely choppedwalnuts
- 1cup firmly packedbrown sugar
- 1cupflaked coconut
DIRECTIONS
- Beat butter and cream cheese at medium speed with an electric mixer until creamy;stir in flour. Divide dough into 4 equal parts. Wrap each in plastic wrap and chill at least 8 hours.
- Sift powdered sugar lightly over work surface. Work with 1 portion on dough at a time. (Keep remaining portions in refrigerator). Roll dough into a 12-x8-inch rectangle.
- Combine raisins, preserves, walnuts, brown sugar and coconut; spread one-fourth of mixture over dough. Roll up jelly roll fashion, starting at short side.
- Pinch seam and ends together. Place roll, seam side down, on an ungreased baking sheet. Repeat process with remaining dough and filling.
- Bake at 325F for 55 minutes. Serve warm or at room temperature Sprinkle lightly with powdered sugar.

INGREDIENTS
- 2cupshickory chipsor mesquite wood chips
- 1/4cupwater
- 3tablespoonsketchup
- 2tablespoonsbutter, melted
- 2tablespoonscider vinegar
- 2tablespoonsworcestershire sauce
- 1tablespoonlemon juice
- 1teaspoonsalt
- 1teaspoondry mustard
- 1teaspoonpaprika
- 2teaspoonschili powder
- 1/4teaspoondry crushed red pepper
- 3-4lbschicken pieces
DIRECTIONS
- Soak wood chips in water to cover 30 minutes.
- Stir together 1/4 cup water and next 10 ingredients; set aside.
- Drain wood chips. Place in center of a large square of aluminum foil, and fold edges to seal. Punch several holes in top of packet.
- Prepare fire by piling charcoal or lava rocks on sides of grill, leaving center empty. Place foil packet on 1 side of coals; place drip pan on coals. Coat food rack with vegetable cooking spray;place rack on grill.
- Arrange chicken, skin side up, over drip pan; grill, covered with grill lid, over medium high coals 10 minutes on each side. Brush chicken with sauce; gril 20 to 25 more minutes or until done, basting and turning often.
