INGREDIENTS
- 4slicesbacon
- 2chicken breasts(cut into bite size pieces)
- 1tablespoonbutter
- 2tablespoonsolive oil
- 2garlic cloves(minced)
- 1/2cupheavy cream
- 1cupmilk
- 1headbroccoli(cut into bite size)
- 1/2cupcream cheese(cut up)
- salt and pepper
- 1/2cupparmesan cheese, plus
- 2tablespoonsparmesan cheese
- spaghetti noodles
DIRECTIONS
- Start by frying bacon until crisp, then drain and crumble.
- Pan saute chicken until done, then remove.
- Melt butter and olive oil together.
- Cook garlic in butter mixture until you can smell the garlic aroma.
- Put the chicken and bacon back to the pan, and add the heavy cream, milk, and brocolli.
- Heat until brocolli is cooked through.
- Add the cream cheese, stir until incorporated.
- Salt and pepper to taste.
- Turn off the heat, and add 1/2 cup parmesean cheese.
- Toss with cooked pasta.
- Top with 2 Tablespoons parmesean.

INGREDIENTS
- 1tablespoonvegetable oil
- 1/2cuponions, chopped
- 1tablespoongarlic, minced
- 1chipotle pepper, chopped(dried, reconstituted with warm water)
- 1mediumbell pepper, chopped
- 2mediumjalapeno peppers, chopped(seed if you don’t want heat)
- 2teaspoonscumin
- 1 1/2teaspoonsdried oregano
- 1tablespoonred chili powder, ground
- 3mediumtomatoes, diced
- 4cupschicken broth(or vegetable broth)
- 2cooked chicken breasts, chopped
- 2tablespoonsmilk(or cream)
- 1tablespoonlime juice
- 1teaspoonsalt(to taste)

Crunchy Tortilla Topping
- 6smallflour tortillas(or corn)
- 1tablespoonoil
- 1tablespoonsour cream
- 1teaspooncilantro, chopped
DIRECTIONS
- Heat 1 tablespoon of oil in a large soup pot.
- Add onion and cook until softened.
- Add garlic, cook 30 seconds.
- Add all chopped peppers cook until soft.
- Add cumin, oregano, red chili pepper, tomatoes.
- Add stock.
- Bring mixture to a simmer and cook 10 minutes.
- Puree the soup in blender.
- Add pureed soup back to soup pot.
- Add chopped chicken to mixture.
- Simmer this for 10 minutes.
- Add milk, and stir until heated through.
- Stir in the lime juice.
- Taste for seasoning, add salt as needed.
- Cut tortillas into 1/4 inch strips and fry them in 1 tablespoons of oil.
- To serve, ladle soup into 4 soup bowls.
- Top with tortilla strips, sour cream and cilantro.

INGREDIENTS
- 1mediumonion, sliced
- 8garlic cloves, minced
- 1/4cupolive oil
- 1/2cuporange juice
- 1/3cupfresh lime juice
- 3tablespoonswhite wineor chicken broth
- 1teaspoonsugar
- 1teaspoonsalt
- 1/4teaspoonpepper
- 1teaspoonwhite vinegar
- 1 (3 lb)roasting chickens

Garnish
- lime slices
- orange slices
- fresh cilantro
DIRECTIONS
- Cook onion and garlic in olive oil in a medium saucepan over medium-high heat 2 minutes. Add orange juice and nest 6 ingredients.
- Bring to a boil. Remove from heat;cool. Reserve 1/4 cup marinade and refrigerate it.
- Place chicken in a shallow dish or heavy duty, zip-top plastic bag. Pour remaining marinade over chicken. Cover or seal; marinate in refrigerator 8 hours, turning chicken occasionally.
- Remove chicken from marinade; discard marinade. Dry chicken with a paper towel. Place on a lightly greased rack, and place rack in broiler pan.
- Bake at 400F for 15 minutes; reduce heat to 350F, and bake 1 hour and 15 minutes, basting with reserved 1/4 cup marinade.
- Cover chicken with aluminum foil after 1 hour to prevent excessive browning. Place on serving platter and garnish.

INGREDIENTS
- 1cupall-bran cereal
- 1/2cupboiling water(mix in All Bran Cereal and set aside)
- 1/2cupwhite sugar
- 1/2cupbrown sugar
- 3/4cup freshapplesauce
- 2 1/2cupswhole wheat flour
- 2 1/2teaspoonsbaking soda
- 3/4teaspoonsalt
- 2cupsall-bran cereal
- 2eggs
- 1pintbuttermilk
- 1cupraisins(or more)
- 1teaspooncinnamon(to taste)
- 1teaspoonnutmeg(to taste)
- 1/4cupflax seeds
DIRECTIONS
- Boil water and pour over 1 cup All Bran Cereal - set aside.
- Cream applesauce, sugar, eggs
- Add dry ingredients.
- Add buttermilk.
- Mix.
- Add Raisins.

- 3cupscooked chicken, chopped
- 10 3/4ouncescream of chicken soup
- 8ouncessour cream
- 1tablespoonpoppy seeds
- 1 1/2cupsbuttery crackers, crushed(40 crackers)
- 1/4cupbutter, melted
DIRECTIONS
- Combine first 4 ingredients;.
- Spoon into a lightly greased 11×7x1 1/2 inch baking dish.
- Combine crushed crackers and butter, and sprinkle over chicken mixture.
- Bake, uncovered, at 350 for 30 minutes.
