Creamy Chicken Pasta Recipe

INGREDIENTS

  1. 4slicesbacon
  2. 2chicken breasts(cut into bite size pieces)
  3. 1tablespoonbutter
  4. 2tablespoonsolive oil
  5. 2garlic cloves(minced)
  6. 1/2cupheavy cream
  7. 1cupmilk
  8. 1headbroccoli(cut into bite size)
  9. 1/2cupcream cheese(cut up)
  10. salt and pepper
  11. 1/2cupparmesan cheese, plus
  12. 2tablespoonsparmesan cheese
  13. spaghetti noodles

DIRECTIONS

  1. Start by frying bacon until crisp, then drain and crumble.
  2. Pan saute chicken until done, then remove.
  3. Melt butter and olive oil together.
  4. Cook garlic in butter mixture until you can smell the garlic aroma.
  5. Put the chicken and bacon back to the pan, and add the heavy cream, milk, and brocolli.
  6. Heat until brocolli is cooked through.
  7. Add the cream cheese, stir until incorporated.
  8. Salt and pepper to taste.
  9. Turn off the heat, and add 1/2 cup parmesean cheese.
  10. Toss with cooked pasta.
  11. Top with 2 Tablespoons parmesean.

Homemade (Not Canned) Spicy Tortilla Soup Recipe

INGREDIENTS

  1. 1tablespoonvegetable oil
  2. 1/2cuponions, chopped
  3. 1tablespoongarlic, minced
  4. 1chipotle pepper, chopped(dried, reconstituted with warm water)
  5. 1mediumbell pepper, chopped
  6. 2mediumjalapeno peppers, chopped(seed if you don’t want heat)
  7. 2teaspoonscumin
  8. 1 1/2teaspoonsdried oregano
  9. 1tablespoonred chili powder, ground
  10. 3mediumtomatoes, diced
  11. 4cupschicken broth(or vegetable broth)
  12. 2cooked chicken breasts, chopped
  13. 2tablespoonsmilk(or cream)
  14. 1tablespoonlime juice
  15. 1teaspoonsalt(to taste)
  16. Crunchy Tortilla Topping

  17. 6smallflour tortillas(or corn)
  18. 1tablespoonoil
  19. 1tablespoonsour cream
  20. 1teaspooncilantro, chopped

DIRECTIONS

  1. Heat 1 tablespoon of oil in a large soup pot.
  2. Add onion and cook until softened.
  3. Add garlic, cook 30 seconds.
  4. Add all chopped peppers cook until soft.
  5. Add cumin, oregano, red chili pepper, tomatoes.
  6. Add stock.
  7. Bring mixture to a simmer and cook 10 minutes.
  8. Puree the soup in blender.
  9. Add pureed soup back to soup pot.
  10. Add chopped chicken to mixture.
  11. Simmer this for 10 minutes.
  12. Add milk, and stir until heated through.
  13. Stir in the lime juice.
  14. Taste for seasoning, add salt as needed.
  15. Cut tortillas into 1/4 inch strips and fry them in 1 tablespoons of oil.
  16. To serve, ladle soup into 4 soup bowls.
  17. Top with tortilla strips, sour cream and cilantro.

Citrus Chicken Recipe

INGREDIENTS

  1. 1mediumonion, sliced
  2. 8garlic cloves, minced
  3. 1/4cupolive oil
  4. 1/2cuporange juice
  5. 1/3cupfresh lime juice
  6. 3tablespoonswhite wineor chicken broth
  7. 1teaspoonsugar
  8. 1teaspoonsalt
  9. 1/4teaspoonpepper
  10. 1teaspoonwhite vinegar
  11. 1 (3 lb)roasting chickens
  12. Garnish

  13. lime slices
  14. orange slices
  15. fresh cilantro

DIRECTIONS

  1. Cook onion and garlic in olive oil in a medium saucepan over medium-high heat 2 minutes. Add orange juice and nest 6 ingredients.
  2. Bring to a boil. Remove from heat;cool. Reserve 1/4 cup marinade and refrigerate it.
  3. Place chicken in a shallow dish or heavy duty, zip-top plastic bag. Pour remaining marinade over chicken. Cover or seal; marinate in refrigerator 8 hours, turning chicken occasionally.
  4. Remove chicken from marinade; discard marinade. Dry chicken with a paper towel. Place on a lightly greased rack, and place rack in broiler pan.
  5. Bake at 400F for 15 minutes; reduce heat to 350F, and bake 1 hour and 15 minutes, basting with reserved 1/4 cup marinade.
  6. Cover chicken with aluminum foil after 1 hour to prevent excessive browning. Place on serving platter and garnish.

Bran Muffins Recipe

INGREDIENTS

  1. 1cupall-bran cereal
  2. 1/2cupboiling water(mix in All Bran Cereal and set aside)
  3. 1/2cupwhite sugar
  4. 1/2cupbrown sugar
  5. 3/4cup freshapplesauce
  6. 2 1/2cupswhole wheat flour
  7. 2 1/2teaspoonsbaking soda
  8. 3/4teaspoonsalt
  9. 2cupsall-bran cereal
  10. 2eggs
  11. 1pintbuttermilk
  12. 1cupraisins(or more)
  13. 1teaspooncinnamon(to taste)
  14. 1teaspoonnutmeg(to taste)
  15. 1/4cupflax seeds

DIRECTIONS

  1. Boil water and pour over 1 cup All Bran Cereal - set aside.
  2. Cream applesauce, sugar, eggs
  3. Add dry ingredients.
  4. Add buttermilk.
  5. Mix.
  6. Add Raisins.

  1. 3cupscooked chicken, chopped
  2. 10 3/4ouncescream of chicken soup
  3. 8ouncessour cream
  4. 1tablespoonpoppy seeds
  5. 1 1/2cupsbuttery crackers, crushed(40 crackers)
  6. 1/4cupbutter, melted

DIRECTIONS

  1. Combine first 4 ingredients;.
  2. Spoon into a lightly greased 11×7x1 1/2 inch baking dish.
  3. Combine crushed crackers and butter, and sprinkle over chicken mixture.
  4. Bake, uncovered, at 350 for 30 minutes.
