Better Than Grannie’s Creamed Corn Recipe

INGREDIENTS

  1. 1/2onion, diced
  2. 1tablespoonbutter
  3. 2pincheskosher salt
  4. 8earsfresh corn
  5. 1sprigfresh rosemary, bruised
  6. 1tablespoonsugar
  7. 1/4teaspoonturmeric
  8. 2tablespoonsyellow cornmeal
  9. 1cupheavy cream
  10. fresh ground black pepper

DIRECTIONS

  1. In a saucepan over medium heat, sweat the onion in butter and salt until translucent.
  2. In a large mixing bowl, place a paper bowl in the middle of the bowl.
  3. Resting the cob on the bowl in a vertical position remove only the tops of the kernel with a knife, using long smooth downward strokes and rotating the cob as you go.
  4. After the cob has been stripped, use the dull backside of your knife to scrape any remaining pulp and milk off the cob.
  5. Add the corn and pulp mixture to the saucepan and cook over medium high until the juice from the corn has tightened (I took this to mean reduced a bit?).
  6. Add the rosemary.
  7. Sprinkle the corn with the sugar and turmeric.
  8. Stir constantly for about 2 minutes. Sprinkle the cornmeal onto the corn, using a whisk to combine well.
  9. Add the heavy cream and cook until the corn has softened, about 2 to 3 minutes.
  10. Remove the rosemary.
  11. Season with freshly ground black pepper.

Strawberry-Banana Fruit Leather Recipe

INGREDIENTS

  1. 2-3bananas, peeled
  2. 2cupsstrawberries, prepared
  3. 1tablespoonfruit fresh

DIRECTIONS

  1. Put all ingredients into blender until puree forms.
  2. Dry in dehydrator for 8 hours at 125 degrees.

Susan Strahm’s Sugar Cookies Recipe

INGREDIENTS

  1. 1 1/2cupssugar
  2. 1cupshortening
  3. 2eggs
  4. 2teaspoonsvanilla
  5. 6tablespoonsmilk
  6. 4cupsflour
  7. 1teaspoonbaking powder
  8. 1teaspoonbaking soda
  9. 1/2teaspoonsalt

DIRECTIONS

  1. Cream first 5 ingredients together.
  2. Sift the last 4 ingredients together, then mix with the rest.
  3. Chill dough.
  4. Roll out 1/2″ thick & cut.
  5. Bake at 375 for 8 - 10 minutes, just till barely brown.Don’t overcook.

Easy Mexican Ranch Dip Recipe

INGREDIENTS

  1. 16ouncessour cream
  2. 16ouncescream cheese
  3. 15ouncescorn, drained
  4. 15ouncesblack beans, drained
  5. 10ouncesRo-Tel tomatoes, drained
  6. 2 1/4ouncesHidden Valley Ranch dip, dry packet or hidden valley fiestaranch dip
  7. 1cup shreddedcheddar cheese

DIRECTIONS

  1. Mix all the ingredients together in a bowl, chill, and serve!

BLT Salad With Avocado Dressing Recipe

INGREDIENTS

  1. Dressing

  2. 1large ripeavocado, peeled, mashed
  3. 1/2cupsour cream
  4. 1/4cupmilk
  5. 1/4cupmayonnaise
  6. 1tablespoonlemon juice
  7. 1/4teaspoongarlic salt
  8. freshcracked black pepper
  9. 2dropshot pepper sauce (optional)
  10. Salad

  11. 4cups of shreddedlettuce
  12. 3mediumtomatoes, cut into wedges
  13. 1/2lbbacon, crisp cooked, crumbled
  14. 3/4cupcroutons, if desired

DIRECTIONS

  1. In Food Processor, combine all dressing ingredients; beat at low speed just until smooth.
  2. Cover and refrigerate for several hours to blend flavors.
  3. At serving time, arrange salad ingredients on 6 individual plates or toss in large salad bowl.
  4. Serve with dressing.
