Chocohotopots Recipe

INGREDIENTS

  1. 1/2cupunsalted butter
  2. 1tablespoonunsalted butter
  3. 4ouncessemisweet chocolate, with 60 percent cocoa solids
  4. 2eggs
  5. 3/4cupsuperfine sugar
  6. 3tablespoonsall-purpose flour

DIRECTIONS

  1. Place a baking sheet in the oven and preheat to 400 degrees F.
  2. ****Butter the ramekins with 1 tablespoon butter.
  3. Either in a microwave or in a bowl suspended over a pan over simmering water, melt the dark chocolate and 1 stick butter, then set aside to cool a little.
  4. In another bowl, mix the eggs with the sugar and flour with a hand whisk and beat in the cooled butter and chocolate mixture.
  5. Divide the mixture between the 4 buttered ramekins.
  6. Bake for about 20 minutes, by which time the tops will be cooked and cracked and the chocolate gooey underneath.
  7. Place each ramekin on a small plate with a teaspoon and serve.
  8. Make sure to warn people that these desserts will be HOT!
  9. ****Special equipment: 4 (2/3 to 1-cup capacity) ramekins.

Pasta With Walnut Sauce Recipe

INGREDIENTS

  1. 6ounces shelledwalnuts
  2. 1/2garlic clove, minced
  3. 1slicebread, crusts removed
  4. 2/3cupwhole milk
  5. 1ounce gratedparmesan cheese, plus more for garnish
  6. 3-4tablespoonsolive oil(preferably Ligurian)
  7. salt and pepper
  8. 2lbs any flat shortpasta
  9. 1/2cup choppedItalian parsley, for garnish

DIRECTIONS

  1. Put a large saucepan of water on to boil, and toast the walnuts in a dry frying pan until they begin to make a nutty aroma.
  2. Put the bread in a bowl and cover with the milk.
  3. Put most of the toasted walnuts (reserving about 1 ounce for garnish) into a blender along with the garlic, bread soaked in milk, and Parmesan.
  4. Blend until it turns smooth and creamy, then pour in the oil and season well with salt and pepper before blending again.
  5. Pour into a bowl, and set aside.
  6. Add pasta to boiling water with salt and cook for the required amount of time.
  7. When pasta is al dente, reserve a cup of the pasta cooking liquid and then drain the pasta, but put it in to a large bowl while it’s still dripping slightly with water. Sprinkle a little olive oil over the pasta to prevent it sticking together, and then add the walnut sauce, mixing it into the pasta (splash in a little pasta cooking liquid to make the sauce less thick if needed).
  8. Roughly chop the remaining walnuts and toss them over the top along with some more Parmesan and the chopped parsley.

Axtec Hot Chocolate Recipe

INGREDIENTS

  1. 4cupswhole milk
  2. 1vanilla pod
  3. 1cinnamon stick
  4. 1pinchnutmeg
  5. 1/4cupcocoa powder
  6. 6tablespoonssugar
  7. 1tablespooncornstarch
  8. 1/4cuptoasted sliced almonds

DIRECTIONS

  1. Heat the milk, vanilla, cinnamon & nutmeg in a saucepan over medium heat - do not allow to boil.
  2. Mix cocoa, sugar & corn starch in a small bowl with a few drops of cold milk.
  3. Stir into the hot milk and allow to thicken over low heat.
  4. Remove pod & stick, pour milk into individual cups and garnish with almonds.

Lamb Chops Teriyaki Recipe

INGREDIENTS

  1. 2shoulder lamb chops, 3/4 to 1-inch thick
  2. 1garlic clove, finely chopped
  3. 1tablespoonhoney
  4. 1/4teaspoondry mustard
  5. 1/2teaspoonground ginger
  6. pepper
  7. 2tablespoonslemon juice, can use dry sherry
  8. 1/4cupvegetable oil
  9. 1/4cupsoy sauce
  10. 1/2cuplong grain rice, cooked

DIRECTIONS

  1. Place meat in a deep glass or ceramic dish in a single layer.
  2. In a small bowl, combine garlic, honey, mustard, ginger, pepper, lemon juice, oil and soy sauce.
  3. Pour over chops and marinate in the refrigerator 8 hours or overnight, turning occasionally.
  4. Remove chops from marinade and place on a broiler rack.
  5. Pour marinade into a small saucepan to heat.
  6. Broil about 4 inches from heat for 7 minutes on each side.
  7. Stir hot marinade into the rice and serve.

Lasagna Chili Recipe

INGREDIENTS

  1. 1cup coarsely choppedzucchini
  2. 1/2cup coarsely choppedonions
  3. 1lbItalian sausage
  4. 2garlic cloves, finely chopped
  5. 2 1/2cupsspaghetti sauce(canned or homemade)
  6. 3cupsbeef broth
  7. 1cupwater
  8. 1 1/2cups uncookedpasta, nuggets preferably radatore
  9. 2tablespoons choppedfresh basil (optional)

DIRECTIONS

  1. Preheat a 4 QT pot or casserole pan heat on medium.
  2. Cook sausage with onion and garlic.
  3. Cook till done (8-10 minutes) and drain.
  4. Add spaghetti sauce, broth and water.
  5. Bring to a boil.
  6. Stir in pasta.
  7. Reduce heat, and simmer uncovered for 7 minutes.
  8. Stir zucchini into chili and cook for 4-5 minutes or until tender.
  9. Remove from heat and stir basil into soup, if desired.
