INGREDIENTS
- 1/2cupunsalted butter
- 1tablespoonunsalted butter
- 4ouncessemisweet chocolate, with 60 percent cocoa solids
- 2eggs
- 3/4cupsuperfine sugar
- 3tablespoonsall-purpose flour
DIRECTIONS
- Place a baking sheet in the oven and preheat to 400 degrees F.
- ****Butter the ramekins with 1 tablespoon butter.
- Either in a microwave or in a bowl suspended over a pan over simmering water, melt the dark chocolate and 1 stick butter, then set aside to cool a little.
- In another bowl, mix the eggs with the sugar and flour with a hand whisk and beat in the cooled butter and chocolate mixture.
- Divide the mixture between the 4 buttered ramekins.
- Bake for about 20 minutes, by which time the tops will be cooked and cracked and the chocolate gooey underneath.
- Place each ramekin on a small plate with a teaspoon and serve.
- Make sure to warn people that these desserts will be HOT!
- ****Special equipment: 4 (2/3 to 1-cup capacity) ramekins.

INGREDIENTS
- 6ounces shelledwalnuts
- 1/2garlic clove, minced
- 1slicebread, crusts removed
- 2/3cupwhole milk
- 1ounce gratedparmesan cheese, plus more for garnish
- 3-4tablespoonsolive oil(preferably Ligurian)
- salt and pepper
- 2lbs any flat shortpasta
- 1/2cup choppedItalian parsley, for garnish
DIRECTIONS
- Put a large saucepan of water on to boil, and toast the walnuts in a dry frying pan until they begin to make a nutty aroma.
- Put the bread in a bowl and cover with the milk.
- Put most of the toasted walnuts (reserving about 1 ounce for garnish) into a blender along with the garlic, bread soaked in milk, and Parmesan.
- Blend until it turns smooth and creamy, then pour in the oil and season well with salt and pepper before blending again.
- Pour into a bowl, and set aside.
- Add pasta to boiling water with salt and cook for the required amount of time.
- When pasta is al dente, reserve a cup of the pasta cooking liquid and then drain the pasta, but put it in to a large bowl while it’s still dripping slightly with water. Sprinkle a little olive oil over the pasta to prevent it sticking together, and then add the walnut sauce, mixing it into the pasta (splash in a little pasta cooking liquid to make the sauce less thick if needed).
- Roughly chop the remaining walnuts and toss them over the top along with some more Parmesan and the chopped parsley.

INGREDIENTS
- 4cupswhole milk
- 1vanilla pod
- 1cinnamon stick
- 1pinchnutmeg
- 1/4cupcocoa powder
- 6tablespoonssugar
- 1tablespooncornstarch
- 1/4cuptoasted sliced almonds
DIRECTIONS
- Heat the milk, vanilla, cinnamon & nutmeg in a saucepan over medium heat - do not allow to boil.
- Mix cocoa, sugar & corn starch in a small bowl with a few drops of cold milk.
- Stir into the hot milk and allow to thicken over low heat.
- Remove pod & stick, pour milk into individual cups and garnish with almonds.

INGREDIENTS
- 2shoulder lamb chops, 3/4 to 1-inch thick
- 1garlic clove, finely chopped
- 1tablespoonhoney
- 1/4teaspoondry mustard
- 1/2teaspoonground ginger
- pepper
- 2tablespoonslemon juice, can use dry sherry
- 1/4cupvegetable oil
- 1/4cupsoy sauce
- 1/2cuplong grain rice, cooked
DIRECTIONS
- Place meat in a deep glass or ceramic dish in a single layer.
- In a small bowl, combine garlic, honey, mustard, ginger, pepper, lemon juice, oil and soy sauce.
- Pour over chops and marinate in the refrigerator 8 hours or overnight, turning occasionally.
- Remove chops from marinade and place on a broiler rack.
- Pour marinade into a small saucepan to heat.
- Broil about 4 inches from heat for 7 minutes on each side.
- Stir hot marinade into the rice and serve.

INGREDIENTS
- 1cup coarsely choppedzucchini
- 1/2cup coarsely choppedonions
- 1lbItalian sausage
- 2garlic cloves, finely chopped
- 2 1/2cupsspaghetti sauce(canned or homemade)
- 3cupsbeef broth
- 1cupwater
- 1 1/2cups uncookedpasta, nuggets preferably radatore
- 2tablespoons choppedfresh basil (optional)
DIRECTIONS
- Preheat a 4 QT pot or casserole pan heat on medium.
- Cook sausage with onion and garlic.
- Cook till done (8-10 minutes) and drain.
- Add spaghetti sauce, broth and water.
- Bring to a boil.
- Stir in pasta.
- Reduce heat, and simmer uncovered for 7 minutes.
- Stir zucchini into chili and cook for 4-5 minutes or until tender.
- Remove from heat and stir basil into soup, if desired.
