INGREDIENTS
- 1garlic clove, minced
- 2largegreen bell peppers
- 1mediumonion
- 2tablespoonsoil
- 1mediumtomato
- salt
- pepper
- 6eggs
- 1 1/2cupscheddar cheese
- 1 1/2cupspico de gallo
- 4flour tortillas
DIRECTIONS
- Chop the green bell pepper and onion into a large dice.
- Fry in the oil with the minced garlic over med-high heat.
- Meanwhile, dice the tomato.
- When the peppers and onions are soft (about 15 min.) add the tomato.Season with salt and pepper and put the mixture aside in abowl.
- Add a little more oil to the pan if necessary and scramble your 6 eggs, cook over med-high heat stirring constantly.
- Heat up your tortillas in the microwave individually as you assemble the burritos.
- To assemble:Put 1/4 of the scrambled eggs on the tortilla, sprinkle with 1/3 cup cheddar cheese, cover with the pepper/onion mix (we liked about 3/4 cup) and roll up.
- It will be huge.This is a knife and fork burrito for sure!
- Sauce with about 1/3- 1/2 cup pico de gallo and serve with pinto beans on the side.Yummy!

INGREDIENTS
- 1 1/2cupsshortening
- 2cupssugar
- 4eggs
- 1teaspooncinnamon
- 1teaspoonallspice
- 1/2cuppecans
- 2cupsflour
- 1 1/2teaspoonsbaking soda
- 3cups gratedcarrots
DIRECTIONS
- Cream the shortening and sugar together.
- Add eggs then dry ingredients.
- Stir in pecans and carrots.
- Place in a greased 9×13 inch pan.
- Bake at 350 degrees for 1 hour.
- When cool frost with a cream cheese frosting.

INGREDIENTS
- 1cupbutter
- 1cupvegetable oil
- 1cupsugar
- 1cupconfectioners’ sugar
- 2eggs
- 4cupsflour
- 1teaspooncream of tartar
- 1teaspoonbaking soda

OPTIONAL (decorating)
- 1cupsugaror confectioners’ sugar
DIRECTIONS
- MIX TOGETHER: Butter, Vegetable Oil, 1 C Sugar, and 1 C Confectioner Sugar.
- ADD ONE EGG AT A TIME TO MIXTURE AND BEAT (Add food coloring now if you want colored cookies).
- ADD REMAINING INGREDIENTS: Flour, cream of tartar, and baking soda.
- After all ingredients are mixed together.Use Wax Paper or Plastic Wrap, roll dough into logs (about 1.5″ in diameter)- I make about 3 logs.Freeze at least 2 hours, can keep in the freezer for up to a week.
- Preheat oven to 350 degrees.
- Remove the dough from freezer, cut dough into 1/4″ to 1/2″ thick cookies, roll in sugar (confectioner or granulated, color or not).Placed 2″ apart on ungreased cookie sheet and bake for 12 minutes until cookies are cooked, but not brown.Remove cookies from cookie sheet, cool on racks.Enjoy!These cookies keep well in air tight containers and stays crispy.

- 3cupsapples, chopped
- 1cupnuts

Frosting
- 1cupbrown sugar
- 1/2cupbutter
- 1/4cupmilk
- 2teaspoonsvanilla
DIRECTIONS
- Cream the sugar, oil, lemon juice, vanilla and eggs together. Add the dry ingredients.
- Fold in the apples and nuts.
- Bake in a greased and floured 9×13 inch pan for 1 1/2 hours at 325 degrees.
- To make frosting: Pour all ingredients into a saucepan and bring to a boil. Boil for an additional 2-3 minutes.
- Pour the frosting over the hot cake.

INGREDIENTS
- 1 (1 lb)frozen white bread dough
- 1/2lbpork sausage
- 1/2cup sauteedonions
- 14slicespepperoni
- 2cups shreddedmozzarella cheese
- 1/4cup gratedparmesan cheese
- 1teaspoonoregano
- 1/2teaspoongarlic salt
- 1/4teaspoonblack pepper
- 1egg, slightly beaten
DIRECTIONS
- Heat oven to 400ְ. Coat baking sheet with nonstick cooking spray.
- Place frozen bread dough on greased baking sheet and allow to thaw covered with a cloth for 1 to 2 hours.
- In a medium skillet, cook sausage and onion over medium heat until brown and drain fat.
- Roll thawed bread dough on a lightly floured surface to make a flat rectangular crust 10 inches by 13 inches.
- Spoon sausage and onion mixture evenly over prepared dough leaving 1/2 inch to 1 inch of room along the outer edges.
- Scatter pepperoni over the sausage. Sprinkle all the seasonings over the toppings, along with both kinds of cheese.
- Wet all of the edges of the dough with water and then starting at one of the short ends, carefully begin rolling the rectangle of dough toward the other end (like a dessert cake roll) pinching the sides to seal. Seal and flatten the ends of the sandwich, folding them under and turning sandwich over so all seams are now on the bottom.
- Brush the entire sandwich with the beaten egg and bake at 350ְ for 30 minutes. Allow to cool for 10 minutes to allow cheese and ingredients to set up before cutting and serving.
