Chocolate Chip Cookies on a Stem Recipe

INGREDIENTS

  1. 1cupbutter, softened
  2. 3/4cup packedbrown sugar
  3. 3/4cupsugar
  4. 1largeegg
  5. 2teaspoonsvanilla
  6. 2cupsflour
  7. 1teaspoonbaking soda
  8. 1/2teaspoonbaking powder
  9. 2 1/3cupsquick-cooking oats
  10. 1 (12 ounce)packagechocolate chips

DIRECTIONS

  1. 24 pieces of hard wood dowel 1/4′ diameter cut to 12′.
  2. In a bowl cream together butter, sugars with a mixer.
  3. Beat in egg and add vanilla.
  4. Mix together flour, soda, baking powder and oats. Blend well with butter mix.
  5. Stir in chocolate chips.
  6. Shape into 24 walnut-sized balls.
  7. Assemble 1 at a time on a greased baking sheet.
  8. Set ball at 1 of narrow ends, insert dowel into center of ball.
  9. Then pat dough into 2 1/2 rd; keep dowel in center of rd and covered by dough.
  10. Repeat, placing rds about 2″ apart.
  11. At opposite end of cookie sheet, center dough between dowels.A pan holds 5-6 cookies.
  12. Bake at 375° for 15 minutes.
  13. Slide spatula under each cookie to release from pan.
  14. Leave in place for 5 minutes, then carefully lay cookies with dowels on cookie racks.
  15. To wrap, enclose each cookie in plastic wrap and tie with ribbon to keep airtight.

Patates Skortou (Garlic Potatoes) Recipe

INGREDIENTS

  1. 2lbsboiling potatoes, can use baking potatoes
  2. 6largegarlic cloves
  3. 1tablespoonextra virgin olive oil
  4. 2teaspoonsfresh lemon juice
  5. 1teaspoonbalsamic vinegar (optional)
  6. 1/2teaspoonfresh rosemary, chopped
  7. 1/2teaspoonfresh oregano, chopped
  8. 1/4teaspoonsalt
  9. 1/4teaspoonblack pepper, can use white pepper

DIRECTIONS

  1. Bring a large stockpot of water to a boil.
  2. Meanwhile, scrub potatoes and cut in half.
  3. Peel garlic.
  4. Place the potatoes and whole garlic in the boiling water.
  5. There should be enough water to cover them.
  6. Boil for about 30 minutes, or until potatoes are soft all the way through when tested with a knife.
  7. Using a slotted spoon, transfer the potatoes to a large mixing bowl and remove garlic.
  8. Set the potato water aside.
  9. Press or mash the garlic cloves, add to the potatoes, and combine lightly with a potato masher or large fork.
  10. Stir in remaining ingredients, adding a little hot potato water to adjust consistency, if necessary.

Tomatoes Canned Recipe

INGREDIENTS

  1. 8lbstomatoes(red ripe or green)
  2. 2lbssugar
  3. 4tablespoonssalt
  4. 1tablespooncurry
  5. 1tablespoondry mustard
  6. 2tablespoonscornstarchor flour
  7. 2lbsvidalia onions(sliced)
  8. 26ounceswhite vinegar
  9. 2ounceswhite vinegar, aside for mixing dry ingredients

DIRECTIONS

  1. Cut tomatoes & slice onions put in a very large pot.
  2. Sprinkle with salt.
  3. Let stand overnight.
  4. Drain liquid off.
  5. Cover with vinegar and bring to a boil.
  6. When tomatoes are boiling add sugar.
  7. Boil for 30 minutes.
  8. Add mixture of mustard, curry with 1 oz of vinegar.
  9. Boil for 20 minutes longer.
  10. Mix flour or cornstarch with 1 oz of vinegar.
  11. Add to boiling tomatoes boil another 10 minutes.
  12. Put in sterilized jars with clean dry sealers
  13. Note: boiling time depends on how thick you want the tomatoes for the final product.

Autumn’s Potluck Meatballs Recipe

INGREDIENTS

  1. For the Meatballs

  2. 2lbsground beef
  3. 1largeegg
  4. 1cupItalian style breadcrumbs
  5. 1/4cupdried parsley
  6. 1/4cuponions, minced
  7. 1tablespoonworcestershire sauce
  8. 1teaspoonprepared horseradish
  9. For the Sauce

  10. 1 (16 ounce)canjellied cranberry sauce
  11. 1 1/2cupsketchup
  12. 3/8cupbrown sugar
  13. 3tablespoonsvinegar
  14. 3/8teaspoonground cinnamon
  15. 1/8teaspoonground cloves
  16. 1/8teaspoonground allspice

DIRECTIONS

  1. Mix the ground beef, egg, bread crumbs, parsley, onion, worcestershire, and horseradish.I used my kitchen aid and it worked very well.
  2. Form into 1″ meatballs.
  3. Bake at 350 until done, about 20 minutes.
  4. Combine all the sauce ingredients in a small sauce pan, and heat until boiling.
  5. Put meatballs in crock pot and pour sauce over them.Keep on low.

Grilled Salmon Recipe

INGREDIENTS

  1. 1 1/2lbssalmon fillets
  2. lemon pepper
  3. garlic powder
  4. salt
  5. 1/3cupsoy sauce
  6. 1/3cupbrown sugar
  7. 1/3cupwater
  8. 1/4cupoil

DIRECTIONS

  1. season salmon with lemon pepper, garlic, and salt.
  2. In a bowl, stir together soy, brown sugar, water and oil until sugar is dissolved.
  3. Place salmon in a large ziplock bag and pour mixture on top.Seal and turn to coat.Refrigerate for at least 2 hours.
  4. Preheat grill for medium heat.
  5. Place salmon on lightly oiled grill and cook for 6-8 minutes perside or until it flakes easy with fork.
  6. note: I have found it a bit easier justto wrap it in foil and put it on the grill!
