INGREDIENTS
- 1cupbutter, softened
- 3/4cup packedbrown sugar
- 3/4cupsugar
- 1largeegg
- 2teaspoonsvanilla
- 2cupsflour
- 1teaspoonbaking soda
- 1/2teaspoonbaking powder
- 2 1/3cupsquick-cooking oats
- 1 (12 ounce)packagechocolate chips
DIRECTIONS
- 24 pieces of hard wood dowel 1/4′ diameter cut to 12′.
- In a bowl cream together butter, sugars with a mixer.
- Beat in egg and add vanilla.
- Mix together flour, soda, baking powder and oats. Blend well with butter mix.
- Stir in chocolate chips.
- Shape into 24 walnut-sized balls.
- Assemble 1 at a time on a greased baking sheet.
- Set ball at 1 of narrow ends, insert dowel into center of ball.
- Then pat dough into 2 1/2 rd; keep dowel in center of rd and covered by dough.
- Repeat, placing rds about 2″ apart.
- At opposite end of cookie sheet, center dough between dowels.A pan holds 5-6 cookies.
- Bake at 375° for 15 minutes.
- Slide spatula under each cookie to release from pan.
- Leave in place for 5 minutes, then carefully lay cookies with dowels on cookie racks.
- To wrap, enclose each cookie in plastic wrap and tie with ribbon to keep airtight.

INGREDIENTS
- 2lbsboiling potatoes, can use baking potatoes
- 6largegarlic cloves
- 1tablespoonextra virgin olive oil
- 2teaspoonsfresh lemon juice
- 1teaspoonbalsamic vinegar (optional)
- 1/2teaspoonfresh rosemary, chopped
- 1/2teaspoonfresh oregano, chopped
- 1/4teaspoonsalt
- 1/4teaspoonblack pepper, can use white pepper
DIRECTIONS
- Bring a large stockpot of water to a boil.
- Meanwhile, scrub potatoes and cut in half.
- Peel garlic.
- Place the potatoes and whole garlic in the boiling water.
- There should be enough water to cover them.
- Boil for about 30 minutes, or until potatoes are soft all the way through when tested with a knife.
- Using a slotted spoon, transfer the potatoes to a large mixing bowl and remove garlic.
- Set the potato water aside.
- Press or mash the garlic cloves, add to the potatoes, and combine lightly with a potato masher or large fork.
- Stir in remaining ingredients, adding a little hot potato water to adjust consistency, if necessary.

INGREDIENTS
- 8lbstomatoes(red ripe or green)
- 2lbssugar
- 4tablespoonssalt
- 1tablespooncurry
- 1tablespoondry mustard
- 2tablespoonscornstarchor flour
- 2lbsvidalia onions(sliced)
- 26ounceswhite vinegar
- 2ounceswhite vinegar, aside for mixing dry ingredients
DIRECTIONS
- Cut tomatoes & slice onions put in a very large pot.
- Sprinkle with salt.
- Let stand overnight.
- Drain liquid off.
- Cover with vinegar and bring to a boil.
- When tomatoes are boiling add sugar.
- Boil for 30 minutes.
- Add mixture of mustard, curry with 1 oz of vinegar.
- Boil for 20 minutes longer.
- Mix flour or cornstarch with 1 oz of vinegar.
- Add to boiling tomatoes boil another 10 minutes.
- Put in sterilized jars with clean dry sealers
- Note: boiling time depends on how thick you want the tomatoes for the final product.

INGREDIENTS

For the Meatballs
- 2lbsground beef
- 1largeegg
- 1cupItalian style breadcrumbs
- 1/4cupdried parsley
- 1/4cuponions, minced
- 1tablespoonworcestershire sauce
- 1teaspoonprepared horseradish

For the Sauce
- 1 (16 ounce)canjellied cranberry sauce
- 1 1/2cupsketchup
- 3/8cupbrown sugar
- 3tablespoonsvinegar
- 3/8teaspoonground cinnamon
- 1/8teaspoonground cloves
- 1/8teaspoonground allspice
DIRECTIONS
- Mix the ground beef, egg, bread crumbs, parsley, onion, worcestershire, and horseradish.I used my kitchen aid and it worked very well.
- Form into 1″ meatballs.
- Bake at 350 until done, about 20 minutes.
- Combine all the sauce ingredients in a small sauce pan, and heat until boiling.
- Put meatballs in crock pot and pour sauce over them.Keep on low.

INGREDIENTS
- 1 1/2lbssalmon fillets
- lemon pepper
- garlic powder
- salt
- 1/3cupsoy sauce
- 1/3cupbrown sugar
- 1/3cupwater
- 1/4cupoil
DIRECTIONS
- season salmon with lemon pepper, garlic, and salt.
- In a bowl, stir together soy, brown sugar, water and oil until sugar is dissolved.
- Place salmon in a large ziplock bag and pour mixture on top.Seal and turn to coat.Refrigerate for at least 2 hours.
- Preheat grill for medium heat.
- Place salmon on lightly oiled grill and cook for 6-8 minutes perside or until it flakes easy with fork.
- note: I have found it a bit easier justto wrap it in foil and put it on the grill!
