INGREDIENTS
- 1 1/2lbslean ground beef
- 1/2lbground lean pork
- 2eggs, lightly beaten
- 1cupsoft breadcrumbs
- 1 1/2teaspoonssalt
- 1/4teaspoonpepper
- 1/2cupdark raisins
- 1/2cupdried apricots, chopped
- 1/4cupparsley, chopped
- 1/2cuponions, chopped
- 1/2teaspoonsage
- 1/4teaspoonthyme
- 1/2cupbeef broth
DIRECTIONS
- Preheat the oven to 350 degrees F.
- Combine beef, pork, eggs, bread crumbs, salt & pepper & mixe well.
- On a large piece of heavy duty foil, spread the meat mixture into a rectangle about 1/2 inch thick.
- Thoroughly mix the remaining ingredients & spread this fruit mixture over the meat mixture.
- Roll up the meat & filling like a jellyroll, then bring the foil up & over the loaf, sealing it well on the top & sides.
- Bake for 30 minutes on a baking sheet, then open the foil to brown, baking the loaf another 30 minutes.

INGREDIENTS
- 1lbground beef
- 1 (1 1/4 ounce)envelopetaco seasoning
- 1 (10 1/2 ounce)canmushroom soup
- 1 (8 ounce)canbeef broth
- 1 (14 ounce)canrotel
- 6slicescheddar cheese
- 1 (8 ounce)bagtortilla chips
DIRECTIONS
- Brown ground beef.
- Add taco seasoning, mushroom soup, beef broth, and Rotel tomatoes.
- Bring to a simmer. Simmer for about 5-10 minutes.
- Pour chips into bottom of casserole dish (leave whole).
- Pour beef mixture over chips.
- Place sliced cheese on top.
- Bake at 375° for about 10 minutes or until cheese looks melted.

- 1cupvanilla yogurt
- 2/3cupwhole berry cranberry sauce
- 1/2teaspoonlemon zest
- 1/4teaspoonlemon juice
DIRECTIONS
- Mix all the ingredients & chill.
- Serve with apple wedges, banana slices & other fruit.

- 3cupsorange juice
- 1 1/2cupslemon juice
- 1 1/2cupsgrapefruit juice
- 6cupswater
- 1-8tablespoonhoney
DIRECTIONS
- Combine all the ingredients & blend thoroughly.
- Chill & serve.

INGREDIENTS
- 2 (12 ounce)cansapricot nectar, chilled
- 1tablespoonlemon juice
- 3tablespoonslime juice
- 1/2cuporange juice
- 1/8-1/4cupsugar (optional)
- mint sprigs, if you want to get fancy (optional)
DIRECTIONS
- In a 2 quart pitcher mix the nectar & the juices, blending well. If sugar is to be added, add it now, then stir, mixing well.
- Chill well before pouring into 4 glasses.
