Pepper Crab Cream Soup Recipe

INGREDIENTS

  1. 2lbslump crabmeat, cleaned
  2. 1/2gallonheavy cream
  3. 2cups dicedgreen bell peppers
  4. 2cups dicedred bell peppers
  5. 2cups dicedonions
  6. 1/4cuppaprika
  7. 2tablespoonscayenne pepper
  8. 1tablespoonwhite pepper
  9. 4ouncestomato sauce
  10. 8ouncesbutter
  11. 1/4cupflour

DIRECTIONS

  1. saute the onions and bell peppers in 4 oz. of butter until soft and transparent.
  2. in a large stock pan add heavy cream, crab meat, onions and peppers, tomato sauce, cayenne, paprika, and white pepper.
  3. Heat the ingrediants til just boiling taking care not to scald or burn.
  4. in another pan melt butter, add flour making a roux.
  5. Slowly add to cream mixture until soup is thick, smooth and creamy.

Dutch Brown Bean Stew (Vijfschaft) Recipe

INGREDIENTS

  1. 1cupdried red kidney beans, picked over and rinsed(1/2 pound)
  2. 2tablespoons finely choppedham fat
  3. 1/2lbsmoked bacon, sliced
  4. 1lb freshsausageor smokedPolish kielbasaor any german style smoked hunter’ssausage, cut into 1/2 inch pieces
  5. 1lbcarrots, cut into 1/4 inch thick rounds
  6. 4medium sizeonions, sliced 1/4 inch thick(about1 3/4 pounds total)
  7. 2granny smith apples, peeled, cored, and cut into wedges
  8. 2lbsboiling potatoes, peeled and sliced 1/4 inch thick
  9. 1teaspoonsalt
  10. 1tablespooncornstarch, dissolved in
  11. 2tablespoonswater
  12. 1/4cupunsalted butter

DIRECTIONS

  1. Put the beans in a large casserole and cover with lightly salted water.Bring to a boil, and reduce the heat to low.Cover and cook until almost tender, 45 to 60 minutes.Drain, saving 3 cups of the cooking liquid.Return the beans to the casserole with the reserved liquid.
  2. While the beans are cooking, in a large skillet, cook the ham fat over medium heat until it is sizzling vigorously.Brown the bacon and sausage together until the sausage is no longer pink, if using fresh sausage, or until the bacon edges are crisp, about 10 minutes.
  3. Add the carrots, onions, and apples to the casserole with the beans and simmer over low heat for 15 minutes, covered, stirring occasionally.Add the potatoes and salt and continue to cook until the potatoes are tender, about 1 1/4 hours.Stir in the dissolved cornstarch to thicken the sauce, then stir in the butter.
  4. Transfer the sausage and bacon and any accumulated fat to the casserole and push down into the stew.Heat for 5 minutes over low heat, covered.Then serve from the casserole.Makes 6 servings.
  5. Real Stew.

Sveedish Apple Pie Recipe

INGREDIENTS

  1. Pie

  2. 2 1/2cupsapples, peeled, cored and thinly sliced
  3. 1teaspoonground cinnamon
  4. 3/4teaspoonground cardamom(my addition)
  5. 1teaspoonwhite sugar
  6. Topping

  7. 1cupwhite sugar
  8. 3/4cupbutter, melted
  9. 1/2cuppecansor walnuts, coarsely chopped
  10. 1cupunbleached flour
  11. 1egg, lightly beaten
  12. 1pinchsalt

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 9 inch pie pan with butter.
  3. Pie: Place the sliced apples in the pie pan. Sprinkle with the cinnamon, cardamom and 1 teaspoon sugar. Toss to coat.
  4. Topping: In medium bowl, mix together 1 cup sugar with the melted butter. Stir in the nuts, flour, egg and salt. Mix well.
  5. Spoon then spread mixture over the apples.
  6. Bake for about 1 hour or until golden brown.

Herb-Sour Cream Stuffed Eggs Recipe

INGREDIENTS

  1. 8largehard-boiled eggs
  2. 1/2cupsour cream
  3. 3tablespoonsfresh parsley, finely chopped
  4. 2tablespoonsfresh dill, chopped
  5. 2teaspoonswhite wine vinegar
  6. 1/4teaspoonsalt
  7. 1/8teaspoonpepper
  8. 3slicesbacon, cooked and crumbled
  9. Garnish

  10. fresh parsley sprigs

DIRECTIONS

  1. Slice eggs in half lengthwise, and carefully, remove yolks.
  2. Mash yolks; add sour cream and next 5 ingredients, stirring until smooth.Spoon or pipe mixture into egg whites.
  3. Sprinkle with bacon.Garnish if desired.

Mjuktunnbrod (Swedish Flat Bread) Recipe

INGREDIENTS

  1. 2 1/2cupssour cream
  2. 2tablespoonssalt
  3. 1/2cupcorn syrup(light)
  4. 2tablespoonsbaking soda
  5. 6cupsflour

DIRECTIONS

  1. Mix sour cream and corn syrup together.
  2. Sift together salt, baking soda and flour.
  3. Mix all ingredients together.
  4. Seperate into 20 balls.Roll each one out flat.
  5. Fry in a flat, dry skillet.
  6. Keep oven on warm and as each one is finished place on a oven safe plate inside.Serve quickly, spread butter on the bread and put in warm ground sausage and your favorite cheese.
