Funky Pasta - Quick, Easy and Tasty Recipe

INGREDIENTS

  1. 6ounceslinguine
  2. 2-3tablespoonsolive spread, Olivada Taste of Tuscany(Lindsay brand)or tapenade(other green olive type)
  3. 2tablespoonsbutteror margarine
  4. 1/2lemon, juice of
  5. 1 (14 1/2 ounce)candiced fire roasted tomatoes, Muir Glen brand preferred
  6. 1/4cupwhite wine (optional)
  7. 1/2cupmarinated artichoke hearts
  8. 1/4cupasiago 3-cheese blend(romano,asagio,parm)
  9. black pepper, to taste
  10. 2tablespoonsgarlic powder

DIRECTIONS

  1. Boil pasta in water with 2 tbsp garlic powder.
  2. In a large pan, combine all ingredients except cheese over medium-high heat and saute for 5 minutes or until completely warmed, stirring constantly.
  3. Add cheese and stir for another 2 minutes.
  4. Serve immediately with main dish and salad.(Marinated pork loin worked great!).
  5. Enjoy!;).

Cranberry Pecan Salad With Feta Cheese Recipe

INGREDIENTS

  1. 1-2cupsalad greens
  2. 2tablespoons crumbledfeta cheese
  3. 2tablespoonsdried cranberries
  4. 2tablespoons choppedpecans
  5. oilvinaigretteor raspberry vinaigrette dressing(I use My Favorite Oil and Vinegar Dressing)

DIRECTIONS

  1. Place salad greens in a bowl.
  2. Top with cheese, cranberries and pecans.
  3. Use as much dressing as you prefer, but I like to go light on the dressing.

Strawberry Mousse–Lightened Up Recipe

INGREDIENTS

  1. 1 (2 5/8 ounce)packagewhipped dessert topping mix(Dream Whip)
  2. 1/2cupnonfat milk
  3. 1cupfrozen whole strawberries, thawed
  4. 2tablespoonsicing sugar
  5. 1teaspoonlemon juice
  6. low sugar strawberry spread (optional)

DIRECTIONS

  1. At medium high speed, beat contents ofboth envelopes from packing of whipped topping mix with milk until firm peaks are formed, about three minutes.
  2. In another bowl, with fork mash strawberries with sugar and lemon juice until a chunky sauce is formed.
  3. Add mixture to whipped topping and beat until well combined, one minute.
  4. If desired, layer with strawberry preserves in 1 cup glasses.
  5. Chill.
  6. Garnish with additional whipped topping and strawberries if desired.
  7. Enjoy.

Chocolate Coconut Snowballs Recipe

INGREDIENTS

  1. 1 (14 ounce)cancondensed milk
  2. 4semi-sweet chocolate baking squares
  3. 2cupsgraham cracker crumbs
  4. 1/4cupflaked coconut, fine

DIRECTIONS

  1. Melt chocolate squares in a double boiler.
  2. When melted, remove from heat and add condensed milk and graham cracker crumbs.
  3. Form into 1 inch balls and roll in fine coconut.Enjoy!

Vicky’s Chilled Broccoli Salad Recipe

INGREDIENTS

  1. 3headsbroccoli, chopped(more if you like)
  2. 1red onion, chopped
  3. 1cup shreddedlow-fat cheese
  4. 1cupraisins
  5. 1cupcashews
  6. saltor pepper
  7. 3/4cupmayonnaise
  8. 1/4cuprice vinegar
  9. 1/4cupsugar

DIRECTIONS

  1. Combine broccoli, onion, cheese, raisins, and cashews in large bowl.
  2. In separate bowl, mix together mayo, vinegar, and sugar. Pour over salad.Mix together and chill for at least 1 hour.
  3. Other suggestions:Use Splenda instead of sugar.Trail mix in place of raisins and cashews.
