INGREDIENTS
- 6ounceslinguine
- 2-3tablespoonsolive spread, Olivada Taste of Tuscany(Lindsay brand)or tapenade(other green olive type)
- 2tablespoonsbutteror margarine
- 1/2lemon, juice of
- 1 (14 1/2 ounce)candiced fire roasted tomatoes, Muir Glen brand preferred
- 1/4cupwhite wine (optional)
- 1/2cupmarinated artichoke hearts
- 1/4cupasiago 3-cheese blend(romano,asagio,parm)
- black pepper, to taste
- 2tablespoonsgarlic powder
DIRECTIONS
- Boil pasta in water with 2 tbsp garlic powder.
- In a large pan, combine all ingredients except cheese over medium-high heat and saute for 5 minutes or until completely warmed, stirring constantly.
- Add cheese and stir for another 2 minutes.
- Serve immediately with main dish and salad.(Marinated pork loin worked great!).
- Enjoy!;).

INGREDIENTS
- 1-2cupsalad greens
- 2tablespoons crumbledfeta cheese
- 2tablespoonsdried cranberries
- 2tablespoons choppedpecans
- oilvinaigretteor raspberry vinaigrette dressing(I use My Favorite Oil and Vinegar Dressing)
DIRECTIONS
- Place salad greens in a bowl.
- Top with cheese, cranberries and pecans.
- Use as much dressing as you prefer, but I like to go light on the dressing.

INGREDIENTS
- 1 (2 5/8 ounce)packagewhipped dessert topping mix(Dream Whip)
- 1/2cupnonfat milk
- 1cupfrozen whole strawberries, thawed
- 2tablespoonsicing sugar
- 1teaspoonlemon juice
- low sugar strawberry spread (optional)
DIRECTIONS
- At medium high speed, beat contents ofboth envelopes from packing of whipped topping mix with milk until firm peaks are formed, about three minutes.
- In another bowl, with fork mash strawberries with sugar and lemon juice until a chunky sauce is formed.
- Add mixture to whipped topping and beat until well combined, one minute.
- If desired, layer with strawberry preserves in 1 cup glasses.
- Chill.
- Garnish with additional whipped topping and strawberries if desired.
- Enjoy.

INGREDIENTS
- 1 (14 ounce)cancondensed milk
- 4semi-sweet chocolate baking squares
- 2cupsgraham cracker crumbs
- 1/4cupflaked coconut, fine
DIRECTIONS
- Melt chocolate squares in a double boiler.
- When melted, remove from heat and add condensed milk and graham cracker crumbs.
- Form into 1 inch balls and roll in fine coconut.Enjoy!

INGREDIENTS
- 3headsbroccoli, chopped(more if you like)
- 1red onion, chopped
- 1cup shreddedlow-fat cheese
- 1cupraisins
- 1cupcashews
- saltor pepper
- 3/4cupmayonnaise
- 1/4cuprice vinegar
- 1/4cupsugar
DIRECTIONS
- Combine broccoli, onion, cheese, raisins, and cashews in large bowl.
- In separate bowl, mix together mayo, vinegar, and sugar. Pour over salad.Mix together and chill for at least 1 hour.
- Other suggestions:Use Splenda instead of sugar.Trail mix in place of raisins and cashews.
