INGREDIENTS
- 1 (3 lb)pork sirloin roast
- 2teaspoonssouthwest seasoning
- 3cups preparedchunky salsa, divided(use mild, medium or hot)
- 8-10flour tortillasor corn tortillas
- 1cup gratedcheddar cheeseor colby-monterey jack cheese
- 1tablespoonfresh cilantro leaves(snipped or chopped)
DIRECTIONS
- Rub Southwest seasoning on both sides of pork and place in slow cooker.
- Pour 2 cups salsa over pork, cover and cook on low for 6 to 8 hours.
- Using two forks, shred pork.
- Meanwhile, wrap tortillas in aluminum foil andheat in a 350-degree oven for 20 minutes or until heated through.
- Spoon pork mixture onto center of each tortilla and top with additional salsa, cheese and cilantro.
- Broil 1 minute or until cheese is bubbly.
- Roll up like a burrito to eat.
- Serve with black beans and Spanish rice.

INGREDIENTS
- 1(2.5-3 lb)pork back ribs, cut into 3 pieces
- 1 (8 ounce)jarchipotle hot sauce
- 1teaspoongarlic powder
- 1teaspoonground black pepper
- 3/4teaspoonsalt
DIRECTIONS
- Heat oven to 300 degrees.
- Place pork ribs in baking dish.
- Stir together 1/2 cup sauce, garlic powder, pepper and salt.
- Pour chipotle sauce mixture over ribs in baking dish and toss until coated.
- Place ribs, in a single layer, on a large piece of heavy-duty foil.
- Bring up long sides of foil and seal close with double fold.
- Seal close remaining short sides of foil with double fold to form a foil packet.
- Place foil packet, seam side up, in jelly-roll pan or on baking sheet in oven.
- Bake for 2 to 2 1/2 hours or until meat is very tender.
- Remove from oven.
- Heat oven broiler.
- If juices have leaked onto jelly-roll pan or baking sheet, wipe dry with paper towels.
- Open foil packet.
- Generously brush ribs with some remaining chipotle sauce.
- Broil 4 inches from heat for 3 minutes.
- Turn ribs over and generously brush with additional chipotle sauce.
- Continue broiling for 3 minutes more.

INGREDIENTS
- 3ounces puffedbrown rice, approximately 6 cups
- 3tablespoonsflax seed oil, plus extra for the pan
- 1tablespoonorange blossom honey
- 7ouncesmini marshmallows, approximately 4 cups
- 3ounces toastedslivered almonds, approximately 3/4 cup
- 1 1/2ounces coarsely choppeddried cranberries, approximately 1/3 cup
- 1 1/2ounces coarsely choppeddried cherries, approximately 1/3 cup
- 1ouncedried blueberries, approximately 1/3 cup
DIRECTIONS
- Lightly coat the inside of a 13 by 9 by 2-inch metal pan with oil and set aside.
- Preheat the oven to 425 degrees.
- Spread the brown puffed rice evenly on a sheet pan.
- Toast in the oven for 4 minutes, stirring occasionally.
- While the rice is toasting, prepare the marshmallow mixture.
- Place the oil, honey, and marshmallows in a large mixing bowl set over a pot of gently simmering water.
- Stir until the marshmallows are melted, approximately 4 to 5 minutes.
- Once the marshmallows are melted, quickly add the toasted brown rice, almonds, and fruit and stir to combine.
- Coat your hands or a spatula with oil and spread the mixture evenly into the pan.
- Once the mixture has cooled completely, cut into squares and store in an airtight container for 1 to 2 days.

INGREDIENTS
- cooking spray
- 1 (10 ounce)packagefrozen chopped broccoli, thawed and undrained
- 1 1/2cupsfrozen hash brown potatoes, thawed and undrained
- 1 (2 ounce)jarsliced mushrooms, undrained
- 1 (2 ounce)jarchopped pimiento, undrained
- 6eggs
- 1/2cup sourhalf-and-halfor reduced-fat sour cream
- 2teaspoonsinstant minced onion
- 3/4teaspoongarlic salt
- 3/4teaspoondried dill weed
DIRECTIONS
- Evenly coat 11 x 7 x 1 1/2-inch baking dish with spray.
- In prepared dish, stir together broccoli, potatoes, mushrooms and pimiento.
- In medium bowl, beat together eggs, sour half and half and seasonings.
- Pour over vegetables.
- Bake, uncovered, in preheated 350 degree oven until knife inserted near center comes out clean, about 25 to 30 minutes.

INGREDIENTS
- 1 1/2cupssugar
- 1/2cupshortening
- 1teaspoonvanilla
- 1teaspooncoconut flavoring
- 2 1/4cupscake flour, sifted
- 3 1/2teaspoonsbaking powder
- 1teaspoonsalt
- 1cupmilk
- 4egg whites

Frosting
- 1/2cupshortening
- 1/4cupbutter
- 1lbpowdered sugar, sifted
- 1/3cupwater
- 1/4cupnon-fat powdered milk
- 1teaspooncoconut flavoring
- 1/4teaspoonsalt
DIRECTIONS
- Cream sugar and shortening.
- Add vanilla and coconut flavoring.
- Sift dry ingredients together.
- Add alternately to creamed mixture with milk.
- Add egg whites.
- Beat 2-3 minutes on high speed of electric mixer.
- Pour into 2 greased and floured 8-in. pans.
- Bake in 350 degree oven 30-35 minutes.
- Frost when cool.
- Frosting:.
- Cream shortenings and powdered sugar.
- Reconstitute milk in water and add to creamed mixture with coconut flavoring and salt.
- Beat at least 5 minutes.
- Spread on cake.
