5-Minute Crock-Pot Burritos Recipe

INGREDIENTS

  1. 1 (3 lb)pork sirloin roast
  2. 2teaspoonssouthwest seasoning
  3. 3cups preparedchunky salsa, divided(use mild, medium or hot)
  4. 8-10flour tortillasor corn tortillas
  5. 1cup gratedcheddar cheeseor colby-monterey jack cheese
  6. 1tablespoonfresh cilantro leaves(snipped or chopped)

DIRECTIONS

  1. Rub Southwest seasoning on both sides of pork and place in slow cooker.
  2. Pour 2 cups salsa over pork, cover and cook on low for 6 to 8 hours.
  3. Using two forks, shred pork.
  4. Meanwhile, wrap tortillas in aluminum foil andheat in a 350-degree oven for 20 minutes or until heated through.
  5. Spoon pork mixture onto center of each tortilla and top with additional salsa, cheese and cilantro.
  6. Broil 1 minute or until cheese is bubbly.
  7. Roll up like a burrito to eat.
  8. Serve with black beans and Spanish rice.

1-2-3 Chipotle Pork Ribs Recipe

INGREDIENTS

  1. 1(2.5-3 lb)pork back ribs, cut into 3 pieces
  2. 1 (8 ounce)jarchipotle hot sauce
  3. 1teaspoongarlic powder
  4. 1teaspoonground black pepper
  5. 3/4teaspoonsalt

DIRECTIONS

  1. Heat oven to 300 degrees.
  2. Place pork ribs in baking dish.
  3. Stir together 1/2 cup sauce, garlic powder, pepper and salt.
  4. Pour chipotle sauce mixture over ribs in baking dish and toss until coated.
  5. Place ribs, in a single layer, on a large piece of heavy-duty foil.
  6. Bring up long sides of foil and seal close with double fold.
  7. Seal close remaining short sides of foil with double fold to form a foil packet.
  8. Place foil packet, seam side up, in jelly-roll pan or on baking sheet in oven.
  9. Bake for 2 to 2 1/2 hours or until meat is very tender.
  10. Remove from oven.
  11. Heat oven broiler.
  12. If juices have leaked onto jelly-roll pan or baking sheet, wipe dry with paper towels.
  13. Open foil packet.
  14. Generously brush ribs with some remaining chipotle sauce.
  15. Broil 4 inches from heat for 3 minutes.
  16. Turn ribs over and generously brush with additional chipotle sauce.
  17. Continue broiling for 3 minutes more.

Brown Rice Crispy Bar Recipe

INGREDIENTS

  1. 3ounces puffedbrown rice, approximately 6 cups
  2. 3tablespoonsflax seed oil, plus extra for the pan
  3. 1tablespoonorange blossom honey
  4. 7ouncesmini marshmallows, approximately 4 cups
  5. 3ounces toastedslivered almonds, approximately 3/4 cup
  6. 1 1/2ounces coarsely choppeddried cranberries, approximately 1/3 cup
  7. 1 1/2ounces coarsely choppeddried cherries, approximately 1/3 cup
  8. 1ouncedried blueberries, approximately 1/3 cup

DIRECTIONS

  1. Lightly coat the inside of a 13 by 9 by 2-inch metal pan with oil and set aside.
  2. Preheat the oven to 425 degrees.
  3. Spread the brown puffed rice evenly on a sheet pan.
  4. Toast in the oven for 4 minutes, stirring occasionally.
  5. While the rice is toasting, prepare the marshmallow mixture.
  6. Place the oil, honey, and marshmallows in a large mixing bowl set over a pot of gently simmering water.
  7. Stir until the marshmallows are melted, approximately 4 to 5 minutes.
  8. Once the marshmallows are melted, quickly add the toasted brown rice, almonds, and fruit and stir to combine.
  9. Coat your hands or a spatula with oil and spread the mixture evenly into the pan.
  10. Once the mixture has cooled completely, cut into squares and store in an airtight container for 1 to 2 days.

Kris Kringle’s Kasserole Recipe

INGREDIENTS

  1. cooking spray
  2. 1 (10 ounce)packagefrozen chopped broccoli, thawed and undrained
  3. 1 1/2cupsfrozen hash brown potatoes, thawed and undrained
  4. 1 (2 ounce)jarsliced mushrooms, undrained
  5. 1 (2 ounce)jarchopped pimiento, undrained
  6. 6eggs
  7. 1/2cup sourhalf-and-halfor reduced-fat sour cream
  8. 2teaspoonsinstant minced onion
  9. 3/4teaspoongarlic salt
  10. 3/4teaspoondried dill weed

DIRECTIONS

  1. Evenly coat 11 x 7 x 1 1/2-inch baking dish with spray.
  2. In prepared dish, stir together broccoli, potatoes, mushrooms and pimiento.
  3. In medium bowl, beat together eggs, sour half and half and seasonings.
  4. Pour over vegetables.
  5. Bake, uncovered, in preheated 350 degree oven until knife inserted near center comes out clean, about 25 to 30 minutes.

White Cake With Frosting Recipe

INGREDIENTS

  1. 1 1/2cupssugar
  2. 1/2cupshortening
  3. 1teaspoonvanilla
  4. 1teaspooncoconut flavoring
  5. 2 1/4cupscake flour, sifted
  6. 3 1/2teaspoonsbaking powder
  7. 1teaspoonsalt
  8. 1cupmilk
  9. 4egg whites
  10. Frosting

  11. 1/2cupshortening
  12. 1/4cupbutter
  13. 1lbpowdered sugar, sifted
  14. 1/3cupwater
  15. 1/4cupnon-fat powdered milk
  16. 1teaspooncoconut flavoring
  17. 1/4teaspoonsalt

DIRECTIONS

  1. Cream sugar and shortening.
  2. Add vanilla and coconut flavoring.
  3. Sift dry ingredients together.
  4. Add alternately to creamed mixture with milk.
  5. Add egg whites.
  6. Beat 2-3 minutes on high speed of electric mixer.
  7. Pour into 2 greased and floured 8-in. pans.
  8. Bake in 350 degree oven 30-35 minutes.
  9. Frost when cool.
  10. Frosting:.
  11. Cream shortenings and powdered sugar.
  12. Reconstitute milk in water and add to creamed mixture with coconut flavoring and salt.
  13. Beat at least 5 minutes.
  14. Spread on cake.
