INGREDIENTS
- 36wonton wrappers
- 1smallonion, finely chopped
- 1cupegg substitute
- 1 1/2cupsfat-free evaporated milk
- 1/2cup shreddedlow-fat cheddar cheese
- 4slices crispcooked turkey bacon
DIRECTIONS
- Preheat oven to 350. Coat 36 miniature muffin cups with cooking spray. Gently press 1 wonton wrapper into each muffin cup allowing ends to extend above cups. Spray edges or wrappers with cooking spray; set aside.
- In a small skillet, stir-fry onion over medium heat until tender. (3 minutes) Remove from heat and set aside.
- In a mixing bowl, whisk together egg substitute, milk and cheese. Stir in bacon and onion until well combined. Fill each wonton wrapper with about 1 tablespoon of filling mixture.
- Bake until quiche mixture is set and edges of wrappers are lightly browned, about 20 minutes.
- Serving size-3 quiches.
- LAWL count - 1/2 protein, 1 starch.

INGREDIENTS
- 1 1/2lbsround roast(or pork, or chicken)
- 1/4cupsoy sauce
- 1/4cuptoasted sesame seeds
- 1/4cupsesame oil(or veggie oil, if you must)
- 1/2teaspoonground ginger
- 1/2bunchgreen onions, including tops, chopped
- garlic salt, to taste
- pepper, to taste
DIRECTIONS
- Slice beef thinly, if using beef. (If using pork or chicken, cubes will work.).
- Mix all other ingredients together in a large baggie, or sealable container.
- Marinate meat for 3-48 hours (the longer, the better).If you can’t marinate it too long, pierce the meat, to help the marinade permeate the meat better.
- Skewer the meat, and grill to desired doneness.I’ve also cooked it in a “grill basket,” but it has better flavor when the meat can get kind of crispy on the edges, and the skewers allow for more surface area to become crispy.

INGREDIENTS
- 1lbchicken breast fillets
- 2tablespoonsreduced-fat peanut butter
- 1teaspoonlow sodium soy sauce
- 1tablespoonwater
- 1teaspoonsesame seeds
DIRECTIONS
- Preheat oven to 350°FCoat a baking pan with olive oil cooking spray.
- Season chicken lightly with salt and pepper and place in baking dish; set aside.
- Combine peanut butter, soy sauce and water (if you like thinner sauce add 1-2 tbsp more water) and stir until smooth and well mixed (or microwave on high 30 seconds). Spoon mixture over the chicken, then sprinkle with sesame seeds.
- Bake for 20-30 minutes or until the chicken is no longer pink inside.

INGREDIENTS
- 1 1/2cupsflour(all-purpose or white spelt)
- 1/2cupcocoa powder
- 2/3cupwhite sugar(you can use up to a cup if you choose)
- 1 1/2teaspoonsbaking soda
- 1teaspoonbaking powder(level)
- 1/2teaspoonsalt
- 1 1/2cupssoy milk
- 1/3cupextra-virgin olive oil
- 1cupsemi-sweet chocolate chips(or more if you like)
DIRECTIONS
- Preheat the oven to 350 degrees Farenheit.
- Sift together the flour, cocoa powder, sugar, salt, baking soda and baking powder.
- Add the soy milk, oil and chocolate chips and mix gently until just smooth.(Or at least as smooth as something can get with a cup of chocolate chips in.)
- Pour into a lightly oiled and floured 8×8 square baking pan, and bake for approximately 35 minutes.The toothpick test WILL NOT WORK.There is usually too much chocolate in this cake for a toothpick to come out clean.However, the edges of the cake will begin to pull away from the sides of the pan when it is done, and that is the most reliable way to tell.
- Cut into 16 pieces and serve hot with ice cream, whipped cream, or whatever you like.

INGREDIENTS
- 1cupstrawberries, sliced(or other berries or peaches)
- 3/4cupheavy whipping cream
- 3/4cupsweetened condensed milk
- 2tablespoonssugar
- 2tablespoonslemon juice
- 1 (9 inch)graham cracker pie crusts(or 9-in shortbread crust)
DIRECTIONS
- Using a handheld mixer, blend whipping cream in a medium bowl while adding the sugar gradually, until stiff peaks form when the mixer is pulled away.
- In a small bowl, stir together lemon juice and sweetened condensed milk.
- Add this to the whipping cream and combine completely.
- Gently fold the fruit into the mixture.
- Place filling into the pie crust and refrigerate about 2 hours, until set up.
