Christmas Cheer Recipe

INGREDIENTS

  1. per drink

  2. 1 1/2fluid ouncesgreen apple vodka
  3. 1/2fluid ouncetriple sec
  4. 1teaspoongrenadine
  5. 3fluid ouncescranberry juice
  6. per pitcher

  7. 12fluid ouncesgreen apple vodka
  8. 4fluid ouncestriple sec
  9. 2tablespoonsgrenadine, plus
  10. 2teaspoonsgrenadine
  11. 24fluid ouncescranberry juice

DIRECTIONS

  1. Drink makes one and the pitcher makes 8 (unless the drinks are large, then maybe 5-6).
  2. Mix and serve over ice.

Christmas Walnut Raisin Pinwheels Recipe

INGREDIENTS

  1. 1sheetfrozen puff pastry(1/2 of a 17oz package)
  2. 1/3cupgranulated sugar
  3. 1tablespooncinnamon
  4. 1/4cupbutter(no sub)
  5. 1/2cupraisins
  6. 1/2cup choppedwalnuts
  7. 1egg yolk, beaten

DIRECTIONS

  1. Thaw dough according to package directions.
  2. Preheat oven to 350 degrees.
  3. On a lightly floured surface, use a floured rolling pin to roll pastry out to an 8×12 inch rectangle.
  4. In a small bowl combine sugar and cinnamon; set aside.
  5. In a small saucepan melt butter; add raisins and walnuts, stirring until well coated.
  6. Spread raisin mixture evenly over pastry.
  7. Sprinkle cinnamon-sugar mixture evenly over raisin mixture.
  8. Beginning at one long edge, roll up pastry.
  9. Brush egg yolk on long edge to seal.
  10. Bake on a greased baking sheet or parchment paper for 20 to 25 minutes or until golden brown.
  11. Cool completely.
  12. Cut into 1 inch thick slices.

Christmas Apricot Balls Recipe

INGREDIENTS

  1. 250gdried apricots
  2. 400gcondensed milk(or less)
  3. 1/2cupbrown sugar
  4. 1/2cupcoconut
  5. 1-2tablespoonsherry wine
  6. 1 gratedorange, rind of
  7. extracoconut

DIRECTIONS

  1. mince apricots and place in bowl.
  2. add other ingredients and mix well.
  3. form into balls and roll into coconut (if needing a thicker consistency to form balls just add extra coconut).
  4. store in fridge.

Christmas Jam Recipe

INGREDIENTS

  1. 3cupscranberries
  2. 1orange, peeled and seeded
  3. 2teaspoonsorange zest(from above orange)
  4. 1 (10 ounce)packagefrozen sliced strawberries, slightly thawed
  5. 1/4teaspoonground cloves
  6. 1/4teaspoonground cinnamon
  7. 4cupssugar
  8. 1/2cupwater
  9. 1 (3 ounce)packetliquid fruit pectin

DIRECTIONS

  1. Combine cranberries and sections of seeded orange in a food processor.
  2. Pulse until coarsely chopped.
  3. Add strawberries, zest, cloves and cinnamon.
  4. Continue processing until finely chopped, but not pureed.
  5. Stir together fruit mixture, sugar and water in a very large saucepan or dutch oven until well blended.
  6. Cook for 2 minutes over low heat, stirring constantly.
  7. Increase heat to high and bring mixture to a full, rolling boil.
  8. Stir in liquid pectin.
  9. Stirring constantly, bring to a rolling boil again and boil for one minute.
  10. Remove from heat and skim off foam.
  11. Immediately pour into 6 hot, sterilized half-pint jars.
  12. Carefully wipe clean rims of jars with a damp cloth.
  13. Place lids on jars and screw on bands just until snug.
  14. Process in boiling water bath for 10 minutes.
  15. Remove from water bath and cool away from drafts until jars seal.

Christmas Cranberry Fudge Recipe

INGREDIENTS

  1. 1 (12 ounce)packagewhite chocolate chips
  2. 1/2teaspoonorange extract
  3. 7ouncesmarshmallow cream
  4. 1/3cupevaporated milk
  5. 1/3cupfrozen cranberry juice concentrate(or mix)
  6. 2 1/2cupssugar
  7. 1/4cupbutter

DIRECTIONS

  1. Butter or spray a 9×9 pan.
  2. in a 3-4 quart bowl put the white chips,orange extract,and marshmallow cream and set aside.
  3. in a medium size sauce pan put the milk,sugar and cranberry concentrate and stir,bring this to a boil and cook to 235 degrees on candy thermometer (about 9 mins.).
  4. when mixture reaches 235, take off the heat and add butter,stir and mix it well then pour over the white chips,extract,and marshmallow cream.
  5. stir this well till all the chips are melted.
  6. put into prepared pan.
  7. let it cool and then refrigerate till nice and firm.
  8. cut in squares.
