INGREDIENTS
- 5 (1/4 ounce)envelopesunflavored gelatin
- 1/2cupsugar
- 2cups desiredfruit juice(or nectar such as cranberry, grape, orange or apricot)
- 2tablespoonslemon juice
DIRECTIONS
- In 1 1/2 quart saucepan combine gelatin and sugar.
- Add fruit juice;wait 5 minutes.
- Bring to boiling; reduce heat.
- Cook and stir till gelatin dissolves.
- Add lemon juice.
- Pour into shallow pans or paper bake cups.
- Cool; chill till firm.
- (If desired loosen sides. Carefully turn out of pans, using a wide spatula. Cut with cookie cutters. Place on wire rack to dry.) Cover pans or store cutouts in single layers, between waxed paper, in airtight containers up to 5 days.

INGREDIENTS
- 8envelopesgelatin(Knox)
- 4cups coldwater
- 4cupsboiling water
- 4cupswine(sweet)
- 4cupssugar
- 4teaspoonslemon juice
DIRECTIONS
- Mix them and let them gel.
- I haven’t made this in ages, but I remember mom used to have that cheap sweet wine and this was soooo wonderful.
- We’d serve it with whipped cream after a huge Christmas dinner.
- The one day in time is just so it jells.
- Overnite is fine.

INGREDIENTS
- 24ladyfingers
- 1/2cupsherry wine
- 2envelopesunflavored gelatin
- 1cup coldwater
- 12egg whites
- 1cupsugar
- 2cupswhipping cream, whipped
- 1tablespoonsugar
- maraschino cherries
DIRECTIONS
- Halve lady fingers lengthwise, dip in sherry and line botttom of 2 (9×13 inch) shallow pyrex casserolesSprinkle gelatin over cold water in small saucepan.
- Place over low heat about 5 minutes until dissolved.
- stirring constantly.
- Beat egg whites until stiff.
- Gradually add sugar Continue to beat until very stiff.
- Fold in gelatin that has been cooled slightly.
- Spread the egg white mixture over the lady fingers.
- Cover with plastic wrap and refrigerate until congealed.
- Cut snow pudding into desired size squares and place on plate.
- Sweeten whipped cream with sugar.
- Ice top and sides of each square with whipped cream.
- Pour CUSTARD SAUCE over each serving and garnish with a cherry on top.
- CUSTARD SAUCE: 6 egg yolks 1 cup sugar 3 cups milk, scalded 1 tsp vanilla 1 Tbsp.
- dry sherry wine Beat egg yolks and sugar together.
- Slowly pour in scalded milk.
- Place in double boiler and cook over simmering water until custard coats a spoon.
- Cool and add vanilla and sherry Refrigerate until serving time.
- makes about 3 1/2 cups sauce.

INGREDIENTS
- 1 1/2cupsconfectioners’ sugar
- 1cupbutteror margarine, softened
- 1largeegg
- 1 1/2teaspoonsvanilla extract
- 2 1/4cupsall-purpose flour
- 1teaspoonbaking soda
- 1teaspooncream of tartar

Frosting
- 2cupsconfectioners’ sugar
- 1/4cuplight corn syrup
- 2tablespoonswater
- food coloring
- butter flavoring
- mint extract
DIRECTIONS
- In a large mixing bowl combine the 1st seven ingredients in order given and mix well.
- Chill dough 2-3 hours or until dough is easy to handle.
- Roll out on a lightly floured surface to about ¼ inch thickness.
- Cut with various cookie cutters.
- (Cookie cutters may have to be floured).
- Place on a greased cookie sheets.
- Bake at 375° for 7-8 minutes or until lightly brown.
- Cool on wire racks.
- For frosting combine sugar, corn syrup, and water in small bowl.
- Transfer equal amounts of frosting into separate bowls.
- Add desired amount of butter/mint flavoring.
- Mix in food coloring.
- Frost cookies and refrigerate overnight.

INGREDIENTS
- 6tablespoons whiteCrisco shortening
- 1cupgranulated sugar
- 2hard-boiled eggs, yolks seived
- 1tablespoon fresh gratedorange zest
- 1teaspoonbaking powder
- 1 2/3cupsall-purpose flour
- 1/2teaspoonsalt
- 1/4teaspoonground nutmegor mace
- 1/4cup choppedalmonds
- 1egg white, slightly beaten
- granulatedsugar, to roll balls into
DIRECTIONS
- Boil the two whole eggs, cool and peel.
- Remove the yolks and press through a seive so it is fine ground.
- Eat the cooked whites for your lunch or snack–!
- Cream shortening and 1/2 cup of the granulated sugar.
- Cream very well.
- Add the seived egg yolks and blend.
- Add the orange zest and blend.
- Sift the dry ingredients and the other 1/2 cup of granulated sugar together.
- Cut the dry ingredients into the creamed ingredients.
- Add the almonds.
- Shape into walnut size balls.
- Dip into slightly frothy egg white.
- Roll into extra granulated sugar.
- Bake in preheated oven 350 degrees for 16- 18 minutes, until golden on bottoms.
- Can dredge in icing powder if desired.
