BBQ Chicken "pitza" Recipe

INGREDIENTS

  1. 4incheswhole wheat pita bread
  2. 2tablespoonsbarbecue sauce
  3. 2ounces shreddedlow-fat cheddar cheese
  4. 2slicespurple onion
  5. 1chicken breast
  6. 1/2teaspoongarlic powder
  7. 1/8teaspoondried thymeor rosemary

DIRECTIONS

  1. Split pita so the inside is face up. Spray with cooking spray and sprinkle with garlic powder and some thyme or rosemary (just a dash).
  2. Toast pita in 400 degree oven for about 2 minutes. You want to “prebake” your “crust” so it’s not soggy.
  3. Spread 1/2 Tbsp BBQ sauce on each side of pita.
  4. Chop up chicken breast and toss in 1Tbsp BBQ sauce.
  5. Top with chicken. Top with purple onion. Top each half w/1oz. RF cheese.
  6. Bake at 400 until cheese is melted.
  7. LAWL count: 1Starch, 1 protein,1 Dairy, 2 Condiments.

Sausage Con Queso Dip Recipe

INGREDIENTS

  1. 1lblean ground beef
  2. 1lbhot Italian sausage
  3. 1largeonion
  4. 1 (10 ounce)canmushroom soup
  5. 1 (19 ounce)candiced tomatoes with seasonings(regular diced would work)
  6. 2lbsVelveeta cheese
  7. 5jalapeno peppers(chopped small)
  8. 2cupshot salsa
  9. tortilla chips(for dipping)

DIRECTIONS

  1. Brown ground beef, sausage meat and onion.
  2. Drain fat.
  3. Add the rest of the ingredients (except the tortilla chips).
  4. Simmer until the cheese melts.
  5. Serve warm with tortilla chips.

Easy Breakfast Souffle Recipe

INGREDIENTS

  1. 8sliceswhole wheat bread, cut in cubes
  2. 6eggs
  3. 3cupsmilk
  4. 1lbcheese, grated
  5. 3/4teaspoondry mustard
  6. 1lbcooked sausage
  7. 1teaspoonsalt
  8. 1teaspoonpepper

DIRECTIONS

  1. Layer bread cubes in a greased 9X13 pan, followed by a mixture of cheese, beaten eggs, milk, sausage, and seasonings.
  2. Set overnight in refrigerator.
  3. Start in a cool oven.
  4. Bake at 350* for 45 minutes.
  5. Serve Immediately.

Pastry Turnovers Recipe

INGREDIENTS

  1. 1/2cupflour
  2. 5tablespoonsshortening
  3. 1/2teaspoonsalt
  4. 3tablespoonsice water
  5. 1 (21 ounce)canpie filling

DIRECTIONS

  1. Preheat oven to 350*.
  2. Sift and measure flour.
  3. Add Salt.
  4. Cut in shortening until it resembles small peas.
  5. Drizzle water into mixture & toss with a fork until it sticks together.
  6. Shape pastry into a ball with your hands.
  7. Don’t over handle.
  8. Flour your rolling pin and lightly dust your board.
  9. Roll dough from the center until it forms a circle.
  10. Cut circle in to quarters.
  11. Put filling on a 1/2 of triangle.
  12. Add dabs of butter.
  13. Moisten cut edge and 1/2 of round edge.
  14. Fold over & tuck filling away from edge.
  15. Pinch edges together.
  16. Slash top to let steam out.
  17. Brush top with milk & sprinkle with sugar.
  18. Bake on bottom rack of oven for 20 minutes.

Fried Rice Recipe

INGREDIENTS

  1. 12shrimp, shelled and deveined
  2. 8ouncesham, diced
  3. 1/2cupmaui onions, chopped
  4. fresh ginger, minced(to taste)
  5. 1/2cuppeas
  6. 3eggs, beaten
  7. 1teaspoonsalt
  8. 3stalksgreen onions, finely chopped
  9. 1/4cupvegetable oil
  10. 1 1/2tablespoonssoy sauce(Kikkoman)
  11. 4cupscooked rice(left over)
  12. 1 1/2teaspoonssesame oil (optional)

DIRECTIONS

  1. Add vegeble oil in heated pan.
  2. Stir fry the peas, maui onion, shrimp and ham for a minute.
  3. Add soy sauce.
  4. Remove from heat.
  5. Add remaining oil.
  6. Scramble eggs, lightly.
  7. Add rice — make sure there are no clumps.
  8. Add salt, green onions and the ham/shrimp mixture.
  9. Serve hot or cold.
