Janae’s Homemade Amish Bread Recipe

INGREDIENTS

  1. 2 (1/4 ounce)packagesactive dry yeast
  2. 1/2cupsugar
  3. 1tablespoonsugar
  4. 1cupboiling water
  5. 3 1/2cupswarm water
  6. 1/4cupshortening
  7. 10cupsflour
  8. 2tablespoonssalt

DIRECTIONS

  1. Dissolve yeast and 1 T. Sugar in 1 cup warm water.
  2. Set aside.
  3. In a large bowl, combine shortening, salt, sugar, and boiling water.
  4. Mix together until shortening is dissolved.
  5. Add 2 1/2 cups of additional warm water.
  6. Now add the yeast mixture, and blend thoroughly.
  7. in large bowl.
  8. Next add 6 cups of flour, gradually mixing until dough can no longer be mixed.
  9. Knead dough for 20 minutes, continuing to add the remaining flour until the dough becomes soft and is no longer sticky.
  10. Let rise for 2 hours.
  11. Place dough in 4 bread pans.
  12. Cover with a heavy cloth, and let rise for an additional two hours.
  13. Bake at 350* for 30 minutes.

INGREDIENTS

  1. 14cupsflour
  2. 2eggs, beaten
  3. 1cupsugar
  4. 2/3cupoil
  5. 1tablespoonsalt
  6. 5cups very warmwater
  7. 1/4cupyeast

DIRECTIONS

  1. 1. Combine 3 cups flour, sugar, salt, and yeast and mix with wooden spoon.
  2. 2. Add eggs, oil, & water, mix well.
  3. 3. Add remaining flour, 3 cups at a time until just one cup left & mix inchesSave the last cup to add in while kneading dough.
  4. 4. Dump dough on floured board and knead about 10 minutes, adding reserved flour as needed until dough is a smooth consistenty.
  5. 5. Put a little oil in mixing bowl & put dough back in, oiling both sides lightly. Let rise 20 minutes.
  6. 6. Punch down, shape into 6 loaves.
  7. 7. Place in greased bread pans and let rise about 1 hour or until dough rises above pans.
  8. 8. Bake at 350 degrees for 30 minutes.
  9. 9. Cool on wire rack about 30 minutes or until cool.

Raspberry Grape Salad Recipe

INGREDIENTS

  1. 1 (16 ounce)packageraspberries
  2. 1cuppecans
  3. 1/2 (16 ounce)packagesmall marshmallows
  4. 1/2cupsugar
  5. 2cupsred grapes
  6. 1pintwhipped cream

DIRECTIONS

  1. Put raspberries in bowl.
  2. Add sugar.
  3. Combine all other ingredients & fold together & serve chilled.

Chili-Grilled Catfish Skewers Recipe

INGREDIENTS

  1. 2lbscatfish nuggets
  2. Sauce

  3. 1/4cuplemon juice
  4. 4tablespoonsbutter, melted
  5. 1tablespoonhot sauce(I prefer Frank’s)
  6. 1tablespoonchili powder
  7. 1teaspooncumin
  8. 1/4teaspoongarlic powder

DIRECTIONS

  1. Thread catfish nuggets on 6-8 bamboo skewers.
  2. Mix sauce ingredients thoroughly.
  3. Brush sauce onto both sides of the catfish skewers and let sit for 10 minutes.
  4. Heat grill medium high.
  5. Brush one side of catfish skewers with sauce again.
  6. Load into grilling basket and place on grill sauce side down.
  7. Grill 3-5 minutes until half done.
  8. Brush with remaining sauce.
  9. Flip and grill another 3-5 minutes until done.
  10. Note: The grilling basket may or may not be necessary. I am very nervous about cooking fish on the grill without it and risking losing our dinner into the flames.
