INGREDIENTS
- 2cupswheat flour
- 1egg
- 1/4teaspoonsalt
- 1/4cup icecold water
- 1tablespoon meltedbutter
- sugar, for sprinkling
- sweetened condensed milk, for drizzling
- oil(for frying)
DIRECTIONS
- Sift the flour into a hill on a clean surface.
- Make a well in the middle and add in egg, melted butter, ice water and salt.
- Use your hand to incorporate the mixture into a dough. Knead until the dough is soft and form into balls about the size of a duck’s egg.
- Roll lightly in oil and let rest for three hours.
- When you are ready to make the roti, roll each ball of dough as thin as it will go, forming a flat disk. Make a pile as you go.
- Warm frying pan at high heat. Add in oil. Place in the roti, flatten with heavy plate if it puffs up.
- Fry until light golden brown on both sides. Remove the roti from the pan, sprinkle with a little sugar and drizzle with the sweetened condensed milk.

- 1apple

DIRECTIONS
- Heat oven to 375° degrees.
- Remove the apple’s core and place the apple in a baking dish.
- Fill the hollowed-out center with syrup and bake until tender, approximately 20 minutes.

INGREDIENTS
- 2tablespoonsextra virgin olive oil
- 2-8garlic cloves, -depending on your garlic affection. i like lots
- 1 (2 ounce)cananchovy fillets or2-3 anchovy fillets
- red chili pepper flakes
- 1 (32 ounce)canwhole tomatoes, chopped
- 12black olives, crushed off the pit and chopped -get good ones, not bland, boring canned ones
- 1tablespooncapers, heaping
- 1/4cup choppedItalian parsley
- 3leavesfresh basil, chiffonade
- 1lbpasta, cooked, I like noodles with this, spaghetti, capellini, spaghettini, spaghettoni, linguini, fettucci
- parmesan cheeseor romano cheeseor grana padano, for sprinking on top if you like
DIRECTIONS
- Heat a large skillet over medium heat and add the olive oil, garlic, anchovies, and crushed pepper.
- Saute until the anchovies dissolve into the oil and the garlic is tender. This only takes a few minutes.
- Add the tomatoes, olives, and capers.
- Simmer sauce a few minutes until slightly thickened (about 6-8 min or so) and add parsley and basil.
- *Note* If using fresh tomatoes simmer the sauce longer at this point until tomatoes have cookeddown.
- Taste for salt and add a bit of fresh black pepper.
- Toss sauce with pasta and serve.
- Sprinkle cheese on top.
- Enjoy!

INGREDIENTS
- 1cup driedspicy southwestern soup mix
- 5cupswateror chicken stock
- 2cups dicedcooked chicken (optional)
- 1lime, juice of
- 1/2cup choppedfresh cilantro
DIRECTIONS
- Boil soup mix and water or stock for 5 minutes.
- Simmer for 60 to 90 minutes; adding water if necessary to maintain desired consistency.
- Include diced chicken if desired.
- The flavor is enhanced if refrigerated and served the next day.
- Season with lime juice and chopped fresh cilantro.

INGREDIENTS
- 1 1/2cupsall-bran cereal
- 1cupmilk
- 1egg
- 1/3cupshortening
- 1 1/2cupsflour
- 1/2cupsugar
- 1tablespoonbaking powder
- 1teaspoonsalt
DIRECTIONS
- Measure all bran & milk into mixing bowl, mix well, let stand 2 minutes.
- Add egg & shortening, beat well.
- Sift together flour, sugar, baking powder and salt.
- Add to All bran mixture, stirring only until combined.
- Fill greased muffin cups 3/4 full.
- Bake at 400* for 25 minutes.
- Serve Hot.
