INGREDIENTS
- 2tablespoonsbutter(or use vegetable oil)
- 3shallots, finely chopped(or use a small onion, finely chopped)
- 1-2teaspoon fresh mincedgarlic (optional)
- 1/2cupapricot preserves
- 1tablespoonlemon juice
- 1/2teaspoonhot sauce
- 1/2teaspooncreole seasoning
- 1(2.5-3 lb)rotisserie-cooked chicken(about 2-1/2 to 3 pounds)
DIRECTIONS
- Heat oil in a saucepan over medium-high heat; add in shallots and garlic (if using) and saute for 3-4 minutes or until tender.
- Stir in apricot preserves, lemon juice, hot sauce and Creole seasoning, reduce heat to low and cook for 5-6 minutes, stirring with wooden spoon until heated through.
- Place the deli chicken on top of a rack on a medium shallow baking dish, then brush the chicken all over with the prepared glaze.
- Bake at 350 degrees for 15 minutes.
- Enjoy with rice if desired.

INGREDIENTS
- 1 (15 ounce)cangarbanzo beans, drained, rinsed and dried
- 4tablespoons totalolive oil
- 1cup shelled rawpistachios
- 1cup rawalmonds(blanched or not)
- 1tablespoongranulated sugar
- 1tablespoon choppedfresh rosemary leaves
- 1tablespoon choppedfresh thyme leaves
- 1teaspooncoarse sea salt
- 1/2teaspooncayenne pepper
DIRECTIONS
- Preheat oven to 375degrees F.
- Place garbanzo beans on a baking sheet.
- Drizzle with 1 T olive oil and toss to coat thoroughly.
- Spread the beans in a single layer.
- Bake until dark golden–about 40 minutes.
- In a small bowl, combine the seasoning ingredients (sugar, rosemary, thyme, sea salt and cayenne) with 3 T olive oil.
- Remove the beans from the oven and combine with the pistachios and almonds.
- Pour the seasoning mixture over the beans and nuts and toss to coat thoroughly.
- Return mixture to the baking sheet and spread into a single layer.Bake for 10 to 15 more minutes.
- Let cool and serve (or store).

INGREDIENTS
- 1cupall-purpose flour
- 1cupcornmeal
- 12ouncescorn
- 1cup shreddedcheddar cheeseor monterey jack cheese
- 1 (4 ounce)can dicedjalapenosor green peppers
- 2-4tablespoonssugar
- 1tablespoonbaking powder
- 1/2teaspoonsalt
- 2eggs
- 1cupmilk
- 1/4cupcooking oilor Crisco, melted
DIRECTIONS
- Collect all ingredients.
- Drain your peppers and corn, set aside. If using frozen, thaw. Eggs should be at room temperature.
- In a medium sized mixing bowl, stir together the flour, cornmeal, baking powder, and salt.
- In a separate small bowl, beat together eggs, milk, and oil or Crisco until frothy.
- Add the small bowl’s wet ingredients to the medium sized bowl’s dry ingredients until mixed together. (Do not over mix, it will be slightly lumpy).
- Pour into a 8×8 or 9×9 inch greased pan.
- Bake at 425′ oven for 20 - 25 minutes or until golden brown.
- Makes 8 - 9 smaller servings.
- *options are baking in a cast iron corn bread mold, cupcake tin (similar time) or bundt pan (add time).

INGREDIENTS
- 10cupsall-purpose flour(or 6 cups all purpose and 4 cups whole-wheat flour)
- 1/3cupbaking powder
- 1/4cupsugar
- 2cupsCrisco shortening
DIRECTIONS
- Easy biscuit mix:
- Place 1 cup mix in a bowl. Make a well in the middle and add 1/4 cup of milk. Stir with a fork until dough clings together. Knead 10 - 12 times, roll out to a 1/2 in thickness. Cut into 2 1/2 inch biscuits. Place on a cookie sheet. Bake at 450′ for 8 - 10 minutes Serve warm. Makes 4 biscuits per above mixture.
- Easy Muffins:.
- In a medium mixing bowl, mix 1 cup of mix, 1 - 3 TBSP sugar,1 beaten egg,1/4 cup milk. Stir just until moistened, it will be lumpy. Use a cupcake tin, greased. Fill 2/3 full to allow for expansion. Bake at 400′ for 15 - 20 mins or until golden brown. Makes 6 per mixture.
- Easy Pancakes:.
- In a medium mixing bowl, mix 1 cup mix, 1 beaten egg,3/4 cup milk,stir until mixed , will be lumpy. Each pancake uses 3/4 cup of mixture. Cook on a hot griddle or heavy skillet. Cook until light to medium golden brown, it will be bubbly all across the pancake - flip and cook on 2nd side. Makes 6 pancakes per above mixture.
