Kicked-Up Store-Bought Whole Deli Chicken Recipe

INGREDIENTS

  1. 2tablespoonsbutter(or use vegetable oil)
  2. 3shallots, finely chopped(or use a small onion, finely chopped)
  3. 1-2teaspoon fresh mincedgarlic (optional)
  4. 1/2cupapricot preserves
  5. 1tablespoonlemon juice
  6. 1/2teaspoonhot sauce
  7. 1/2teaspooncreole seasoning
  8. 1(2.5-3 lb)rotisserie-cooked chicken(about 2-1/2 to 3 pounds)

DIRECTIONS

  1. Heat oil in a saucepan over medium-high heat; add in shallots and garlic (if using) and saute for 3-4 minutes or until tender.
  2. Stir in apricot preserves, lemon juice, hot sauce and Creole seasoning, reduce heat to low and cook for 5-6 minutes, stirring with wooden spoon until heated through.
  3. Place the deli chicken on top of a rack on a medium shallow baking dish, then brush the chicken all over with the prepared glaze.
  4. Bake at 350 degrees for 15 minutes.
  5. Enjoy with rice if desired.

Giada’s Ceci, Pistachio and Almond Mix Recipe

INGREDIENTS

  1. 1 (15 ounce)cangarbanzo beans, drained, rinsed and dried
  2. 4tablespoons totalolive oil
  3. 1cup shelled rawpistachios
  4. 1cup rawalmonds(blanched or not)
  5. 1tablespoongranulated sugar
  6. 1tablespoon choppedfresh rosemary leaves
  7. 1tablespoon choppedfresh thyme leaves
  8. 1teaspooncoarse sea salt
  9. 1/2teaspooncayenne pepper

DIRECTIONS

  1. Preheat oven to 375degrees F.
  2. Place garbanzo beans on a baking sheet.
  3. Drizzle with 1 T olive oil and toss to coat thoroughly.
  4. Spread the beans in a single layer.
  5. Bake until dark golden–about 40 minutes.
  6. In a small bowl, combine the seasoning ingredients (sugar, rosemary, thyme, sea salt and cayenne) with 3 T olive oil.
  7. Remove the beans from the oven and combine with the pistachios and almonds.
  8. Pour the seasoning mixture over the beans and nuts and toss to coat thoroughly.
  9. Return mixture to the baking sheet and spread into a single layer.Bake for 10 to 15 more minutes.
  10. Let cool and serve (or store).

Corny Cornbread With Peppers Recipe

INGREDIENTS

  1. 1cupall-purpose flour
  2. 1cupcornmeal
  3. 12ouncescorn
  4. 1cup shreddedcheddar cheeseor monterey jack cheese
  5. 1 (4 ounce)can dicedjalapenosor green peppers
  6. 2-4tablespoonssugar
  7. 1tablespoonbaking powder
  8. 1/2teaspoonsalt
  9. 2eggs
  10. 1cupmilk
  11. 1/4cupcooking oilor Crisco, melted

DIRECTIONS

  1. Collect all ingredients.
  2. Drain your peppers and corn, set aside. If using frozen, thaw. Eggs should be at room temperature.
  3. In a medium sized mixing bowl, stir together the flour, cornmeal, baking powder, and salt.
  4. In a separate small bowl, beat together eggs, milk, and oil or Crisco until frothy.
  5. Add the small bowl’s wet ingredients to the medium sized bowl’s dry ingredients until mixed together. (Do not over mix, it will be slightly lumpy).
  6. Pour into a 8×8 or 9×9 inch greased pan.
  7. Bake at 425′ oven for 20 - 25 minutes or until golden brown.
  8. Makes 8 - 9 smaller servings.
  9. *options are baking in a cast iron corn bread mold, cupcake tin (similar time) or bundt pan (add time).

Easy Biscuit Mix Recipe

INGREDIENTS

  1. 10cupsall-purpose flour(or 6 cups all purpose and 4 cups whole-wheat flour)
  2. 1/3cupbaking powder
  3. 1/4cupsugar
  4. 2cupsCrisco shortening

DIRECTIONS

  1. Easy biscuit mix:
  2. Place 1 cup mix in a bowl. Make a well in the middle and add 1/4 cup of milk. Stir with a fork until dough clings together. Knead 10 - 12 times, roll out to a 1/2 in thickness. Cut into 2 1/2 inch biscuits. Place on a cookie sheet. Bake at 450′ for 8 - 10 minutes Serve warm. Makes 4 biscuits per above mixture.
  3. Easy Muffins:.
  4. In a medium mixing bowl, mix 1 cup of mix, 1 - 3 TBSP sugar,1 beaten egg,1/4 cup milk. Stir just until moistened, it will be lumpy. Use a cupcake tin, greased. Fill 2/3 full to allow for expansion. Bake at 400′ for 15 - 20 mins or until golden brown. Makes 6 per mixture.
  5. Easy Pancakes:.
  6. In a medium mixing bowl, mix 1 cup mix, 1 beaten egg,3/4 cup milk,stir until mixed , will be lumpy. Each pancake uses 3/4 cup of mixture. Cook on a hot griddle or heavy skillet. Cook until light to medium golden brown, it will be bubbly all across the pancake - flip and cook on 2nd side. Makes 6 pancakes per above mixture.
