Haricots Verts With Browned Garlic Recipe

INGREDIENTS

  1. 2quartswater
  2. 2 1/2teaspoonssalt, divided
  3. 1 1/2lbsFrench haricots vert
  4. 4teaspoonsbutter
  5. 1/3cup thinly slicedgarlic(about 1 head)
  6. 2tablespoons finely choppedshallots
  7. 1teaspoon choppedfresh rosemary
  8. 1/2teaspoonfresh ground black pepper

DIRECTIONS

  1. Bring water and 2 teaspoons salt to a boil in a large pan.
  2. Add in beans; cook 2-3 minutes or until crisp-tender; drain.
  3. Melt butter in a pan over medium heat; add in garlic and shallots; cook 4 minutes or until lightly browned, stirring occasionally.
  4. Add ½ teaspoon salt, beans, rosemary, and pepper; cook 4 minutes or until thoroughly heated, stirring occasionally.

Mushroom Cherry Couscous Recipe

INGREDIENTS

  1. 3tablespoonsextra virgin olive oil
  2. 3portabella mushroom caps, thinly sliced
  3. 5-6fresh sage leaves, chopped
  4. 2largegarlic cloves, minced
  5. red pepper flakes(a couple pinches)
  6. salt
  7. black pepper
  8. 1cupchicken stock
  9. 1/4cupdried cherries
  10. 1cupcouscous

DIRECTIONS

  1. Heat olive oil in a skillet with a tight-fitting lid over med-high heat.
  2. Add in sliced mushrooms and spread them out in the skillet.
  3. Cook without stirring for about 3 minutes; they’ll get nice and brown if you don’t touch them.
  4. Add in the sage, garlic, red pepper flakes, salt, and pepper; continue to cook, stirring occasionally, for about 5 minutes.
  5. Add in chicken stock and dried cherries; increase the heat.
  6. When the stock is boiling, add in the couscous, shake the skillet to settle it into the liquid.
  7. Turn the heat off, cover the skillet, and let it sit for 5 minutes.
  8. Fluff the couscous with a fork and serve.

Turkey "chorizo" Recipe

INGREDIENTS

  1. 2lbsground turkey
  2. 2tablespoons grounddried chilies(such as chipotles)
  3. 1tablespoonsalt
  4. 1tablespoon mincedgarlic, sauteed and cooled
  5. 4 1/2teaspoons spanishpaprika
  6. 1teaspoonground cinnamon
  7. 1teaspoonground thyme
  8. 1teaspoonground oregano
  9. 1teaspoonground cumin
  10. 1teaspoonfresh ground black pepper
  11. 1/2teaspoonground cloves
  12. 1/2teaspoonground ginger
  13. 1/2teaspoonground nutmeg
  14. 1/2teaspooncoriander powder
  15. 1/2teaspoonbay leaf powder
  16. 2tablespoonsred wine vinegar

DIRECTIONS

  1. Briefly saute the garlic in olive oil until tender but not brown.
  2. In the mixing bowl of an electric mixer, place pork and remaining ingredients except for the vinegar.
  3. Mix,on low, until evenly blended, about 1 minute.
  4. Mix for an additional minute, adding the vinegar gradually.
  5. Mix on medium for 15-20 seconds or until the mixture is sticky to the touch.
  6. To check seasonings:.
  7. Make a small patty with about 2 T. of the mixture.Saute over low heat until cooked through.Taste and adjust seasoning as needed.
  8. Shape into patties of desired size and cook immediately.
  9. May be made ahead and stored in fridge, tightly covered for up to 3 days.
  10. May be frozen for up to 2 months.
  11. Good with eggs and salsa for breakfast, on a breakfast pizza or crumbled into a quesadilla.

Savory Sweet Potato Hash Recipe

INGREDIENTS

  1. 4slicesbacon, diced
  2. 1tablespoonolive oil
  3. 1/2mediumonion, diced
  4. 3mediumsweet potatoes, chopped
  5. 1largegranny smith apples, peeled and chopped
  6. 1/2cupchicken broth
  7. 1/4teaspoondried thyme
  8. 1/4teaspoonground allspice
  9. 1/2cup chopped toastedpecans
  10. 1tablespoon choppedfresh parsley

DIRECTIONS

  1. In a large nonstick skillet over med-high heat, saute bacon in hot oil for 3 minutes or until brown.
  2. Add in onion; stir/saute 2 minutes.
  3. Add in sweet potato; stir/saute 5 minutes; add in apple and the next 3 ingredients; cook, stirring frequently, 8-10 minutes or until the potatoes and apple are tender.
  4. Spoon mixture into a serving dish, sprinkle with pecans and parsley.

Bread Knots Recipe

INGREDIENTS

  1. 1 (11 ounce)canrefrigerated breadstick dough
  2. 1tablespoonbutter, melted
  3. 1/2teaspoonsesame seeds
  4. 1/2teaspoonpoppy seeds

DIRECTIONS

  1. Separate dough strips, and tie each loosely into a knot; place 1 inch apart on greased baking sheet.
  2. Brush dough strips with butter and sprinkle with seeds.
  3. Bake at 350°F for 15 minutes or until golden brown.
