INGREDIENTS
- 1teaspoonolive oil
- 1lbground turkey breast
- 2 (16 ounce)canskidney beans
- 1 (16 ounce)canchili beans
- 1onion, diced
- 1cuplight beer
- 1 (28 ounce)candiced tomatoes
- 1 (28 ounce)cantomato sauce
- 1-2jalapeno pepper, sliced
- 3-5tablespoonstaco seasoning
- red pepper flakes
DIRECTIONS
- Saute onions in a large pot until brown.
- Add the turkey, cook 10 minutes or until done.
- Deglaze the pan with the beer, stirring 2 minutes.
- Add the rest of the ingredients.
- Cook on medium heat until thick, about 45 minutes, stirring occasionally.

INGREDIENTS
- 1 1/2cupsunsalted butter
- 7 (1 ounce)unsweetened chocolate squares
- 2 1/4cups siftedall-purpose flour
- 1 1/2teaspoonssalt
- 4cups coarsely choppedwalnuts
- 6largeeggs
- 3cupsgranulated sugar
- 1 1/2tablespoonsvanilla extract

Frosting
- 2 (1 ounce)unsweetened chocolate squares, coarsely chopped
- 1tablespoonunsalted butter
- 1/3cuplow-fat milk
- 2 1/2cups siftedconfectioners’ sugar
- 1 1/2teaspoonsvanilla extract
DIRECTIONS
- To make the brownies, preheat oven to 325°F and butter a 15-1/2 x 10-1/2 x 2-inch baking pan.
- In a small saucepan, melt the butter and chocolate over low heat; cool.
- Onto a piece of waxed paper, sift the flour and salt, then toss with the nuts.
- In a large bowl, with a mixer at high speed, beat the eggs just until foamy.
- Add the sugar, then the cooled chocolate mixture and vanilla, and beat just until blended.
- Stir in the flour mixture just until it disappears, then spoon into the prepared pan.
- Bake for 35 minutes, or just until set and a toothpick inserted in the center comes out almost clean.
- Let cool completely in the pan before frosting.
- To make the frosting, heat the chocolate, butter, and 1/3 cup of milk in a small saucepan over low heat until chocolate melts, stirring frequently.
- Cool to lukewarm, then pour into a medium bowl.
- Stir in sugar and vanilla.
- Using a mixer, beat at high speed for about 10 minutes, or until thick enough to spread.If frosting is too thick to your liking, you can add between 1-3 tablespoons more milk and beat again to desired consistancy.Frost completely cooled brownies in pan.
- Refrigerate until ready to serve, then cut into 1-inch chunks and remove from pan.

INGREDIENTS
- 1tablespoonoil
- 1lbskinless chicken breast halves, cut into bite size pieces
- 1 (14 1/2 ounce)canchicken broth
- 1/4cupranch dressing
- 2tablespoonsflour
- 6flour tortillas, cut into small pieces
- 1cupfour-cheese Mexican blend cheese
- 1/2cupsalsa
DIRECTIONS
- Heat oil in large deep skillet on medium-high heat.
- Add chicken; cook 7 minute or until cooked through, stirring occasionally.
- Mix broth, dressing, and flour until well blended; gradually add to skillet, stirring constantly.
- Add tortillas; stir to combine.
- Bring to boil.Reduce heat to medium-low; simmer 3 minute.
- Sprinkle with cheese; cover.
- Simmer 3 to 5 minute or until cheese is melted.
- Top with salsa.

INGREDIENTS
- 2lbs largetomatoes
- 4garlic cloves, minced
- 1teaspoondried Italian herb seasoning
- 1/2teaspoonsugar
- 1teaspoonsalt
- 1/2teaspoonblack pepper
- 2tablespoonsolive oil
DIRECTIONS
- Preheat the oven 400°f.
- Slice tomatoes in half, set aside.
- Pour the olive oil onto a large baking sheet and spread it around the sheet.
- Sprinkle evenly the garlic, herbs, sugar, salt and pepper over the oil.
- Place the tomatoes cut side down onto the baking sheet.
- Roast for about 30-40 minutes, or until the skins start to lift from the tomatoes.
- Allow to cool.
- Remove the skins and put the sauce into a large bowl and break up the flesh with a fork.
- Reheat sauce if using immediately.

INGREDIENTS
- 36largemarshmallows
- 1 (16 ounce)candark chocolate frosting
- 1 1/2cupsgraham cracker crumbs
- 1 1/2cupsmini chocolate chips, mini-morsel
- 36lollipop sticksor wooden popsicle sticks
DIRECTIONS
- Line cookie sheet with waxed paper.
- Insert a stick into each marshmallow (into one of the flat ends, so it can sit on the other without falling over).
- Put mini-morsels into a shallow bowl.
- Put graham cracker crumbs into a shallow bowl.
- Microwave frosting for 20 - 30 seconds (don’t overdo - else it will be too thin to adhere well to the marshmallows).
- Dip one marshmallow at a time into the frosting, allowing excess to drip off.
- Dip the bottom and one side of the chocolate coated marshmallow into graham cracker crumbs.Dip the opposite side into the mini-morsels.
- Stand the flat ends down on the cookie sheet.
- Refrigerate for one hour before serving.
