Lowfat Turkey Chili Recipe

INGREDIENTS

  1. 1teaspoonolive oil
  2. 1lbground turkey breast
  3. 2 (16 ounce)canskidney beans
  4. 1 (16 ounce)canchili beans
  5. 1onion, diced
  6. 1cuplight beer
  7. 1 (28 ounce)candiced tomatoes
  8. 1 (28 ounce)cantomato sauce
  9. 1-2jalapeno pepper, sliced
  10. 3-5tablespoonstaco seasoning
  11. red pepper flakes

DIRECTIONS

  1. Saute onions in a large pot until brown.
  2. Add the turkey, cook 10 minutes or until done.
  3. Deglaze the pan with the beer, stirring 2 minutes.
  4. Add the rest of the ingredients.
  5. Cook on medium heat until thick, about 45 minutes, stirring occasionally.

Double Fudge Brownie Chunks Recipe

INGREDIENTS

  1. 1 1/2cupsunsalted butter
  2. 7 (1 ounce)unsweetened chocolate squares
  3. 2 1/4cups siftedall-purpose flour
  4. 1 1/2teaspoonssalt
  5. 4cups coarsely choppedwalnuts
  6. 6largeeggs
  7. 3cupsgranulated sugar
  8. 1 1/2tablespoonsvanilla extract
  9. Frosting

  10. 2 (1 ounce)unsweetened chocolate squares, coarsely chopped
  11. 1tablespoonunsalted butter
  12. 1/3cuplow-fat milk
  13. 2 1/2cups siftedconfectioners’ sugar
  14. 1 1/2teaspoonsvanilla extract

DIRECTIONS

  1. To make the brownies, preheat oven to 325°F and butter a 15-1/2 x 10-1/2 x 2-inch baking pan.
  2. In a small saucepan, melt the butter and chocolate over low heat; cool.
  3. Onto a piece of waxed paper, sift the flour and salt, then toss with the nuts.
  4. In a large bowl, with a mixer at high speed, beat the eggs just until foamy.
  5. Add the sugar, then the cooled chocolate mixture and vanilla, and beat just until blended.
  6. Stir in the flour mixture just until it disappears, then spoon into the prepared pan.
  7. Bake for 35 minutes, or just until set and a toothpick inserted in the center comes out almost clean.
  8. Let cool completely in the pan before frosting.
  9. To make the frosting, heat the chocolate, butter, and 1/3 cup of milk in a small saucepan over low heat until chocolate melts, stirring frequently.
  10. Cool to lukewarm, then pour into a medium bowl.
  11. Stir in sugar and vanilla.
  12. Using a mixer, beat at high speed for about 10 minutes, or until thick enough to spread.If frosting is too thick to your liking, you can add between 1-3 tablespoons more milk and beat again to desired consistancy.Frost completely cooled brownies in pan.
  13. Refrigerate until ready to serve, then cut into 1-inch chunks and remove from pan.

INGREDIENTS

  1. 1tablespoonoil
  2. 1lbskinless chicken breast halves, cut into bite size pieces
  3. 1 (14 1/2 ounce)canchicken broth
  4. 1/4cupranch dressing
  5. 2tablespoonsflour
  6. 6flour tortillas, cut into small pieces
  7. 1cupfour-cheese Mexican blend cheese
  8. 1/2cupsalsa

DIRECTIONS

  1. Heat oil in large deep skillet on medium-high heat.
  2. Add chicken; cook 7 minute or until cooked through, stirring occasionally.
  3. Mix broth, dressing, and flour until well blended; gradually add to skillet, stirring constantly.
  4. Add tortillas; stir to combine.
  5. Bring to boil.Reduce heat to medium-low; simmer 3 minute.
  6. Sprinkle with cheese; cover.
  7. Simmer 3 to 5 minute or until cheese is melted.
  8. Top with salsa.

Oven Roasted Tomato Sauce Recipe

INGREDIENTS

  1. 2lbs largetomatoes
  2. 4garlic cloves, minced
  3. 1teaspoondried Italian herb seasoning
  4. 1/2teaspoonsugar
  5. 1teaspoonsalt
  6. 1/2teaspoonblack pepper
  7. 2tablespoonsolive oil

DIRECTIONS

  1. Preheat the oven 400°f.
  2. Slice tomatoes in half, set aside.
  3. Pour the olive oil onto a large baking sheet and spread it around the sheet.
  4. Sprinkle evenly the garlic, herbs, sugar, salt and pepper over the oil.
  5. Place the tomatoes cut side down onto the baking sheet.
  6. Roast for about 30-40 minutes, or until the skins start to lift from the tomatoes.
  7. Allow to cool.
  8. Remove the skins and put the sauce into a large bowl and break up the flesh with a fork.
  9. Reheat sauce if using immediately.

Hobo S’mores Recipe

INGREDIENTS

  1. 36largemarshmallows
  2. 1 (16 ounce)candark chocolate frosting
  3. 1 1/2cupsgraham cracker crumbs
  4. 1 1/2cupsmini chocolate chips, mini-morsel
  5. 36lollipop sticksor wooden popsicle sticks

DIRECTIONS

  1. Line cookie sheet with waxed paper.
  2. Insert a stick into each marshmallow (into one of the flat ends, so it can sit on the other without falling over).
  3. Put mini-morsels into a shallow bowl.
  4. Put graham cracker crumbs into a shallow bowl.
  5. Microwave frosting for 20 - 30 seconds (don’t overdo - else it will be too thin to adhere well to the marshmallows).
  6. Dip one marshmallow at a time into the frosting, allowing excess to drip off.
  7. Dip the bottom and one side of the chocolate coated marshmallow into graham cracker crumbs.Dip the opposite side into the mini-morsels.
  8. Stand the flat ends down on the cookie sheet.
  9. Refrigerate for one hour before serving.
