INGREDIENTS
- 1tablespoonmargarine
- 3tablespoonssugar
- 2tablespoonscocoa
- 2tablespoonsflour
- 3tablespoonsmilk
DIRECTIONS
- Place margarine in microwave-safe mug. Zap 20 seconds to melt.
- Add sugar. Zap 20 seconds.
- Add cocoa and flour.
- Add milk. Stir to blend.
- Note — where the ingredient amounts say tablespoon, it should read “heaping spoon”. I used the large spoon from my kitchen cutlery, commonly called a tablespoon or soup spoon.

INGREDIENTS
- 1 1/2lbsbroccoli, cut into bite sized pieces
- 2cups uncookedinstant brown rice
- 1 (14 1/2 ounce)canvegetable broth
- 1 (10 3/4 ounce)cancondensed cream of broccoli soup
- 1 (2 ounce)jardiced pimentos, drained
- 1/4teaspoonpepper
- 2tablespoonsfirm butteror margarine
- 1/2cupBisquick baking mix
DIRECTIONS
- Heat oven to 425.
- Heat 1 inch water to boiling in 2-quart saucepan; add broccoli.
- Heat to boiling; reduce heat to medium.
- Cover and cook about 5 minutes or until crisp-tender; drain.
- Mix broccoli, rice, broth, soup, pimientos and pepper in 2-quart casserole.
- Cover and bake 20 minutes.
- Cut margarine into baking mix, using pastry blender, until crumbly.
- Sprinkle crumbly mixture over broccoli mixture.
- Bake uncovered 8 to 10 minutes or until top is light brown.

INGREDIENTS
- 1cupall-purpose flour
- 1cupold-fashioned oatmeal
- 1cupgraham cracker crumbs
- 3/4cupbrown sugar, packed
- 1/3cupgranulated sugar
- 1teaspoonbaking powder
- 1teaspoonbaking soda
- 1/2teaspoonground cinnamon
- 1/2teaspoonsalt(I omitted)
- 1/2cupvegetable oil(I used light olive oil)
- 1cupbuttermilk
- 3eggs(I substituted with egg beaters)
DIRECTIONS
- Preheat oven to 350*.
- Coat a 12 cup bundt pan with cooking spray.
- Combine flour, oats, crumbs, sugars, baking powder, baking soda, cinnamon and salt.
- In seperate bowl, whisk together oil, buttermilk and eggs.
- Add buttermilk mixture to dry ingredients and whisk until combined.
- Pour batter into prepared pan.
- Bake 40 minutes or until wooden pick inserted in the center comes out clean.
- Cool on a wire rack for 5 minutes.
- Remove from pan; cool completely on wire rack.

INGREDIENTS
- 1 1/2cupsricotta cheese
- 1cup freshly gratedparmesan cheese
- 2eggs
- 4tablespoonsall-purpose flour
- salt and pepper
- nutmeg
- 6basil leaves
- 2sage leaves
- 1/2cup cookedspinach, very well drained, and chopped
DIRECTIONS
- Place spinach, ricotta and herbs in a food processor to
- combine. Season with salt,pepper and nutmeg. Transfer to a
- bowl and add half the Parmesan, the eggs and the flour and.
- mix well. Make little dumplings and cook in plenty of
- boiling water for 3 minutes or until they raise to the
- surface. Transfer gnocchis to a buttered baking dish. Pour
- tomato sauce on top and sprinkle the Parmesan. Bake a few
- minutes until very hot.

INGREDIENTS
- 6slicesbread
- 1-2tablespoonreduced fat margarine, at room temperature(such as Smart Balance)
- 8ounceslean sausage meat, cooked, drained of fat(such as Jimmy Dean)
- 2largeeggs
- 1-2cuplow-fat cheddar cheese, shredded
- 1 1/2cupsskim milk
- salt, to taste
- pepper, to taste
DIRECTIONS
- Grease an 8×8″ square glass baking dish and preheat oven to 350°F.
- Butter each slice of bread on 1 side only.
- Place the bread slices inthe bottom of the pan, cutting to fit in 1 even layer, buttered sides facing up.
- Sprinkle with cooked sausage and cheese.
- Layer the next 3 slices of bread on top, butter side up again.
- Mix eggs and milk together, adding some salt & pepper to taste, and pour over the bread.
- Press the bread down lightly with your fingers to ensure that everything is moistened.
- Cover with foil and chill overnight.
- Bake at 350 F for about 45 minutes to 1 hour, or untilt he top is puffed and lightly browned.
- Cut into slices and serve.
