Oriental Curried Rice Salad Recipe

INGREDIENTS

  1. 2cupsrice
  2. 1/2 (1 kg)bagfrozen peas(use approx. 1 pound)
  3. 1 1/2cupscelery
  4. 1/4cupred onions
  5. Dressing

  6. 1/3cupsalad oil(I have used either Vegetable or Canola)
  7. 3tablespoonssoya sauce
  8. 1/2-2teaspooncurry powder
  9. 2teaspoonsvinegar
  10. 1/2teaspoonsalt
  11. 1/2teaspooncelery seeds
  12. 1/2teaspoonsugar

DIRECTIONS

  1. Cook the rice according to package directions and cool.
  2. Cook the peas and cool.
  3. Chop celery and onion.
  4. Mix the rice, peas, celery and onion.
  5. While the rice is cooking mix all the ingredients for the dressing.
  6. Mix the dressing into the rice mixture.
  7. Cool for several hours.

Brown Rice Casserole Recipe

INGREDIENTS

  1. 1smallonion, chopped
  2. 6tablespoonsbutter
  3. 1cupbeef broth
  4. 1cupwater
  5. 1cupuncooked rice
  6. salt and pepper(to taste)

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a small skillet, melt butter over medium high heat.
  3. Add onions to skillet and saute until soft and yellow.
  4. Remove pan from heat.
  5. Grease a 2-quart casserole dish.
  6. Add all ingredients to casserole dish and mix well.
  7. Place covered casserole in the oven and bake for 45 minutes to 1 hour.

Mary’s Zesty Bean Dip Recipe

INGREDIENTS

  1. 1 (16 ounce)canrefried beans
  2. 1/2cup chilisalsa(or more to taste)
  3. 1cupcheddar cheese, shredded
  4. 1tablespooncilantro, fresh and chopped
  5. sour cream, to taste
  6. tortilla chips

DIRECTIONS

  1. Combine all ingredients, ecpect the sour cream and chips. In a medium saucepan or chafing dish, heat until the cheese melts, stirring occasionally. Serve warm, topped with sour cream and accompanied by tortilla chips.

  1. 1lb van camp’spork & beans(can)
  2. 2tablespoonsbrown sugar
  3. 2tablespoonsketchup
  4. 1tablespoonmolasses
  5. 6slicesbacon, cooked and crumbled
  6. 1smallonion, chopped

DIRECTIONS

  1. Preheat oven 350 degrees.
  2. Mix all ingredients together in an 1-quart baking dish.
  3. Bake for 45 minutes.

Mushroom and Leek Soup Recipe

  1. 2cups slicedfresh mushrooms
  2. 3leeks, cleaned and thinly sliced
  3. 2celery ribs, chopped
  4. 1carrot, grated
  5. 1/4cupoil
  6. 2garlic cloves, finly chopped
  7. 4 (14 1/2 ounce)canschicken broth
  8. salt and pepper

DIRECTIONS

  1. in large pot saute first 4 ingredients in oil til they start to sweat.
  2. add garlic and broth.
  3. simmer 20 min.
