Mom’s Chess Pie Recipe

INGREDIENTS

  1. 2 (9 inch)pie crusts
  2. 4eggs(slightly beaten)
  3. 2cupssugar
  4. 1/2cupbutter(melted and cooled)
  5. 1teaspoonvanilla
  6. 1teaspoonvinegar
  7. 4tablespoonsbuttermilk

DIRECTIONS

  1. In large bowl add eggs (slightly beaten).
  2. Stir in sugar.
  3. Stir in melted butter (a little at a time and make sure it is cool or else eggs will cook).
  4. stir in remaining ingredients.
  5. Mix until just combined.
  6. Bake at 350 degrees 25-30 minutes.

Scottish Rumble De Thump Recipe

INGREDIENTS

  1. 6mediumpotatoes, peeled and quartered
  2. 5cupscabbage, chopped(1/2 large head)
  3. 4tablespoonsbutter
  4. 1/3cupmilk
  5. 1 1/2cupscheddar cheese, shredded cheese(6 oz.)
  6. salt and pepper, to taste

DIRECTIONS

  1. Cook potatoes until tender; drain.
  2. Cook cabbage until tender; drain.
  3. Beat potatoes and butter until smooth. Add milk to make fluffy texture (1/3 cup plus or minus).
  4. Add cabbage; beat well. Season with salt and pepper.
  5. Place in 8 x 8 x 2-inch baking dish. Sprinkle cheese over top.
  6. Bake in 350 degrees oven until cheese melts and mixture is hot, about 10 minutes.

Kiwi-Peach Smoothie Recipe

INGREDIENTS

  1. 1largebanana, frozen and broken into roughly 1-inch chunks
  2. 1smallkiwi fruit(peeled!)
  3. 1/2cup cannedpeaches in juice, drained

DIRECTIONS

  1. Combine in the food processor (or blender, but requires a lot more stirring) and blend till creamy. Serve immediately.
  2. If you prefer a thinner smoothie, add some peach juice. To let it thicken a bit with extra freeziness (mmmm), put it in the freezer for 10-15 minutes or so. I like it sprinkled with ground flaxseed!

Fluffy Orange Syllabub Recipe

INGREDIENTS

  1. 1tablespoonorange zest
  2. 4tablespoonsorange juice
  3. 2 1/2cupsplain yogurt
  4. 6tablespoonspowdered milk
  5. 4tablespoonssugar
  6. 2egg whites
  7. 4oranges

DIRECTIONS

  1. In a mixing bowl, combine orange zest, orange juice, yogurt, powdered milk and sugar. Cover and chill for 1 hour.
  2. Whisk the egg whites until stiff then fold into the orange mixture.
  3. Peel oranges, removing all the pith, divide segments among 4 dessert glasses.
  4. Spoon yogurt mixture over orange segments and chill for another hour.
  5. Garnish with additional orange zest.
  6. Note:Cook/prep time does not include chilling time.
