INGREDIENTS
- 2 (9 inch)pie crusts
- 4eggs(slightly beaten)
- 2cupssugar
- 1/2cupbutter(melted and cooled)
- 1teaspoonvanilla
- 1teaspoonvinegar
- 4tablespoonsbuttermilk
DIRECTIONS
- In large bowl add eggs (slightly beaten).
- Stir in sugar.
- Stir in melted butter (a little at a time and make sure it is cool or else eggs will cook).
- stir in remaining ingredients.
- Mix until just combined.
- Bake at 350 degrees 25-30 minutes.

INGREDIENTS
- 6mediumpotatoes, peeled and quartered
- 5cupscabbage, chopped(1/2 large head)
- 4tablespoonsbutter
- 1/3cupmilk
- 1 1/2cupscheddar cheese, shredded cheese(6 oz.)
- salt and pepper, to taste
DIRECTIONS
- Cook potatoes until tender; drain.
- Cook cabbage until tender; drain.
- Beat potatoes and butter until smooth. Add milk to make fluffy texture (1/3 cup plus or minus).
- Add cabbage; beat well. Season with salt and pepper.
- Place in 8 x 8 x 2-inch baking dish. Sprinkle cheese over top.
- Bake in 350 degrees oven until cheese melts and mixture is hot, about 10 minutes.

INGREDIENTS
- 1largebanana, frozen and broken into roughly 1-inch chunks
- 1smallkiwi fruit(peeled!)
- 1/2cup cannedpeaches in juice, drained
DIRECTIONS
- Combine in the food processor (or blender, but requires a lot more stirring) and blend till creamy. Serve immediately.
- If you prefer a thinner smoothie, add some peach juice. To let it thicken a bit with extra freeziness (mmmm), put it in the freezer for 10-15 minutes or so. I like it sprinkled with ground flaxseed!

INGREDIENTS
- 1tablespoonorange zest
- 4tablespoonsorange juice
- 2 1/2cupsplain yogurt
- 6tablespoonspowdered milk
- 4tablespoonssugar
- 2egg whites
- 4oranges
DIRECTIONS
- In a mixing bowl, combine orange zest, orange juice, yogurt, powdered milk and sugar. Cover and chill for 1 hour.
- Whisk the egg whites until stiff then fold into the orange mixture.
- Peel oranges, removing all the pith, divide segments among 4 dessert glasses.
- Spoon yogurt mixture over orange segments and chill for another hour.
- Garnish with additional orange zest.
- Note:Cook/prep time does not include chilling time.
