Chicken Salad Recipe

INGREDIENTS

  1. 2cupscooked chicken, finely chopped
  2. 1/2cuppecans, chopped
  3. 1/2cupred onions, finely chopped
  4. 1/2cupcelery, finely chopped
  5. 1/2cupmayonnaise
  6. 4-5dropsTabasco sauce
  7. salt, to taste(I use sea salt in a grinder)
  8. pepper, to taste(sometimes I use lemon pepper)

DIRECTIONS

  1. Mix all ingredients in a bowl, with fork, until well blended.
  2. Serve well chilled.

Wendy’s Smoked Salmon Chowda Recipe

INGREDIENTS

  1. 1cupsmoked salmon, chunked
  2. 2tablespoonsbutter
  3. 1/2cuponions, chopped
  4. 1/4cupcelery, sliced
  5. 1-2cuppotatoes, cooked and diced
  6. 2tablespoonsflour
  7. 1 1/4cupschicken stock
  8. 1/4cupsour cream
  9. 1teaspoonfresh dill, minced
  10. 1/8teaspoonpepper
  11. 1tablespoonparsley, chopped (optional)

DIRECTIONS

  1. Saute onion and celery in butter.
  2. Stir in flour, add stock and potatoes and cook over medium heat, stirring constantly until boiling point.
  3. Add sour cream, dill, pepper and salmon.
  4. Heat 2-3 minutes, stirring constantly.
  5. Add parsley before serving.

Nacho Cucumbers! Recipe

INGREDIENTS

  1. 1cucumber(sliced)
  2. 4ouncessalsa
  3. 4ounces pre-shreddedfat-free cheddar cheese

DIRECTIONS

  1. Peel and slice cucumber.
  2. Put 1 teaspoon salsa on each slice of cucumber.
  3. Top with shreded cheese.
  4. Put slices on paper towel and microwave for approximately 15 secs or untill cheese begins to melt slightly.
  5. Very delicious, quick, and delicious!

Judy’s Aunt’s Apple Crisp Recipe

INGREDIENTS

  1. 1cupflour
  2. 1cupbrown sugar
  3. 1cupcoconut
  4. 1cuprolled oats
  5. 1cupbutter
  6. 5lbsapples
  7. 1/2cupsugar(aside)

DIRECTIONS

  1. Add sugar to taste to apples as you may want to use less or more apples due to personal taste of sweetness.
  2. Mix the above together making crumbs.
  3. Crumble over sliced apples in a 9×13 pan.
  4. Bake in 350 oven for 30 minutes or until brown on top.
  5. Please watch that the top does not become too brown or it will be too hard to spoon out or eat!

Pizza Pasta Recipe

INGREDIENTS

  1. 1lbextra lean ground beef
  2. 4ouncesturkey pepperoni
  3. 1/2onion
  4. 1/2green pepper
  5. 8ouncescooked whole wheat noodles
  6. 6ouncesVelveeta reduced fat cheese product
  7. 16ouncespizza sauce
  8. 4ouncescheddar cheese

DIRECTIONS

  1. Cook Pasta & drain.
  2. CookGround beef with diced onions & green Peppers.
  3. Spray 13×9 pan. Spread pasta in the bottom. Layer cheese, ground beef & turkey pepperoni. Spread sauce over top and sprinkle with shredded cheese.
  4. Bake @350′ for 30-35 mins or until cheese is melted & bubbly.
  5. Serves 10.
