Beef in Red Wine Gravy Recipe

INGREDIENTS

  1. 1 1/2lbsbeef stew meat, lean cut into 1 inch cubes
  2. 3tablespoonsdried onion flakes
  3. 2teaspoonsbeef bouillon granules
  4. salt and pepper
  5. 1 1/2cupsdry red wine
  6. 12ounceswhole wheat egg noodles, cooked according to package directions

DIRECTIONS

  1. Spray inside of slow cooker with cooking spray or use the slow cooker liners (these are great).
  2. Place stew meat in slow cooker; sprinkle with onions, bouillon granules, cornstarch, salt and pepper.
  3. Pour red wine over beef; cover and cook on low heat for 10 - 12 hours or high heat for 5 - 6 hours.
  4. Serve over cooked noodles.

Black-Eye Pea Salsa Recipe

INGREDIENTS

  1. 2 (15 ounce)cansblack-eyed peas, drained and rinsed
  2. 2 (15 ounce)canswhite shoepeg corn, drained
  3. 1 (10 ounce)can dicedrotel
  4. 12green onions(chopped)
  5. 1bell pepper(seeded and chopped)
  6. 1jalapeno pepper(seeded and chopped)
  7. 1 dicedtomato
  8. 1tablespoon mincedgarlic
  9. 1 (14 ounce)bottle zestyItalian dressing
  10. salt and pepper

DIRECTIONS

  1. Combine all ingredients in large bowl,mix well.
  2. Chill and serve with Frito Scoops or your favorite chips.

Turkey Casserole Recipe

INGREDIENTS

  1. 12ouncescooked turkey breast, cubed
  2. 1 (10 ounce)packagefrozen peas, thawed
  3. 1cup choppedcelery
  4. 1 (8 ounce)cansliced water chestnuts, drained
  5. 2tablespoons choppedgreen peppers
  6. 1tablespoon choppedonions
  7. 1 (10 3/4 ounce)canreduced-fat reduced-sodium condensed cream of chicken soup, undiluted
  8. 1/2cupnonfat milk
  9. 1cup shreddedlow-fat cheddar cheese, divided
  10. 2tablespoonswhite wineor chicken broth
  11. 1tablespoonlemon juice
  12. 1/2teaspoonsalt
  13. 2sliceswhole wheat bread, cubed

DIRECTIONS

  1. In a large bowl, combine the first six ingredients; set aside.
  2. In a small saucepan, combine the soup, milk, 1/2 cup cheese, wine or broth, lemon juice and salt. Cook and stir over low heat until smooth and heated through. Pour over turkey mixture; toss to coat.
  3. Transfer to a 2-qt. baking dish coated with nonstick cooking spray. Top with bread cubes. Bake, uncovered, at 375° for 25 minutes.
  4. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted.

White Chocolate Mousse Recipe

INGREDIENTS

  1. 12 (1 ounce)white chocolate baking squares, coarsely chopped
  2. 2cupsheavy whipping cream, divided
  3. 1tablespoonconfectioners’ sugar
  4. 1teaspoonvanilla extract

DIRECTIONS

  1. In heavy saucepan over medium-low heat, combine chocolate and 2/3 cup cream.
  2. Cook and stir until chocolate is melted and mixture is smooth.
  3. Cool to room temperature.
  4. In small mixing bowl, beat remaining cream with confectioners’ sugar and vanilla until soft peaks form.
  5. Fold about 1/4 cup into chocolate mixture.
  6. Fold in remaining whipped cream mixture.
  7. Spoon into dessert dishes.
  8. Cover and refrigerate for at least two hours.

Classic Barbecue Ribs Recipe

INGREDIENTS

  1. 4lbscountry-style pork ribs, country-style, bone-in
  2. 2teaspoonssalt, divided
  3. 1mediumonion, chopped
  4. 1cuplight brown sugar, firmly packed
  5. 1cupapple butter
  6. 1cupketchup
  7. 1/2cuplemon juice
  8. 1/2cuporange juice
  9. 1tablespoonsteak sauce(suggest A.1. Steak Sauce)
  10. 1teaspoonfresh coarse ground black pepper
  11. 1teaspoongarlic, minced
  12. 1/2teaspoonworcestershire sauce
  13. Garnish

  14. fresh parsley, chopped

DIRECTIONS

  1. Cut ribs apart, if necessary, and trim excess fat; sprinkle 1 teaspoons salt evenly over ribs.
  2. Stir together remaining 1 teaspoons salt, onion, and next 9 ingredients until blended.
  3. Pour half of onion mixture into a 5-qt. slow cooker.
  4. Place ribs in slow cooker, and pour remaining mixture over ribs.
  5. Cover and cook on HIGH 6 to 7 hours or until ribs are tender.
  6. Garnish, if desired.
