Weight Watchers 2pt Layered Mexican Bean Dip (Vegetarian) Recipe

INGREDIENTS

  1. 1 (16 ounce)canfat-free refried beans
  2. 3mediumavocados(finely mashed)
  3. 1/4teaspoonsalt
  4. 1teaspoonfresh lemon juice
  5. 1cupnonfat sour cream
  6. 2tablespoons old el pasofajita seasoning mix
  7. 1/2cup shreddedfat-free cheddar cheese
  8. 1tomato, chopped
  9. 2mediumscallions, chopped
  10. 10mediumblack olives, sliced
  11. 2tablespoons choppedfresh cilantro

DIRECTIONS

  1. Spread beans evenly over bottom of a 13 x 9-inch glass baking dish.
  2. In a bowl combine avocado, salt and lemon juice, then spread the mixture over the beans.
  3. Top with sour cream.
  4. Sprinkle the fajita seasoning over sour cream layer.
  5. Next, layer remaining ingredients on top in order listed.
  6. Serve immediately or chill until ready to use.

Danielle’s Chocolate No-Bake Cookies Recipe

INGREDIENTS

  1. 2cupssugar
  2. 1/2cupunsweetened cocoa
  3. 1/2cupmargarine
  4. 1/2cupmilk
  5. 1/2cuppeanut butter
  6. 3cupsquick oats

DIRECTIONS

  1. Combine oats and peanut butter in a large mixing bowl. Set aside.
  2. In a sauce pan, combine sugar, cocoa, butter and milk. Stirring constantly, bring mixture to a rolling boil. Allow to boil for 1 minute and remove from heat.
  3. Pour contents into the large mixing bowl with oats and peanut butter. Completely mix ingerdients.
  4. On a large piece of wax ( or parchment) paper, drop mixture by spoonfuls.Allow 30 min to cool and harden.

New England Baked Beans ( Crock Pot ) Recipe

INGREDIENTS

  1. 3cupsdried navy beans
  2. 9cupswater
  3. 1mediumonion
  4. 1cupketchup
  5. 1cupbrown sugar
  6. 1cupwater
  7. 2teaspoonsdry mustard
  8. 2tablespoonsmolasses
  9. 1tablespoonsalt, to taste(I use way less!)
  10. 1/4lbsalt pork, diced (optional)

DIRECTIONS

  1. Bring beans and 9 cups water to a boil; reduce heat. Simmer, covered, 1 1/2 hours.
  2. Drain beans; place in Crock Pot.
  3. Stir in remaining ingredients.
  4. Cover and cook on LOW for at least 8 hours.
  5. For Vegetarian omit the pork.

Mongolian Beef Sticks Recipe

INGREDIENTS

  1. 2 1/2lbsflank steaks
  2. 1/2cuphoisin sauce
  3. 2tablespoonspeanut oil
  4. 2tablespoonssesame oil
  5. 2tablespoonsdry sherry
  6. 2tablespoonssoy sauce
  7. 1/2teaspoonsugar
  8. 1/2teaspoonpepper
  9. 1/2teaspoonfresh gingerroot, grated
  10. 1garlic clove

DIRECTIONS

  1. Slice steak diagonally across grain into 1/8 inch thick strips.Place in a large heavy-duty zip-top plastic bag. Set aside.
  2. Combine hoisin sauce and remaining 8 ingredients; stir well.Pour marinade over steak, seal bag securely.Marinate in refrigerator 8 hours, turning occasionally.
  3. Remove steak from marinade, discarding marinade, thread steak onto 32 (6 inch) wooden skewers.Broil strips 3 inches from heat 2 to 3 minutes on each side or to desired degree of doneness.
  4. Note: Unlike metal skewers, wooden skewers can burn under the broiler.make sure you soak wooden skewers in water at least 10 minutes before threading food onto them to prevent any flare-ups.

Layered Nacho Dip Recipe

INGREDIENTS

  1. 16ouncesrefried beans
  2. 2tablespoonstaco seasoning
  3. 1cupguacamole
  4. 8ouncessour cream
  5. 4 1/4ouncesolives, chopped, ripe and drained
  6. 2tomatoes, diced
  7. 1smallonion, finely chopped
  8. 4 1/2ouncesgreen chilies, chopped and drained
  9. 1 1/2cupsmonterey jack cheese, shredded

DIRECTIONS

  1. Combine beans and seasoning mix; spread in an 11×7 inch dish, a 9 or 10 inch deep dish pie plate, or a cast-iron skillet.
  2. Layer dip and remaining ingredients in order listed.
  3. Serve with corn chips.
