INGREDIENTS
- 1 (16 ounce)canfat-free refried beans
- 3mediumavocados(finely mashed)
- 1/4teaspoonsalt
- 1teaspoonfresh lemon juice
- 1cupnonfat sour cream
- 2tablespoons old el pasofajita seasoning mix
- 1/2cup shreddedfat-free cheddar cheese
- 1tomato, chopped
- 2mediumscallions, chopped
- 10mediumblack olives, sliced
- 2tablespoons choppedfresh cilantro
DIRECTIONS
- Spread beans evenly over bottom of a 13 x 9-inch glass baking dish.
- In a bowl combine avocado, salt and lemon juice, then spread the mixture over the beans.
- Top with sour cream.
- Sprinkle the fajita seasoning over sour cream layer.
- Next, layer remaining ingredients on top in order listed.
- Serve immediately or chill until ready to use.

INGREDIENTS
- 2cupssugar
- 1/2cupunsweetened cocoa
- 1/2cupmargarine
- 1/2cupmilk
- 1/2cuppeanut butter
- 3cupsquick oats
DIRECTIONS
- Combine oats and peanut butter in a large mixing bowl. Set aside.
- In a sauce pan, combine sugar, cocoa, butter and milk. Stirring constantly, bring mixture to a rolling boil. Allow to boil for 1 minute and remove from heat.
- Pour contents into the large mixing bowl with oats and peanut butter. Completely mix ingerdients.
- On a large piece of wax ( or parchment) paper, drop mixture by spoonfuls.Allow 30 min to cool and harden.

INGREDIENTS
- 3cupsdried navy beans
- 9cupswater
- 1mediumonion
- 1cupketchup
- 1cupbrown sugar
- 1cupwater
- 2teaspoonsdry mustard
- 2tablespoonsmolasses
- 1tablespoonsalt, to taste(I use way less!)
- 1/4lbsalt pork, diced (optional)
DIRECTIONS
- Bring beans and 9 cups water to a boil; reduce heat. Simmer, covered, 1 1/2 hours.
- Drain beans; place in Crock Pot.
- Stir in remaining ingredients.
- Cover and cook on LOW for at least 8 hours.
- For Vegetarian omit the pork.

INGREDIENTS
- 2 1/2lbsflank steaks
- 1/2cuphoisin sauce
- 2tablespoonspeanut oil
- 2tablespoonssesame oil
- 2tablespoonsdry sherry
- 2tablespoonssoy sauce
- 1/2teaspoonsugar
- 1/2teaspoonpepper
- 1/2teaspoonfresh gingerroot, grated
- 1garlic clove
DIRECTIONS
- Slice steak diagonally across grain into 1/8 inch thick strips.Place in a large heavy-duty zip-top plastic bag. Set aside.
- Combine hoisin sauce and remaining 8 ingredients; stir well.Pour marinade over steak, seal bag securely.Marinate in refrigerator 8 hours, turning occasionally.
- Remove steak from marinade, discarding marinade, thread steak onto 32 (6 inch) wooden skewers.Broil strips 3 inches from heat 2 to 3 minutes on each side or to desired degree of doneness.
- Note: Unlike metal skewers, wooden skewers can burn under the broiler.make sure you soak wooden skewers in water at least 10 minutes before threading food onto them to prevent any flare-ups.

- 2tablespoonstaco seasoning
- 1cupguacamole
- 8ouncessour cream
- 4 1/4ouncesolives, chopped, ripe and drained
- 2tomatoes, diced
- 1smallonion, finely chopped
- 4 1/2ouncesgreen chilies, chopped and drained
- 1 1/2cupsmonterey jack cheese, shredded
DIRECTIONS
- Combine beans and seasoning mix; spread in an 11×7 inch dish, a 9 or 10 inch deep dish pie plate, or a cast-iron skillet.
- Layer dip and remaining ingredients in order listed.
- Serve with corn chips.
