Cranberry-Brie Bites Recipe

INGREDIENTS

  1. 1 1/2cupscranberry sauce
  2. 1puff pastry sheet, thawed flat
  3. 8ouncesbrie cheese, cut into 1 inch slices
  4. 1/3cupslivered almonds (optional)

DIRECTIONS

  1. Cut puff pastry into 3 inch squares.Place squares in mini muffin tins, pressing down into the shape of the tin.
  2. Place a 1 inch piece of brie on puff pastry, and top cheese with 1 tablespoon of cranberry sauce.Spinkle with almonds.Repeat process to fill all muffin tins.
  3. Bake at 375 degrees for 8-10 minutes or until pastry is golden brown on edges.
  4. Allow pastry to cool for 5 minutes before serving.

Seashells’ Crock Pot BBQ Ribs! Recipe

INGREDIENTS

  1. 3 1/2lbspork back ribsor beef ribs
  2. 1/4cupbrown sugar, packed
  3. 1teaspoonsalt
  4. 1/2teaspoonpepper
  5. 2-3tablespoonsliquid smoke
  6. 2garlic cloves, chopped
  7. 1mediumonion, sliced
  8. 1/2cupcola
  9. 1 1/2cupsbarbecue sauce, your favorite

DIRECTIONS

  1. Spray inside of 4 to 5 quart slow cooker with cooking spray.
  2. Remove inner skin from ribs.
  3. Mix brown sugar, salt, pepper, liquid smoke and garlic.
  4. Rub mixture into ribs.
  5. Cut ribs into 4 inch pieces.
  6. Layer ribs and onion in crock pot.
  7. Pour cola over ribs.
  8. Cover and cook on low heat setting 8 to 9 hours or until tender.
  9. Remove ribs from pot.
  10. Drain and discard liquid.
  11. Pour BBQ sauce into shallow bowl.
  12. Dip ribs into sauce.
  13. Place ribs in crock pot
  14. Pour any remaining sauce over ribs.
  15. Cover and cook on low heat setting one more hour.

Creamy Rice, Chicken & Spinach Dinner Recipe

INGREDIENTS

  1. 1/4cupKraft roasted red pepper italian parmesan dressing
  2. 1lbboneless skinless chicken breasts, cut into strips
  3. 1 1/2cupsfat free chicken broth
  4. 2cupsMinute brown rice, uncooked
  5. 4ouncesneufchatel cheese, cubed
  6. 8ouncesbaby spinach leaves
  7. 1mediumtomato, chopped
  8. 2tablespoons gratedparmesan cheese

DIRECTIONS

  1. Heat dressing in a large, deep skillet on medium-high heat.
  2. Add chicken; cook for 3 minutes.
  3. Add broth; bring to a boil.
  4. Stir in rice; return to a boil, cover and reduce heat to medium; simmer 5 minutes.
  5. Stir neufchatel cheese into rice mixture until melted.
  6. Add spinach; cover.Cook until spinach is wilted.
  7. Stir rice mixture gently to mix in spinach.Cover.
  8. Remove from heat; let stand 5 minutes.
  9. Stir in tomatoes and sprinkle with parmesan cheese.

Walnut Cookie Bars (With Shortbread Crust) Recipe

INGREDIENTS

  1. SHORTBREAD CRUST

  2. 1cupflour
  3. 2/3cupsugar
  4. 1/2cup very coldbutter(cut into pieces, no substitutes)
  5. 2teaspoonsvanilla
  6. TOPPING

  7. 2/3cuplight brown sugar, packed
  8. 1/2cupcorn syrup
  9. 1pinchsalt
  10. 2teaspoonsvanilla
  11. 3largeeggs
  12. 1 1/2cups choppedwalnuts

DIRECTIONS

  1. Set oven to 350 degrees (oven rack to second-lowest position).
  2. Grease a 13 x 9-inch baking dish.
  3. In a processor (I use my small processor for this) place the flour and sugar, process for a couple of seconds.
  4. Add in cold butter and vanilla; process until fine crumbs form (about 10 seconds or just until the mixture holds together).
  5. Press the mixture into bottom of the baking pan.
  6. Bake 350 degrees (second-lowest oven rack) for about 12-15 minutes or until the edges are just golden brown.
  7. Meanwhile in a bowl whisk together brown sugar, corn syrup, 2 teaspoons vanilla, pinch salt and eggs until well blended.
  8. Mix in chopped walnuts.
  9. Pour over the crust.
  10. Bake for about 20 minutes or until set (these bars do not bake out high so watch closely they bake quickly!).
  11. Cool for about 1 hour or more before slicing.
  12. At this point you can drizzle with melted chocolate if desired.
  13. Slice into bar shapes.

London Bars Recipe

INGREDIENTS

  1. 1/2cupbutter
  2. 1cupflour
  3. 1/2cupbrown sugar
  4. 1cupbrown sugar
  5. 2eggs, beaten
  6. 1teaspoonvanilla
  7. 3tablespoonsflour
  8. 1/2teaspoonsalt
  9. 1 1/2cupscoconut

DIRECTIONS

  1. Blend first three ingredients and spread into pan.
  2. Push down with fingers.
  3. Bake for 10 minutes at 375 degrees.
  4. Mix remaining ingredients and pour over first mixture.
  5. Replace in oven and bake 20 minutes longer.
