INGREDIENTS
- 1 1/2cupscranberry sauce
- 1puff pastry sheet, thawed flat
- 8ouncesbrie cheese, cut into 1 inch slices
- 1/3cupslivered almonds (optional)
DIRECTIONS
- Cut puff pastry into 3 inch squares.Place squares in mini muffin tins, pressing down into the shape of the tin.
- Place a 1 inch piece of brie on puff pastry, and top cheese with 1 tablespoon of cranberry sauce.Spinkle with almonds.Repeat process to fill all muffin tins.
- Bake at 375 degrees for 8-10 minutes or until pastry is golden brown on edges.
- Allow pastry to cool for 5 minutes before serving.

INGREDIENTS
- 3 1/2lbspork back ribsor beef ribs
- 1/4cupbrown sugar, packed
- 1teaspoonsalt
- 1/2teaspoonpepper
- 2-3tablespoonsliquid smoke
- 2garlic cloves, chopped
- 1mediumonion, sliced
- 1/2cupcola
- 1 1/2cupsbarbecue sauce, your favorite
DIRECTIONS
- Spray inside of 4 to 5 quart slow cooker with cooking spray.
- Remove inner skin from ribs.
- Mix brown sugar, salt, pepper, liquid smoke and garlic.
- Rub mixture into ribs.
- Cut ribs into 4 inch pieces.
- Layer ribs and onion in crock pot.
- Pour cola over ribs.
- Cover and cook on low heat setting 8 to 9 hours or until tender.
- Remove ribs from pot.
- Drain and discard liquid.
- Pour BBQ sauce into shallow bowl.
- Dip ribs into sauce.
- Place ribs in crock pot
- Pour any remaining sauce over ribs.
- Cover and cook on low heat setting one more hour.

INGREDIENTS
- 1/4cupKraft roasted red pepper italian parmesan dressing
- 1lbboneless skinless chicken breasts, cut into strips
- 1 1/2cupsfat free chicken broth
- 2cupsMinute brown rice, uncooked
- 4ouncesneufchatel cheese, cubed
- 8ouncesbaby spinach leaves
- 1mediumtomato, chopped
- 2tablespoons gratedparmesan cheese
DIRECTIONS
- Heat dressing in a large, deep skillet on medium-high heat.
- Add chicken; cook for 3 minutes.
- Add broth; bring to a boil.
- Stir in rice; return to a boil, cover and reduce heat to medium; simmer 5 minutes.
- Stir neufchatel cheese into rice mixture until melted.
- Add spinach; cover.Cook until spinach is wilted.
- Stir rice mixture gently to mix in spinach.Cover.
- Remove from heat; let stand 5 minutes.
- Stir in tomatoes and sprinkle with parmesan cheese.

INGREDIENTS

SHORTBREAD CRUST
- 1cupflour
- 2/3cupsugar
- 1/2cup very coldbutter(cut into pieces, no substitutes)
- 2teaspoonsvanilla

TOPPING
- 2/3cuplight brown sugar, packed
- 1/2cupcorn syrup
- 1pinchsalt
- 2teaspoonsvanilla
- 3largeeggs
- 1 1/2cups choppedwalnuts
DIRECTIONS
- Set oven to 350 degrees (oven rack to second-lowest position).
- Grease a 13 x 9-inch baking dish.
- In a processor (I use my small processor for this) place the flour and sugar, process for a couple of seconds.
- Add in cold butter and vanilla; process until fine crumbs form (about 10 seconds or just until the mixture holds together).
- Press the mixture into bottom of the baking pan.
- Bake 350 degrees (second-lowest oven rack) for about 12-15 minutes or until the edges are just golden brown.
- Meanwhile in a bowl whisk together brown sugar, corn syrup, 2 teaspoons vanilla, pinch salt and eggs until well blended.
- Mix in chopped walnuts.
- Pour over the crust.
- Bake for about 20 minutes or until set (these bars do not bake out high so watch closely they bake quickly!).
- Cool for about 1 hour or more before slicing.
- At this point you can drizzle with melted chocolate if desired.
- Slice into bar shapes.

- 1/2cupbrown sugar
- 1cupbrown sugar
- 2eggs, beaten
- 1teaspoonvanilla
- 3tablespoonsflour
- 1/2teaspoonsalt
- 1 1/2cupscoconut
DIRECTIONS
- Blend first three ingredients and spread into pan.
- Push down with fingers.
- Bake for 10 minutes at 375 degrees.
- Mix remaining ingredients and pour over first mixture.
- Replace in oven and bake 20 minutes longer.
