Mango & Red Onion Salad Recipe

INGREDIENTS

  1. 2cupsfresh mango, cubed
  2. 1/2cupcherry tomatoes, cut in half
  3. 1/4cupred onions, minced
  4. 2tablespoonsfresh lime juice
  5. 1/2teaspoonground cumin
  6. salt and pepper

DIRECTIONS

  1. Mix first 5 ingredients together.
  2. Season salad with salt and pepper to taste.

Arm Roast Sloppy Joes Recipe

INGREDIENTS

  1. 5lbsarm roast(excess fat removed)
  2. 24ounces delmontechili sauce
  3. 1/2cupcider vinegar
  4. 3/4cup lea&perrinsworcestershire sauce
  5. 3/4cupdark brown sugar
  6. 2 chopped largeonions
  7. 1head mincedgarlic
  8. 1/4cupvegetable oil

DIRECTIONS

  1. In hot Dutch oven, brown arm roast in oil.
  2. Cover and simmer for 1 1/2 hours adding water if necessary (if lid fits well, adding water shouldn’t be necessary).
  3. Add onion and garlic and continue simmering for 1 hour, oruntil beef is fork tender.
  4. With two forks, break meat into coarse shreds and chunks.
  5. Add remaining ingredients, bring back to a simmer.
  6. Cover and simmer 1 hour.
  7. Grill lightly buttered hamburger buns and pile on the meat.

Mrs. Fields Pumpkin Spice Cookies Recipe

INGREDIENTS

  1. 2 1/2cupsflour
  2. 1/2teaspoonbaking soda
  3. 1/4teaspoonsalt
  4. 2teaspoonspumpkin pie spice
  5. 1cupdark brown sugar, packed(light is okay too)
  6. 1/2cupwhite sugar
  7. 1/4cupbutter, softened
  8. 1egg
  9. 1cuppumpkin(canned or freshly cooked)
  10. 1teaspoonpure vanilla extract
  11. 1cupraisins
  12. 1/2cupwalnuts, chopped

DIRECTIONS

  1. Preheat oven to 300°F.
  2. Combine flour, soda, salt, and pumpkin pie spice in a medium bowl.Mix well with a wire whisk and set aside.
  3. In a large bowl, blend sugars with an electric mixer.Add the butter and beat to form a grainy mixture.Then add egg, pumpkin and vanilla.Beat at medium speed until light and fluffy.
  4. Add the flour mixture, raisins and walnuts.Blend at low speed until combined.DO NOT OVERMIX.
  5. Drop by rounded teaspoons onto ungreased cookie sheet.
  6. Bake about 20 minutes or until cookies are slightly brown around the edges.

Blackbird Pie……or Chicken, Leek & Potato Pie! Recipe

INGREDIENTS

  1. 2 (225 g)packetsshortcrust pastry
  2. 500gmashed potatoes
  3. 2cooked chicken breasts, cut into small pieces
  4. 4-6 cookedleeks
  5. 50gcooked ham, cut into dice
  6. 3-4tablespoonscreme fraiche or2-3 tablespoonscream
  7. 1/2teaspoonmixed herbs
  8. salt
  9. pepper
  10. GLAZE

  11. 1egg, beaten with a little
  12. milk

DIRECTIONS

  1. Pre-heat oven to 200C/400°F.
  2. Grease and line a pie dish with baking paper.
  3. Mix together your mashed potato, leeks, chicken, ham, crème fraiche & seasonings to taste. Set to one side.
  4. Roll out your pastry and line the base of the pie dish - allow the edges to extend over the edge of the pie dish.
  5. Put you filling into the pastry pie case - and sit your blackbird or pie funnel in the middle, pushing it down slightly so it is not too high.
  6. Turn back the pastry edges and make a raised crust all the way around. Dampen the piecrust with some of the beaten egg & milk mixture.
  7. Roll out your pastry for the lid - ease it over the top gently breaking OR cutting a hole for the blackbird to poke through!
  8. Turn back the edges of the pastry lid and neatly crimp the top together with the bottom - using a fork to help you if necessary.
  9. Brush the beaten egg and milk glaze over the top and bake in the pre-heated oven for about 45 minutes.
  10. Take out and allow to cool very slightly before serving with fresh vegetables & gravy. This is also wonderful cold as picnic food.

Easy Cheesy Topped Burgers Recipe

INGREDIENTS

  1. 2 1/2cupscheddar cheese, shredded
  2. 8slicesbacon, cooked drained and chopped
  3. 1/3cupmayonnaise
  4. 2tablespoonsketchup
  5. 2teaspoonsred pepper sauce
  6. 3lbslean ground beef, formed into 12 burgers

DIRECTIONS

  1. Heat grill to medium.
  2. Mix cheese, bacon, mayonnaise, ketchup and pepper sauce in small bowl.
  3. Grill burgers almost to desired doneness.
  4. Top each burger with 1/4 C of cheese mixture; cook, covered, until cheese is melted, about 3-4 minutes.
  5. Serve on hamburger buns.
