INGREDIENTS
- 1 (20 ounce)cancrushed pineapple
- 1 (10 ounce)canmandarin oranges
- 1 (8 ounce)packagecream cheese
- 1 (6 ounce)packageapricot gelatin
- 1/2cupwhipped cream
- choppednuts
DIRECTIONS
- Drain pineapple and oranges, reserving 1 cup pineapple syrup. Soften cream cheese; whip until fluffy.
- Dissolve gelatin in 3 cups boiling water; stir in reserved pineapple syrup and cream cheese.
- Chill until partially thickened; fold in fruits and whipped cream.
- Pour into pan or mold; sprinkle with nuts. Chill until firm.

- 2cupswater
- 1tablespoonvegetable oil
- 2tablespoonscoconut milk (optional)
- 1/2teaspoonsalt
- 1cupwhite rice
DIRECTIONS
- In saucepan over medium heat bring water, oil and coconut milk to a boil.
- Add salt and rice, reduce heat to low and cook covered until water absorbed, about 25 minutes.

INGREDIENTS
- 12slicesbread
- 2cups choppedcooked chicken
- 1cup slicedcelery
- 1 (4 ounce)can choppedmushrooms (optional)
- 2cupsmilk
- 4eggs, beaten
- 1cupmayonnaise
- salt
- pepper
- 1 (10 ounce)cancream of chicken soup
- 1/2lbcheddar cheese, grated
DIRECTIONS
- Trim bread. Arrange half the bread in 13 X 9 inch pan; sprinkle with chicken, celery, onion and mushrooms.
- Cover with remaining bread.
- Combine milk, eggs, mayonnaise, salt and pepper; pour over bread.
- Refrigerate overnight.
- Pour soup over top.
- Bake at 325 degrees for 45 minutes.
- Cover with cheese; bake for 15 minutes longer.

- 1/2cupraspberries
- 1/2cupblackberries
- 1cupskim milk
- Splenda sugar substitute, to taste
DIRECTIONS
- Blend all ingredients together!
- Drink.

INGREDIENTS
- 1 1/2tablespoonsMalibu rumor coconut rum
- 1 1/2tablespoonsGrand Marnieror Cointreau liqueuror triple sec
- 2 1/2tablespoonscranberry juice
- 1 1/2tablespoonspineapple juice
- Sprite, splash
DIRECTIONS
- Fill a cocktail shaker with ice and add rum, liqueur and juices.
- Shake well and strain into a chilled martini glass.
- Top with a splash of Sprite.
