INGREDIENTS
- 10ouncesfrozen chopped broccoli, microwaved about 6 minutes to thaw
- 2cupscooked rice
- 2 1/2cupssharp cheddar cheese, shredded and divided
- 2 (10 1/2 ounce)canscream of chicken soup
- 1 (5 ounce)canCarnation Evaporated Milk
- 1onion, diced
- 1/2cupcelery, diced
- 1 (5 ounce)canTyson premium chunk chicken(I sometimes use 2 or the large can when I’m treating this as a one-dish meal)
- 1/2teaspoonsalt
- 1/2teaspoonpepper
- 2tablespoonsbutter
DIRECTIONS
- Saute onions and celery in butter until soft.Add chicken, salt, and pepper.Saute a minute or so to marry flavors.
- In a large bowl, combine soups, milk, rice, broccoli, onion/chicken mixture.Fold in 2 cups cheese.
- Pour into a greased 2 quart casserole dish.Top with remaining 1/2 cup cheese (I sometimes use more — it’s terrible, I know! ;).
- Bake at 350 degrees for 30-40 minutes uncovered.

INGREDIENTS
- 1 1/8cupswhole wheat flour(pastry)
- 1/8cupsugar
- 3teaspoonsbaking powder
- 1/2teaspoonsalt
- 1teaspooncinnamon
- 1cupquick oats
- 1egg, slightly beaten
- 1cupskim milk
- 3tablespoonsvegetable oil
- 1apple, chopped
DIRECTIONS
- Preheat oven to 425 degrees.
- Mix together the dry ingredients in a big bowl ( this does not include the apples).
- In a separate bowl, mix the wet ingredients (this also doesn’t include the apples).
- Pour the wet ingredients into the dry, stir until just moist.
- Add the apples, stir only until they’re well distributed.
- Pour into greased muffin tins, fill almost to the top (these don’t rise much).
- Bake at 425 degrees for 15 minutes.

INGREDIENTS
- 3/4cupreduced-fat mayonnaise
- 1/4cupfresh tarragon, chopped
- 4teaspoonstarragon vinegar
- 2boneless skinless chicken breast halves
- 3tablespoonsolive oil
- 6garlic cloves, minced
- 3mediumzucchini, trimmed, cut lengthwise into 1/3-inch-thick slices
- 1largered onion, cut into 1/3-inch -thick slices
- 4kaiser rolls, split horizontally
- 8slicestomatoes
DIRECTIONS
- Blend first 3 ingredients in bowl; season mayonnaise with salt and pepper.
- Using meat mallet, flatten chicken breast halves in plastic bag to 1/2-inch thickness; cut chicken crosswise in half. Place on sheet of foil. Brush chicken with 1 tablespoon oil; sprinkle with half of garlic, then salt and pepper.
- Place zucchini and onion slices on sheet of foil and brush with remaining 2 tablespoons oil; sprinkle with remaining garlic, then salt and pepper.
- Prepare barbecue (medium-high heat). Grill chicken pieces until cooked through, about 5 minutes per side; transfer to work surface. Grill vegetables until softened slightly and charred, about 7 minutes per side for onion and 5 minutes per side for zucchini. Transfer to work surface.
- Grill rolls until toasted, about 2 minutes per side. Spread tarragon mayonnaise on roll bottoms; top with 1 chicken piece, 1/4 of grilled vegetables, and 2 tomato slices. Cover with roll tops.

INGREDIENTS
- 1lbspaghetti
- 4tablespoons softbutter
- 1lbbaconor ham, diced
- 1/4teaspoonred pepper flakes (optional)
- 3garlic cloves, minced
- 4eggs, beaten
- 1cupparmesan cheese, grated
- 1/4-1/2cuphalf-and-half creamor cream
- 2tablespoonsparsley
DIRECTIONS
- Add spaghetti to boiling water; when soft, drain & rinse; drop in butter, stir, keep warm & set aside.
- While spaghetti is cooking, fry bacon just until lightly crisped; remove from pan and cut or crumble to bite-size pieces; reserve 2-3 T. fat.
- To hot fat in frying pan, add pepper flakes and garlic; stir for 30 seconds; remove from heat.
- Break eggs into medium bowl, with an egg beater beat until frothy, then stir in Parmesan cheese; set aside.
- Add half-n-half to frying pan, stirring up fond and thickening slightly.
- Dump spaghetti into large serving bowl, then add meat mixture and toss well; then cheese mixture, toss well.
- Sprinkle on the parsley.
- Serve with additional Parmesan (the good stuff).

- 1/2bunchfresh mint leaves
DIRECTIONS
- Combine rum, lemonade and mint in a large pitcher.
- Pour into glasses filled with ice.
