INGREDIENTS

Topping
- 2/3cupall-purpose flour
- 1/3cup packedlight-brown sugar
- 1/3cupgranulated sugar
- 2teaspoonspumpkin pie spice
- 1/8teaspoonsalt
- 6tablespoons coldunsalted butter, cut into small pieces
- 1 2/3cupswalnuts, coarsely chopped

Cake
- 2 1/4cupsall-purpose flour
- 1teaspoonbaking powder
- 1/2teaspoonbaking soda
- 1/2teaspoonpumpkin pie spice
- 1/4teaspoonsalt
- 6tablespoonsunsalted butter, at room temp
- 1/2cup packedlight-brown sugar
- 1/2cupgranulated sugar
- 2eggs
- 1teaspoonvanilla extract
- 1cupbuttermilk
- 1cupconfectioners’ sugar
- 1-2tablespoonmilk
DIRECTIONS
- Heat oven to 350 degrees F.
- Coat an 8-inch baking pan with nonstick cooking spray.
- Topping: In a medium bowl stir together flour, sugars, pumpkin pie spice and salt. With a pastry cutter,cut butter into the mixture.Stir in walnuts. Refrigerate.
- Cake:In a large bowl, whisk together the flour, baking powder, baking soda, pumpking pie spice and salt.Set aside.
- In another large bowl, beat butter and sugars on medium speed until creamy and blended, about 3 minutes. Beat in eggs, one at a time.Add vanilla and beat until smooth.
- On low speed, beat in the flour mixture in three additions, alternating with buttermilk.Beat for 2 minutes.
- Spoon half of the batter into the prepared pan.Sprinkle half of the topping over the batter. Spoon remaining batter over topping.Sprinkle remaining topping over top of cake.
- Bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted in center of cake comes out clean. Cool completely on wire rack.Loosen edges with a knife or small spatula.Cut into 12 equal pieces.
- In a small bowl, mix together confectioners’ sugar and just enough milk to get a good drizzling consistency.Drizzle over cake squares and allow to set before serving.

INGREDIENTS
- 1 (6 ounce)canwhite crab meat, drained, flaked
- 4ouncesneufchatel cheese, 1/3 less fat than cream cheese, softened
- 1/4cup thinly slicedgreen onions
- 1/4cuplight mayonnaise
- 12wonton wrappers
DIRECTIONS
- Preheat oven to 350 degrees.
- Mix crab meat, Neufchatel cheese, onions and mayo.
- Spray 12 medium muffin cups with cooking spray.
- Gently place one won ton wrapper in each cup, allowing edges of wrappers to extend above side of cups.
- Fill evenly with crab meat mixture.
- Bake 18 to 20 minutes or until edges are golden brown and filling is heated through.
- Serve warm.
- Garnish with chopped green onions, if desired.

INGREDIENTS
- 1/2cupbutteror margarine
- 2/3cupgranulated sugar
- 2eggs
- 1 1/2cupsall-purpose flour
- 1teaspoonground cinnamon
- 1teaspoonallspice
- 2teaspoonsbaking powder
- 1/2teaspoonbaking soda
- 1cupapplesauce
DIRECTIONS
- Preheat oven 350 degrees F. Line mini muffin pan with paper liners (or grease with cooking spray).
- In a large bowl, cream together the butter or margarine and sugar.
- Add eggs and beat until smooth.
- Blend in cinnamon, allspice, baking powder and baking soda.
- Alternately add ina half a cup of applesauce, one cup of flour, remaining applesauce, and remaining flour.
- Stir just until blended together.
- Pour batter into mini muffin cups 2/3’s of the way full.
- Bake in preheated 350 degree F oven for 17 to 20 minutes.

INGREDIENTS
- 1 (16 ounce)package veggierotini pasta
- 1stalkcelery(chopped)
- 1bell pepper(chopped)
- 1mediumonion(chopped)
- sweet pickles(chopped)
- olives(sliced)
- 3tablespoonsmayonnaise
- 16ouncesranch salad dressing
- salt & pepper
DIRECTIONS
- Boil 4 quarts of water.
- Salt to taste (optional).
- Add pasta to boiling water and stir.
- Cook 10-12 minutes or until done.
- Drain and rinse under cold water and drain again.
- In Large bowl add pasta and ALL other ingredents and stir all together.
- Cover and refrigerate several hours.

INGREDIENTS
- 2cupsblueberries(frozen or fresh)
- 3/4cupsugar
- 1 1/2tablespoonsflour
- 1/8teaspoonsalt
- 1/2teaspooncinnamon (optional)
- 1teaspoonlemon juice (optional)
- 1tablespoonbutter
DIRECTIONS
- Line an 8″ pie plate with crust.
- Pour in the blueberries.
- Mix together the rest of the ingredients and scatter over the blueberries.
- Dot with pieces of the butter.
- Put the top crust on.
- Bake t 450 dgrees for 10 minutes; then reduce to 350 degrees and continue baking for another 35-40 minutes or till done.
