Spiced Walnut Coffee Cake Recipe

INGREDIENTS

  1. Topping

  2. 2/3cupall-purpose flour
  3. 1/3cup packedlight-brown sugar
  4. 1/3cupgranulated sugar
  5. 2teaspoonspumpkin pie spice
  6. 1/8teaspoonsalt
  7. 6tablespoons coldunsalted butter, cut into small pieces
  8. 1 2/3cupswalnuts, coarsely chopped
  9. Cake

  10. 2 1/4cupsall-purpose flour
  11. 1teaspoonbaking powder
  12. 1/2teaspoonbaking soda
  13. 1/2teaspoonpumpkin pie spice
  14. 1/4teaspoonsalt
  15. 6tablespoonsunsalted butter, at room temp
  16. 1/2cup packedlight-brown sugar
  17. 1/2cupgranulated sugar
  18. 2eggs
  19. 1teaspoonvanilla extract
  20. 1cupbuttermilk
  21. 1cupconfectioners’ sugar
  22. 1-2tablespoonmilk

DIRECTIONS

  1. Heat oven to 350 degrees F.
  2. Coat an 8-inch baking pan with nonstick cooking spray.
  3. Topping: In a medium bowl stir together flour, sugars, pumpkin pie spice and salt. With a pastry cutter,cut butter into the mixture.Stir in walnuts. Refrigerate.
  4. Cake:In a large bowl, whisk together the flour, baking powder, baking soda, pumpking pie spice and salt.Set aside.
  5. In another large bowl, beat butter and sugars on medium speed until creamy and blended, about 3 minutes. Beat in eggs, one at a time.Add vanilla and beat until smooth.
  6. On low speed, beat in the flour mixture in three additions, alternating with buttermilk.Beat for 2 minutes.
  7. Spoon half of the batter into the prepared pan.Sprinkle half of the topping over the batter. Spoon remaining batter over topping.Sprinkle remaining topping over top of cake.
  8. Bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted in center of cake comes out clean. Cool completely on wire rack.Loosen edges with a knife or small spatula.Cut into 12 equal pieces.
  9. In a small bowl, mix together confectioners’ sugar and just enough milk to get a good drizzling consistency.Drizzle over cake squares and allow to set before serving.

Baked Crab Rangoon Recipe

INGREDIENTS

  1. 1 (6 ounce)canwhite crab meat, drained, flaked
  2. 4ouncesneufchatel cheese, 1/3 less fat than cream cheese, softened
  3. 1/4cup thinly slicedgreen onions
  4. 1/4cuplight mayonnaise
  5. 12wonton wrappers

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Mix crab meat, Neufchatel cheese, onions and mayo.
  3. Spray 12 medium muffin cups with cooking spray.
  4. Gently place one won ton wrapper in each cup, allowing edges of wrappers to extend above side of cups.
  5. Fill evenly with crab meat mixture.
  6. Bake 18 to 20 minutes or until edges are golden brown and filling is heated through.
  7. Serve warm.
  8. Garnish with chopped green onions, if desired.

Delightful Apple Spice Mini Muffins Recipe

INGREDIENTS

  1. 1/2cupbutteror margarine
  2. 2/3cupgranulated sugar
  3. 2eggs
  4. 1 1/2cupsall-purpose flour
  5. 1teaspoonground cinnamon
  6. 1teaspoonallspice
  7. 2teaspoonsbaking powder
  8. 1/2teaspoonbaking soda
  9. 1cupapplesauce

DIRECTIONS

  1. Preheat oven 350 degrees F. Line mini muffin pan with paper liners (or grease with cooking spray).
  2. In a large bowl, cream together the butter or margarine and sugar.
  3. Add eggs and beat until smooth.
  4. Blend in cinnamon, allspice, baking powder and baking soda.
  5. Alternately add ina half a cup of applesauce, one cup of flour, remaining applesauce, and remaining flour.
  6. Stir just until blended together.
  7. Pour batter into mini muffin cups 2/3’s of the way full.
  8. Bake in preheated 350 degree F oven for 17 to 20 minutes.

Mom’s Wacky Salad Recipe

INGREDIENTS

  1. 1 (16 ounce)package veggierotini pasta
  2. 1stalkcelery(chopped)
  3. 1bell pepper(chopped)
  4. 1mediumonion(chopped)
  5. sweet pickles(chopped)
  6. olives(sliced)
  7. 3tablespoonsmayonnaise
  8. 16ouncesranch salad dressing
  9. salt & pepper

DIRECTIONS

  1. Boil 4 quarts of water.
  2. Salt to taste (optional).
  3. Add pasta to boiling water and stir.
  4. Cook 10-12 minutes or until done.
  5. Drain and rinse under cold water and drain again.
  6. In Large bowl add pasta and ALL other ingredents and stir all together.
  7. Cover and refrigerate several hours.

Down East Blueberry Pie Recipe

INGREDIENTS

  1. 2cupsblueberries(frozen or fresh)
  2. 3/4cupsugar
  3. 1 1/2tablespoonsflour
  4. 1/8teaspoonsalt
  5. 1/2teaspooncinnamon (optional)
  6. 1teaspoonlemon juice (optional)
  7. 1tablespoonbutter

DIRECTIONS

  1. Line an 8″ pie plate with crust.
  2. Pour in the blueberries.
  3. Mix together the rest of the ingredients and scatter over the blueberries.
  4. Dot with pieces of the butter.
  5. Put the top crust on.
  6. Bake t 450 dgrees for 10 minutes; then reduce to 350 degrees and continue baking for another 35-40 minutes or till done.
