Yule Pudding Candy Recipe

INGREDIENTS

  1. 3cupsgranulated sugar
  2. 1cuplight cream
  3. 1 1/2tablespoonsunsalted butter
  4. 1teaspoonvanilla extract
  5. 1lbdates, chopped
  6. 1lbfigs, chopped
  7. 1lbdark raisins
  8. 1lbunsweetened coconut, finely flaked
  9. 2cupswalnuts, chopped

DIRECTIONS

  1. Cook the sugar, cream & butter “to a soft ball.”.
  2. Add vanilla & beat until creamy, then stir in the rest of the ingredients.
  3. When well combined, form the mixture into a loaf.
  4. Wrap the loaf in damp cheese cloth, then in wax paper & put in the refrigerator to ripen for at least 2 weeks.

Yummy Chocolate Fondue for a Crowd Recipe

INGREDIENTS

  1. 1lbsemisweet chocolate, premium and chopped
  2. 2/3cupheavy cream
  3. 3tablespoonsAmaretto
  4. 1lbfruit, cut into bite size pieces(such as apples, bananas, strawberries)

DIRECTIONS

  1. Place chocolate pieces in double boiler.Heat on low over a stovetop until chocolate is mostly melted.
  2. Add cream and stir completely.
  3. Heat mixture on low until it is smooth and even consistency, about 10 minutes.
  4. Add Amaretto nnd stir briefly for 1 minute.
  5. Remove immediately from stovetop.Place pot over fondue warmer if you have a one.
  6. Dip fruit in fondue using fondue forks or toothpicks.

Maine Wild Blueberry Salsa Recipe

INGREDIENTS

  1. 2medium heirloomtomatoes
  2. 1cupwild blueberries(fresh or frozen)
  3. 3/4cup choppedsweet onions
  4. 2garlic cloves, minced
  5. 2tablespoonsrice vinegar
  6. 2tablespoonsolive oil
  7. 1jalapeno pepper, finely chopped
  8. 1/2 hungarianhot pepper, finely chopped
  9. 2tablespoons choppedfresh cilantro
  10. 2tablespoons choppedflat-leaf Italian parsley
  11. salt and pepper

DIRECTIONS

  1. Bring a pot of water to a boil.
  2. Score the skin of the tomatoes by slicing an X into the skin on the bottom.
  3. Immerse the tomatoes in boiling water for about 15 seconds.
  4. Remove and place into a bowl of cold water.
  5. The skins should slip off easily.
  6. Peel the tomatoes, cut in half and remove the seeds.
  7. Chop the tomatoes and discard the seeds.
  8. In a medium bowl, combine the tomatoes, blueberries, onion, garlic, jalapeno pepper, Hungarian pepper, cilantro and parsley.
  9. Pour in the rice vinegar and olive oil and stir gently to mix.
  10. Season with salt and pepper.
  11. Cover and store in the refrigerator overnight to allow the flavors to blend.
  12. You may wish to drain the salsa slightly before serving, depending on how juicy your tomatoes are.
  13. ***Cook time doesn’t include overnight refrigeration.

Twinkie Dessert Recipe

INGREDIENTS

  1. 10Hostess Twinkies(Split Lengthwise)
  2. 4-5bananas(Sliced)
  3. 1 (12 ounce)boxinstant vanilla pudding(use dry)
  4. 1 (20 ounce)cancrushed pineapple(drained)
  5. 1 (12 ounce)containerCool Whip

DIRECTIONS

  1. Layer the Twinkies in a a 13 X 9 dish placing the cream side up.
  2. Slice bananas on top of Twinkies. Set Aside.
  3. Mix in a bowl Vanilla Pudding (use it dry remember) 1 20oz can of crushed pineapple (drained) Mix together well.
  4. Fold in 1 12 oz cool whip.
  5. Keep refrigerated.
