INGREDIENTS
- 2 1/4cupsbutter-flavored cracker crumbs, about 64 crackers
- 1/2cupbutter, melted
- 3tablespoonssugar
- 2 (14 ounce)canssweetened condensed milk
- 1 (12 ounce)canfrozen lemonade concentrate, thawed
- 1 (12 ounce)cartonfrozen whipped topping, thawed
- 1 (11 ounce)canmandarin oranges, drained
- 6-8maraschino cherries
DIRECTIONS
- Combine cracker crumbs, butter and sugar. Press into an ungreased 13 x 9 x 2 inch dish; set aside.
- In a bowl, combine the milk and lemonade concentrate until smooth. (The mixture will begin to thicken).
- Gently fold in whipped topping. Pour over crust.
- Cover and refrigerate for 3-4 hours.
- Garnish with oranges and cherries.

INGREDIENTS
- 1 (16 ounce)Hawaiian bread(or other round, unsliced loaf)
- 1/4cupranch dressing
- 10ounces sliceddeli turkey
- 1cup shreddedmozzarella cheese, divided
- 1 (10 ounce)packagefrozen chopped spinach, thawed and drained very well
- 1/2cup finely choppedonions
- 4 freshplum tomatoes, diced(mine were a bit large, so I used 3)
DIRECTIONS
- Preheat oven to 350°F.
- Slice top off of bread and set aside; carefully hollow out loaf leaving 1 inch of sides and bottom (reserve removed bread for other use).
- Brush inside and top of bread with dressing, then line bottom of shell with turkey.
- Toss together 1/2 cup cheese, spinach, onion and tomatoes; spoon over meat.
- Sprinkle with remaining cheese.
- Replace top, then wrap loaf in foil.
- Bake 1 hour.
- Cool 10 minutes before removing foil and slicing into wedges.
- Can be served hot or cold.

INGREDIENTS
- 2 (12 fluid ounce)cansevaporated milk, divided
- 1cupwater
- 1 (10 ounce)packagesemisweet chocolate chunks(Nestle Chocolatier dark chocolate chunks 53% Cacao (1 3/4 cups)
- 1 1/4teaspoonsvanilla extract, divided
- 1/2teaspoonground cinnamon, divided
- 1/8teaspoonground cinnamon, divided
- 1/8teaspoonground cayenne pepper, divided (optional)
DIRECTIONS
- Pour 1/2 cup evaporated milk into medium mixer bowl; place beaters into mixture. Freeze for about 30 minutes or until ice crystals form around edge of bowl.
- Heat remaining evaporated milk, water, chunks, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon and a pinch of cayenne pepper in medium saucepan over low heat, stirring frequently, until melted.
- Do not boil.
- Set aside.
- Remove chilled evaporated milk from freezer. Beat on high speed for 1 minute or until very frothy.
- Add remaining vanilla extract, remaining cinnamon and a pinch of cayenne pepper. Continue beating for 3 to 4 minutes or until mixture forms soft peaks.
- Pour hot chocolate into eight 4-ounce demitasse cups and immediately dollop with foam topping.

INGREDIENTS
- 1cupbutterscotch chips
- 1/2cuppeanut butter
- 1/2cupsalted peanuts
- 2cupschow mein noodles
DIRECTIONS
- Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave.
- Blend together.
- Stir peanuts and noodles gently into the melted peanut butter mixture.
- Drop dough by forkfuls onto waxed paper.
- Cool until set.
