INGREDIENTS
- 4cupssalad greens
- 1 (14 ounce)canhearts of palm, drained, rinsed and cut into 1-inch pieces
- 2green onions, thinly sliced
- 1garlic clove, minced
- 1/3cuproasted red peppers, drained
- 1/4cupcreole mustardor othergrainy mustard
- 1/4cuplight mayonnaise
- 2tablespoons mincedflat leaf parsley
- 2tablespoons finely choppedcelery
DIRECTIONS
- Divide salad greens among 4 plates; divide hearts of palm pieces on top of the greens; set aside.
- Place remaining ingredients in a food processor or blender; process until well-blended.
- Drizzle dressing to taste evenly over salad.

INGREDIENTS
- 4sweet potatoes
- 4ouncessalted butter
- 4ouncesbutter pecan ice cream
DIRECTIONS
- Bake potatoes till soft.
- Mix equal portions of butter and butter pecan ice cream, zap them and mix together when they are soft enough. Refrigerate or freeze until stiff again and spoon desired amount into sweet potatoes.

INGREDIENTS
- 3cupselbow macaroni, uncooked
- 3slices applewoodsmoked bacon
- 1 1/2cupshalf-and-half
- 3/4cupheavy cream
- 10slices whiteAmerican cheese, chopped
- 2cupscheddar cheese, shredded
- 1/3cupgorgonzola, crumbled
- 1teaspoonkosher salt
- 1/2teaspooncracked pepper
- 1/2cup crushedRitz crackers
- 1/8cupparmesan cheese, shredded
DIRECTIONS
- In medium saucepan over high heat, bring two quarts of lightly salted water to a boil.
- Add macaroni and cook 10 to 12 minutes or until desired doneness. Strain, cool and rinse. Set aside.
- Cook bacon until crispy. Drain, cool and coarsely chop. Set aside.
- In a 2 quart saucepan, heat half and half and heavy cream on medium heat just before a simmer, stirring continuously.
- Add chopped American cheese until melted, followed by the cheddar. Melt cheese completely in the sauce. Stir in gorgonzola cheese and salt and pepper.
- Remove from heat and toss cooled macaroni into the cheese sauce to coat along with bacon.
- Pour macaroni and cheese mixture into oven-safe casserole dish. Top with crushed Ritz crackers and Parmesan cheese.
- Bake in preheated oven at 400 degrees for 12 to 15 minutes until golden brown and serve.
- You can add chives as a garnish.

INGREDIENTS
- 1/2cupcroutons(crushed)
- 2teaspoonsgarlic powder
- 1lbskinless chicken breasts(cut into 1 inch cubes)
- 1tablespoonsoy sauce
- 1/8cupcornstarch
- 1/8cupcanola oil
DIRECTIONS
- In large bowl, whisk crouton crumbs, garlic powder, and cornstarch. Stir in the soy sauce.
- Add chicken and toss until completely coated.
- Cover, refrigerate for at least 30 minutes.
- Heat the oil in a large nonstick skillet over medium heat.
- Add chicken and cook, covered for 20-25 minutes until nice and crispy and cooked through.
- Turn about 4/5 times during cooking to avoid burning.
- Drain on paper towels.
- Serve immediately and enjoy!

INGREDIENTS
- 1 1/2lbs babynew potatoes
- 1/4cupextra virgin olive oil
- 2tablespoonsbutter
- 4garlic cloves, crushed
- 1teaspoondried rosemary
DIRECTIONS
- Preheat oven to 350°F
- Scrub potatoes well and place in medium baking dish.
- Dot with butter.
- In a small bowl, mix together olive oil, garlic (you can add less if need be) and rosemary.
- Pour mixture over potatoes and stir, making sure potatoes are well covered with the oil.
- Bake for 1 hour or until roasted and tender, occasionally stirring potatoes to absorb the olive oil.
