Restaurant-Style White Cheese Dip Recipe

INGREDIENTS

  1. 2lbs whiteAmerican cheese, slices
  2. 1smallonion, dices
  3. 3garlic cloves, minced
  4. 2 (10 ounce)cansrotel, undrained
  5. 1 (4 ounce)can choppedgreen chilies
  6. 3/4cupmilk
  7. 1teaspoonground cumin
  8. 1/2teaspooncoarse black pepper

DIRECTIONS

  1. Tear cheese into pieces and place in the crockpot.
  2. Add other ingredients, stirring well.
  3. Cook on low for 3 hours, stirring every 30 minutes.
  4. Serve with tortilla chips.

Dot’s Hummus Recipe

INGREDIENTS

  1. 1 (15 ounce)canchickpeas, drained(save juice)
  2. 1/2cuptahini
  3. 1largegarlic clove, minced
  4. 3-4tablespoonslemon juice(bottled or fresh)
  5. 1/4-1/3cupreserved juices(from drained chickpea can)

DIRECTIONS

  1. Combine the chickpeas, tahini, garlic, and lemon juice in a food processor.
  2. Process until smooth.
  3. Slowly pour in 1/4 cup juice from chickpean can and process again.
  4. Check consistency: it should be spreadable, not runny.
  5. Add more chickpea can juice if it is too thick.
  6. Scrape it into a bowl.
  7. Refrigerate overnight.

Omelet of Zucchini Flowers Recipe

INGREDIENTS

  1. 16squash blossoms, washed and patted dry
  2. 10eggs
  3. 1/4cupwater
  4. salt and pepper
  5. 1tablespoonbutter
  6. 1cupfresh goat cheeseor ricotta cheese
  7. fresh herbs(to garnish)

DIRECTIONS

  1. Beat the eggs and water, and add the flowers to the mix.
  2. Season to taste with salt and pepper.
  3. Heat the butter in a skillet til very hot, then add the eggs.
  4. After it begins to set, crumble the goat cheese evenly over it.
  5. Stop cooking when just barely set, to avoid drying it out.
  6. Garnish with herbs and serve.

Orange Tea Biscuits Recipe

INGREDIENTS

  1. 2cupsflour, white
  2. 2 1/2tablespoonssugar, white, fine
  3. 1teaspoonfine sea salt
  4. 3teaspoonsbaking powder
  5. 1/2teaspoonbaking soda
  6. 1/2teaspooncream of tartar
  7. 1tablespoonorange rind
  8. 2tablespoonscandied orange peel, finely chopped (optional)
  9. 1/2cupunsalted butter, cold
  10. 1/2cupbuttermilk, cold
  11. 1/2cupfresh orange juice
  12. 2tablespoonsmilk
  13. 10sugar cubes, white (optional)
  14. 1tablespoonorange juice (optional)

DIRECTIONS

  1. In large bowl combine flour, sugar, salt, baking powder, baking soda, cream of tarter, orange rind and orange peel, stirring well.
  2. Cut in butter until crumbly.
  3. Mix buttermilk and orange juice together, stir to mix well and pour over flour mixture, combing quickly, dough will be soft.
  4. Turn out onto a lightly floured surface, knead gently 10 times and pat into 1/2″ or 3/4 ” thickness.
  5. Cut the dough with a 3″ cookie round.
  6. Brush biscuits with milk.
  7. Dip sugar cube in orange juice and press into top of biscuit.
  8. Bake on greased cookie sheet at 450 degrees.
  9. for 13 - 15 minutes.
