INGREDIENTS
- 2lbs whiteAmerican cheese, slices
- 1smallonion, dices
- 3garlic cloves, minced
- 2 (10 ounce)cansrotel, undrained
- 1 (4 ounce)can choppedgreen chilies
- 3/4cupmilk
- 1teaspoonground cumin
- 1/2teaspooncoarse black pepper
DIRECTIONS
- Tear cheese into pieces and place in the crockpot.
- Add other ingredients, stirring well.
- Cook on low for 3 hours, stirring every 30 minutes.
- Serve with tortilla chips.

INGREDIENTS
- 1 (15 ounce)canchickpeas, drained(save juice)
- 1/2cuptahini
- 1largegarlic clove, minced
- 3-4tablespoonslemon juice(bottled or fresh)
- 1/4-1/3cupreserved juices(from drained chickpea can)
DIRECTIONS
- Combine the chickpeas, tahini, garlic, and lemon juice in a food processor.
- Process until smooth.
- Slowly pour in 1/4 cup juice from chickpean can and process again.
- Check consistency: it should be spreadable, not runny.
- Add more chickpea can juice if it is too thick.
- Scrape it into a bowl.
- Refrigerate overnight.

INGREDIENTS
- 16squash blossoms, washed and patted dry
- 10eggs
- 1/4cupwater
- salt and pepper
- 1tablespoonbutter
- 1cupfresh goat cheeseor ricotta cheese
- fresh herbs(to garnish)
DIRECTIONS
- Beat the eggs and water, and add the flowers to the mix.
- Season to taste with salt and pepper.
- Heat the butter in a skillet til very hot, then add the eggs.
- After it begins to set, crumble the goat cheese evenly over it.
- Stop cooking when just barely set, to avoid drying it out.
- Garnish with herbs and serve.

INGREDIENTS
- 2cupsflour, white
- 2 1/2tablespoonssugar, white, fine
- 1teaspoonfine sea salt
- 3teaspoonsbaking powder
- 1/2teaspoonbaking soda
- 1/2teaspooncream of tartar
- 1tablespoonorange rind
- 2tablespoonscandied orange peel, finely chopped (optional)
- 1/2cupunsalted butter, cold
- 1/2cupbuttermilk, cold
- 1/2cupfresh orange juice
- 2tablespoonsmilk
- 10sugar cubes, white (optional)
- 1tablespoonorange juice (optional)
DIRECTIONS
- In large bowl combine flour, sugar, salt, baking powder, baking soda, cream of tarter, orange rind and orange peel, stirring well.
- Cut in butter until crumbly.
- Mix buttermilk and orange juice together, stir to mix well and pour over flour mixture, combing quickly, dough will be soft.
- Turn out onto a lightly floured surface, knead gently 10 times and pat into 1/2″ or 3/4 ” thickness.
- Cut the dough with a 3″ cookie round.
- Brush biscuits with milk.
- Dip sugar cube in orange juice and press into top of biscuit.
- Bake on greased cookie sheet at 450 degrees.
- for 13 - 15 minutes.
